3 tablespoons all-purpose flour
2 cups hot milk
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 pinch nutmeg
12 ounces gruyere, grated (5 cups)
1/2 cup freshly grated parmesan cheese
16 slices white bread, crusts removed
Dijon mustard
8 ounces baked virginia ham, sliced but not paper thin

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter over low heat in a small saucepan and add the flour all at once, stirring with a wooden spoon for 2 minutes. Slowly pour the hot milk into the butter-flour mixture and cook, whisking constantly, until the sauce is thickened. Off the heat add the salt, pepper, nutmeg, 1/2 cup grated Gruyere, and the Parmesan and set aside.
  • To toast the bread, place the slices on 2 baking sheets and bake for 5 minutes. Turn each slice and bake for another 2 minutes, until toasted.
  • Lightly brush half the toasted breads with mustard, add a slice of ham to each, and sprinkle with half the remaining Gruyere. Top with another piece of toasted bread. Slather the tops with the cheese sauce, sprinkle with the remaining Gruyere, and bake the sandwiches for 5 minutes. Turn on the broiler and broil for 3 to 5 minutes, or until the topping is bubbly and lightly browned. Serve hot.

16 slices white bread
3/4 lb cheddar cheese, sliced
3/4 lb ham, sliced
1 medium onion, thinly sliced
6 large eggs
2 1/2 cups milk
1 teaspoon herbs, of your choice
1 teaspoon salt
1 1/2 cups panko breadcrumbs (Japanese-style bread crumbs)
3 tablespoons butter
1/4 cup parmesan cheese, grated

Steps:

  • Butter a 9x13-inch baking pan.
  • Remove the crust from the bread, if you wish. Place them into the greased baking dish, cutting slices in half, as necessary, to completely cover the bottom of the pan.
  • Top with half of the cheese, the ham, sliced onion, and the remaining cheese; and the remaining bread.
  • Press the sandwiches together.
  • Beat the eggs, milk and seasoning together. Pour slowly over the bread.
  • Cover and place in the refrigerator for several hours or overnight.
  • About 1 hour before serving, preheat the oven to 400ºF. Mix the breadcrumbs with the melted butter and grated cheese. Sprinkle over the sandwiches.
  • Bake for 42 to 48 minutes, until the top is golden brown and the eggs set.
  • Remove from the oven and allow to rest 10 minutes before cutting and serving.

12 thin slices stale or fresh white bread, crusts trimmed (1/2- to 3/4-inch thick)
12 thin slices mild ham
2 round tablespoons flour
2 cups whole milk
Freshly grated nutmeg
Salt and pepper
2 tablespoons Dijon mustard, plus more for serving
3 large eggs
8 ounces gruyere or Swiss cheese, shredded (about 2 cups)
Finely chopped fresh parsley, for garnish
Mixed greens dressed with lemon juice and vinegar, for serving

Steps:

  • Grease a casserole dish and line with 6 slices of the bread. Top with half of the folded ham.
  • Melt the butter in skillet over medium heat, add the flour and whisk 1 minute. Add 1 1/2 cups of the milk and some nutmeg, and then season with salt and pepper. Cook to thicken, the sauce should coat the back of a spoon. Stir in the mustard. Spoon half of the thickened bechamel evenly over the ham, top with the remaining 6 slices bread.
  • Whisk up the eggs and the remaining 1/2 cup milk, and sprinkle with salt and pepper. Pour the eggs evenly over the casserole dish and then add the remaining ham and bechamel.
  • Top with the gruyere, then cover and store for a make-ahead meal.
  • When ready to serve, preheat the oven to 375 degrees F and bake the casserole from room temperature until golden and firm, 30 to 35 minutes. Cut the casserole into squares and serve garnished with finely chopped parsley and mixed greens dressed with lemon juice and vinegar. Pass additional mustard at the table.

1 cup finely grated parmesan cheese (about 4 ounces)

2 tablespoons unsalted butter, plus more for greasing
1 medium onion, diced
1 clove garlic, minced
3 tablespoons all-purpose flour
Pinch of cayenne pepper
1/8 teaspoon freshly grated nutmeg
Kosher salt
8 ounces thinly sliced deli-boiled ham

Steps:

  • Preheat the oven to 425 degrees. Bring a large pot of salted water to a boil. Add the ziti and cook until al dente, about 6 minutes. Drain and transfer to a large bowl; toss with 1/4 cup milk.
  • Meanwhile, combine both cheeses in a bowl. Beat 1/4 cup milk and the eggs in another bowl; fold in the bread and add half of the cheese.

⅔ cup double cream
1 onion, roughly chopped
2 cloves garlic, crushed
2 bay leaves
2 tablespoons butter
¼ cup flour
1 tablespoon dijon mustard
1 pinch ground nutmeg
4 slices white bread
2 tablespoons butter, melted
dijon mustard, to spread
1 cup gruyère cheese, grated
6 slices ham

Steps:

  • In a saucepan, combine the milk, double cream, onion, garlic and bay leaves and heat over a medium heat until it just starts to boil.
  • Take off the heat and leave to infuse for 10 minutes.
  • Pour the milk mixture through a sieve into a jug.
  • Then, in a saucepan, gently melt the butter and add the flour. Stir together over a low-medium heat for 1 -2 minutes.
  • Gradually add the milk in three parts whilst continually stirring.
  • Continue to stir and bring the sauce to a gentle boil.
  • Take off the heat and stir in the dijon mustard and ground nutmeg.
  • Next, brush the two slices of bread with the melted butter and grill for about 5 minutes until golden brown.
  • Take out of the grill and preheat the heat the oven to 180°C (350°F).
  • Flip the slices of bread over and spread one slice with a thin layer of dijon mustard, followed by another layer of the béchamel sauce, followed by the cheese and then the ham.
  • Place the other slice of bread on top and coat with more béchamel sauce and cheese.
  • Bake for about 15 minutes, until the cheese is bubbling.
  • Serve with fresh salad!

This is a pretty amazing recipe for croque monsieur. I wouldn't say it's nowhere near healthy but wow, it sure is good. I got this from a friend who is friends with a rather famous chef-it's his recipe. I'm just passing it along to the masses. Enjoy!

3 tablespoons unsalted butter
¼ cup all-purpose flour
3 cups whole milk
1 pinch freshly grated nutmeg
salt and freshly ground white pepper to taste
8 (1/2 inch thick) slices high quality French sandwich bread
12 ounces thinly sliced jambon de Paris (high-quality, wet-cured ham)
10 cups coarsely shredded Gruyere cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a sheet pan with parchment paper.
  • Melt butter in a small saucepan over low heat. Whisk in flour until blended but not colored, about 3 minutes. Gradually whisk in milk and cook, stirring constantly, until thickened, about 10 minutes. Season with nutmeg, salt, and pepper.
  • Assemble sandwiches: Place all 8 bread slices on a work surface in a single layer. Spread each slice evenly to the edges with Bechamel sauce; all the sauce may not be needed.
