Ingredients:

  1. center-cut pork loin
  2. garlic
  3. fresh thyme
  4. olive oil
  5. salt and pepper
  6. granny smith apples
  7. dried fig
  8. dried cherries
  9. almonds
  10. butter
  11. applesauce
  12. dark brown sugar
  13. muscat wine
  14. herb seasoned stuffing mix
  15. fresh rosemary

Steps:

  1. preheat oven 425f
  2. rub the roast all over with garlic , thyme , olive oil , generously salt and pepper to taste
  3. saut the apples , figs , cherries and almonds in butter , stirring constantly , for about 3 minutes
  4. remove from heat and stir in applesauce , dark brown sugar , 1 / 2 cup wine and stuffing mix
  5. spoon into center of roast
  6. place rosemary sprigs on top of stuffing
  7. cover stuffing and exposed ends of ribs with aluminum foil
  8. roast pork for 20 minutes , then reduce heat to 350f and continue roasting until the internal temperature of the pork reaches 150f , approximately 2 hours
  9. transfer the pork to a platter and let stand for 15 minutes
