This French Cruller Donut recipe is so easy and to die for! My step by step guide will help you through frying up these delicious doughnuts!

1/2 cup butter
1 cup water
1 cup all purpose flour
1/2 teaspoon salt
4 eggs
vegetable oil (for frying)
2 cups powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla
1/4 teaspoon lemon extract (optional)

Steps:

  • Bring butter and water to boil in a small pot. Once mixture comes to boil, stir in flour and salt until combined. Remove from heat and cool 3 minutes.
  • Crack eggs into a small bowl. Mix eggs into warm mixture one by one until completely batter is completely smooth.
  • Transfer to piping bag with large fluted tip and pipe into circles on parchment paper lined baking sheets. Place into freezer for 30 minutes.
  • Pour vegetable oil into large pot with high sides so there's at least 3 inches of grease. Heat oil to be between 325-350 degrees. While oil is heating, stir all ingredients together for glaze until smooth and runny...but not too runny!
  • Drop frozen crullers one by one into hot oil and fry about 1 minute per side or until lightly golden. Remove to paper towel to drain and then immediately coat in glaze. Place onto cooling rack to let excess glaze drip off. After 40 minutes or so, the glaze should harden onto the crullers. Best served warm, immediately out of the glaze.

1/4 cup shortening
3/4 cup granulated sugar
2 large eggs, separated
1/2 teaspoon vanilla extract
3 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground mace
1/4 teaspoon ground nutmeg
1 1/4 cups whole milk, homogenized
2 cups cooking oil (for deep frying, (or more)
1/2 cup granulated sugar
1 1/2 teaspoons ground cinnamon

Steps:

  • In a mixing bowl using an electric mixer, cream shortening and sugar until fluffy.
  • Separate eggs.
  • In a small bowl, beat egg yolks well.
  • Add beaten egg yolks to shortening/sugar mixture and mix to blend.
  • Add vanilla extract and beat again.
  • Into a separate bowl, sift flour, baking powder, salt, mace and nutmeg; set aside.
  • Beat egg whites until peaks form.
  • Add flour mixture and milk alternately to shortening/sugar mixture, beating after each addition, until well incorporated.
  • Fold in beaten egg whites, but DO NOT BEAT.
  • Add additional flour if required to make dough stiff enough to handle.
  • On a lightly floured surface, roll out dough to 1/2 inch thickness.
  • Cut dough with a doughnut cutter reserving the holes to be deep fried as well.
  • Gather pieces of dough, form into a ball and then roll out to 1/2 inch thickness.
  • Cut out doughnuts again until all dough is used up.
  • Preheat oil in a deep-fryer to 375°F.
  • Drop in 3 or 4 doughnuts and deep fry for 1 to 1 1/2 minutes, turn over and fry for another 1 minute or until golden brown.
  • Remove with wire spoon or slotted spoon onto paper toweling to drain and cool slightly.
  • COATING.
  • In a plastic bag, mix together sugar and cinnamon.
  • Drop doughnuts into bag while still warm and shake to coat well.
  • You may also use a medium size deep frying pan deep fry the doughnuts.
  • Make sure the oil comes about half way up the doughnut.

Congee is a porridge that's essentially just made of extremely saturated rice-it's the ultimate form of comfort. It's often served with Chinese crullers, which aren't too sweet, and I love the texture that they add.

Neutral oil, such vegetable
1 medium shallot, finely chopped
2-inch piece of fresh ginger, sliced in half lengthwise
1 cup (230g) jasmine rice
7 cups (1680g) chicken broth or vegetable broth
Kosher salt
Sauteed Greens, recipe follows
Toasted sesame seed oil
Sriracha
Freshly ground black pepper
Crullers, recipe follows
2 1/4 cups (300g) all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon kosher salt
1/2 cup (120g) buttermilk, at room temperature
1 tablespoon coconut oil, softened but not melted
1 large egg, at room temperature
3 quarts neutral oil for frying, such as vegetable
1 tablespoon neutral oil, such as vegetable
3 dried red chili peppers (such as chili d'arbol), stemmed
4 cloves garlic, thinly sliced
2 bunches (1 1/2 to 2 pounds) mustard greens, rinsed and stems removed, roughly chopped
Salt
Freshly ground black pepper
1 teaspoon toasted sesame oil
1 teaspoon unseasoned rice vinegar
Toasted white sesame seeds

Steps:

  • Heat a drizzle of oil in a large pot over medium heat. Sweat the shallot and ginger, stirring, until fragrant, 1 to 2 minutes. Add the rice and broth. Bring to a boil, then turn down to a simmer and cover. Cook until the rice has broken down and the mixture is thick and porridge-like, about 1 hour. Stir with a rubber spatula occasionally so the bottom doesn't stick. Remove the ginger and season to taste.
  • Divide the congee into bowls. Top with a pile of Sauteed Greens (recipe follows), a drizzle of toasted sesame oil, a drizzle of sriracha and a couple turns of black pepper. Serve with Crullers (recipe follows) on the side.
  • Whisk together the flour, sugar, baking powder, baking soda and salt in the bowl of a stand mixer or a large mixing bowl. Add the buttermilk, coconut oil and egg and knead with the dough hook for 7 to 10 minutes until the dough is smooth and elastic. Wrap with plastic and allow to rest in the refrigerator for 3 hours.
  • Remove the dough from the refrigerator 1 hour before ready to use and allow to come to room temperature.
  • Heat the neutral oil in a heavy bottomed pot to 375 degrees F.
  • Roll out the dough on a lightly floured surface into a 20-by-6-inch rectangle that is about 1/4-inch thick. Cut into 12 vertical strips just over an inch wide, then cut each strip in half horizontally. Layer one half on top of the other and using a chopstick, press down in the center to adhere. Cover with plastic while you shape the others.
  • When the oil is up to temperature, take one piece of dough and, holding both ends, stretch gently to triple the length (it should stretch very easily). Drop in the oil and fry for 30 seconds to 1 minute per side, or until lightly golden and puffy, gently turning with a spider. Remove to a rack and repeat in batches of 2 or 3, allowing oil to come back to temperature between each batch.
  • Heat the oil in a large skillet or wok over medium heat. Add the dried chili peppers and garlic and toss around, cooking until fragrant and lightly toasty, 1 to 2 minutes. Add the mustard greens, a big pinch of salt and a couple turns of black pepper and cook for 4 to 5 minutes or until wilted, tender, and bright green. Add the sesame oil, rice vinegar and sesame seeds. Toss to combine.

Sometimes a cruller is a doughnut dough leavened with yeast or baking powder that's shaped into a long twist, deep fried and sprinkled with sugar or glazed with a thin icing. The traditional French cruller is made from pate a choux and is basically hollow. The word "cruller" comes from the Dutch word "krulle" or "krullen," meaning twisted cake.

1 cup water
8 tablespoons unsalted butter (1 stick)
1 1/2 teaspoons sugar
1/2 teaspoon salt
1 cup all-purpose flour
4 eggs
Vegetable oil, for frying
2 cups powdered sugar
1/4 cup milk

Steps:

  • Make the Crullers: Combine the water, butter, sugar, and salt in a large saucepan and bring to a rolling boil over medium-high heat. Immediately remove from the heat, add all the flour at once, and stir hard with a wooden spoon until all the flour is incorporated, about 30 to 60 seconds. Return the pan to the heat and cook, stirring, to evaporate some of the moisture, about 2 minutes.
  • Scrape the mixture into a standing mixer fitted with a paddle attachment (or use a hand mixer or mix by hand), and mix at medium speed. With the mixer running, and adding 1 egg at a time, add 3 of the eggs, stopping after each addition to scrape down the sides of the bowl. Mix until the dough is smooth and glossy and the eggs are completely incorporated. The dough should be thick, but should fall slowly and steadily from the beaters when you lift them out of the bowl. If the dough is still clinging to the beaters, add another egg and mix until completely incorporated.
  • Line a sheet pan with parchment paper. Using a pastry bag fitted with a star tip (use a large size, like #12), pipe the dough onto the sheet pan in rows of 2 1/2-inch rings. Freeze them for 30 minutes to make them easier to pick up.
  • Meanwhile, make the Glaze: Stir together the powdered sugar and milk in a small bowl.
  • Pour the vegetable oil into a large pot to a depth of 2 inches and heat to 325 degrees F. Working in batches, lift the dough circles off the sheet pan and carefully slip them into the oil. Fry, turning once, until lightly browned. Drain the crullers on a brown paper bag; then dip them completely in the glaze. Let the crullers cool and set before serving.

1 tablespoon active dry yeast
1/4 cup warm water
3/4 cup warm milk
1/2 cup butter, softened
1/4 cup sugar
1 teaspoon salt

4 cups all-purpose flour
oil, for deep-fat frying
2 cups confectioners' sugar
3 tablespoons orange juice
1 teaspoon grated orange peel

Steps:

  • EVENING BEFORE:.
  • In a large bowl, dissolve yeast in water.
  • Beat in the milk, butter, sugar, salt and eggs.
  • Beat in 2 cups of flour until smooth. Add remaining flour.
  • Place in a greased bowl, turning once to grease top. Cover and refrigerate overnight.
  • THE NEXT MORNING:.
  • Punch dough down; divide in half. Return one portion to the refrigerator.
  • On a floured surface, roll out second portion into an 18-in. x 9-in. rectangle; cut width-wise into 3/4-in. strips.
  • Fold each strip in half lengthwise and twist several times. Pinch the ends to seal. Place on greased baking sheets. Repeat with remaining dough. Cover and let rise until almost doubled, about 35-45 minutes.
  • In a wide, large pot or deep-fat fryer, heat oil to 375°. Fry crullers, a few at a time, until golden, about 1 minute on each side, turning with a slotted spoon.
  • Drain on paper towels. In a small bowl, combine glaze ingredients; brush over warm crullers. Enjoy!
