Crumble Top Pumpkin Muffins Recipe

  1. baking mix
  2. raisins
  3. quick oats
  4. granulated sugar
  5. ground cinnamon
  6. pumpkin pie mix
  7. eggs
  8. all-purpose flour
  9. butter


  1. preheat oven to 400f
  2. paper-line or grease 24 muffin cups
  3. combine baking mix , raisins , oats , sugar and cinnamon in large bowl
  4. combine pumpkin pie mix and eggs in medium bowl
  5. mix well
  6. stir into oat mixture just until moistened
  7. spoon batter into prepared muffin cups , filling 3 / 4 full
  8. sprinkle with streusel topping
  9. bake for 14 to 16 minutes or until wooden pick inserted in center comes out clean
  10. remove from pans to wire rack
  11. cool slightly
  12. serve warm
  13. for streusel topping:
  14. combine 3 tablespoons all-purpose flour , 3 tablespoons granulated sugar and 3 / 4 teaspoon ground cinnamon in small bowl
  15. cut in 2 tablespoons butter with pastry blender or two knives until mixture is crumbly
