- For the biscuits: Preheat the oven to 450 degrees F.
- Whisk together the flour, powdered milk, baking powder, sugar, cream of tartar, salt and cayenne pepper in a medium bowl. Using a pastry cutter, cut the butter bits and shortening into the dry mixture until blended thoroughly. Mix in the cheese, then fold in the buttermilk until the dough comes together.
- On a lightly floured surface, turn out the dough and press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, 10 to 12 minutes, then set aside to cool a little.
- For the sandwiches: Next, add the sausage patties to a skillet over medium heat and fry until cooked through. Set aside and keep warm. In the same skillet, fry the eggs, turning them over to cook the yolks through.
- Now make a sandwich by cutting a biscuit in half. Put a sausage patty on the bottom half. Top with an egg, some hot sauce and a slice of cheese. Cover with the top and eat, or wrap in foil to keep warm.
CRUSTY BUTTERMILK BISCUITS
Renowned Alabama chef Scott Peacock has a certain way with biscuits, so it was a no-brainer for us to turn to him for another version of his classic recipe. But this is no imitator-here we have an all-butter version that comes in smaller portions-just perfect for a big gathering. Lastly, A blend of two different flours, whole wheat and cake, create an ultra-crisp crust and a melt-in-your-mouth crumb that is ideal for jams and gravies.

- Preheat oven to 500°F. In a large bowl, whisk together both flours, baking powder, and salt until thoroughly combined. Using your fingers, quickly work in butter, rubbing between your fingers to flatten as you go. (Roughly half of butter should have the consistency of very coarse meal; the rest should be in largish flattened pieces.) Make a well in mixture; pour in buttermilk. Stir quickly just until dough is well moistened and just beginning to form a mass. (It will be very wet and sticky.)
- Turn out dough onto a generously floured board or biscuit marble; sprinkle just enough flour over it to make it easy to handle. Knead quickly, without applying too much pressure as you fold. (The goal is to develop structure quickly without deflating.) Once it forms a cohesive dough, move to side of board; scrape up kneading flour.
- Sprinkle a fresh, light dusting of flour on board. (Do not flour top of biscuit dough.) Flouring only hands and rolling pin as needed, roll out dough approximately 1/2 inch thick. With a floured fork, pierce all the way through at 1/2-inch intervals. Using a 1 3/4-inch round cutter, stamp out biscuits (without rotating cutter); place them on parchment-lined baking sheets, almost touching. Gather and reroll scraps; punch out and place more rounds. Bake until biscuits are puffed slightly and brown, 12 to 15 minutes. Serve warm.
SOUTHERN BREAKFAST BISCUITS - EASY BUT LIGHT AND FLUFFY

I'm not going to complain, they're lovely and fluffy, and if I have to make them, it's easy as pie. - Pre-heat the oven to 450 Degrees Fahrenheit.
- Generously cover the bottom of an 8" square glass baking dish with Canola Oil, and set it in the oven.
- Combine Buttermilk and Flour in a mixing bowl.
- Add water until the consistency is slightly sloppier than dough. This wonderful little recipe works with a variety of consistencies - from slightly soggier than normal dough all the way to just-about-pourable.
- Add the 3 1/6th cups of Oil, and mix as little as necessary to combine all ingredients. Overmixing can lead to tough biscuits, so be careful not to fall for that trap!
- Take your glass dish from the oven, and pour/scoop/scrape your dough into it. Smooth it over the top if necessary, to ensure even sized biscuits. (no worries if you don't do this well, they still taste great).
- Oil a blunt knife and dip it in flour, and use it to cut your dough into 9 even squares.
- Bake in the oven for 10-12 minutes, checking at 8, until they're golden brown.
- Remove from the oven and serve.

- Tightly pack the sushi rice into a square 8x8-inch cake pan lined with plastic wrap. Chill for 2 to 3 hours in the refrigerator or 30 minutes in the freezer.
- Heat 1/2 cup oil in a large skillet over medium heat. Cut the rice into thick, rectangular shapes, about 2 to 3 inches in length and 1 inch in width. Carefully move the pieces to the hot oil and fry until they reach a deep golden brown color, 2 to 3 minutes on each side. Drain on paper towels.

- Preheat the oven to 450 degrees F (230 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy, about 10 minutes.
- Meanwhile, beat eggs and milk together in a bowl. Pour into a skillet over medium heat; cook and stir until scrambled and set, about 5 minutes. Season with salt and pepper.
- Drain bacon slices on paper towels. Crumble into small pieces and mix with the scrambled eggs. Add American cheese.

- In a mixing bowl, combine the flour, crushed cereal, 2 tablespoons sugar, baking powder, and salt.
- Then cut in the shortening until mixture resembles coarse crumbs.
- Stir in milk just until moistened. (The mixture is kind of dry, but if it's way too dry add an extra 1 teaspoon of milk so it's all barely moistened.)
- Shape into 1 inch balls.
- In a small bowl combine the cinnamon and 2/3 cup sugar.
- Dip each ball into butter, then roll into cinnamon/sugar mixture.
- Arrange in a single layer in an 8 x 8 baking dish that has been lightly sprayed with non stick cooking spray.
- Bake at 420 degrees for 15 to 17 minutes.
- Makes 2 dozen breakfast bites.
