HAZELNUT FRENCH TOAST
An elegant, yet easy breakfast or brunch item that is sure to impress. If you wish, a small pinch of nutmeg works well in this recipe. Just add it to the egg mixture.

Steps:
- Whisk eggs, half-and-half, and hazelnut liqueur together in a shallow bowl.
- Melt 1 teaspoon butter in a large skillet, tilting the skillet to assure complete coverage.
- Dip 2 slices brioche in the egg mixture, moistening both sides.
- Cook brioche in the hot skillet until golden brown, 2 to 4 minutes per side. Repeat process until all bread is cooked.
- Cut each slice of brioche into half on a bias. Sprinkle hazelnuts over the halves and top with maple syrup.

Steps:
- First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.
- In a wide bowl, beat your eggs with your maple syrup until the mixture is slightly thickened.
- Beat in the milk, vanilla, nutmeg and salt.
- Place your bread slices in the mixture and allow them to soak in the mixture for approximately 5 minutes until saturated well.
- Next you will want to preheat your skillet over medium heat and add 2 Tablespoons of butter.
- Once your butter has melted reduce your heat to medium-low and saute bread slices for about 5-6 minutes per side, making sure that you flip each slice over every 2 minutes or so to make sure that they brown evenly.
- You may have to cook in 2 batches if you use a smaller skillet.
- Sprinkle with confectioners' sugar, and place random berries around the plate for a nice look and tasty meal.
CRUNCHY FRENCH TOAST
Steps:
- In a wide bowl, whisk together the almond milk, sugar, cinnamon, salt and eggs. Put the crushed cornflakes in another shallow dish. Dunk the sliced bread in the egg mixture and soak about 45 seconds, turning once. Let the excess egg mixture drip off, then press the bread into the cornflakes. Turn and press on the second side, then set aside on a plate.
- Set a large nonstick or cast-iron pan over medium heat. Set a rack over a baking sheet and preheat the oven to 250 degrees F. Melt 1 tablespoon butter and add 2 pieces of the crusted bread. Cook gently until golden brown, then cook and brown on the second side, about 3 minutes per side. (Reduce the heat if the bread begins to to brown too quickly.) Remove the bread, set on the prepared baking sheet and transfer to the oven to keep warm. Add fresh butter to the pan and repeat with the remaining bread. Transfer to the oven for 2 minutes, then serve with maple syrup.

- Mix milk, half-and-half, eggs, maple syrup, vanilla, cinnamon, and nutmeg together in a large bowl until well combined.
- Layer bread slices in a greased 9x13-inch baking dish. Pour egg mixture over the bread slices. Cover and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Remove French toast from the refrigerator.
- Mix brown sugar, pecans, butter, and maple syrup together; spread topping evenly over the French toast.
- Bake, uncovered, in the preheated oven until puffed and golden brown, about 40 minutes.

CRUNCHY MAPLE NUT FRENCH TOAST
The key here is to finely crush the cornflakes and nuts. I use my hand cranked nut chopper and just put them all thru it together. The combinations on this are endless, we like maple flavoring with pecans or walnuts, but use almond or vanilla extract with almonds, or butter flavoring with peanuts! Enjoy using your imagination!

- Preheat oven to 350 degrees.
- Whisk together the eggs, milk, half-and-half, extract, cinnamon, nutmeg, and salt in a shallow baking dishm I use a pie pan and set aside.
- Combine the cornflakes and nuts in another shallow dish, I use a paper plate.
- Melt 1/3 tablespoon butter in a large skillet over low heat.
- Dip 2 slices of bread in the egg mixture and lightly coat each side.
- Transfer the slices to the cornflake mixture, turn to coat, and place in the prepared skillet.
- Cook for 3 minutes on each side, transfer to a baking sheet, and set aside.
- Repeat with the remaining butter and bread slices.
- Place in the oven and bake for 10 minutes. Serve immediately or keep warm in 200 degree oven.
