Fennel & Apple Salad image

A crunchy, sweet and tart aniseed spectacluar. This salad has it all - flavour and a wonderful summer crunch!

Number Of Ingredients 10

1 fennel bulb ((medium to large)(cut into thin matchsticks or shredded))
2 apples ((crisp type)(peeled, cored and cut into thin matchsticks))
⅓ cup red onion ((thinly sliced))
2 tbsp fennel leaves ((chopped))
2 tbsp dill ((chopped))
3 tbsp parsley ((chopped))
salt & pepper
1 tbsp white wine vinegar
3 tbsp extra virgin olive oil
1 lemon ((juice of))

Steps:

  • Chop the fennel into thin matchsticks or shred into very thin slices. Keep some of the leaves and chop (if the fennel didn't have any leaves - don't worry!)Peel and de core the apples then cut into thin slices. Cut the thin slices into very fine matchsticks then squeeze over half of the lemon and mix well.Very finely slice the red onion and add a little lemon over, mix well.Now combine all the ingredients in a bowl. That's IT!

This fennel apple salad is a gluten-free and vegan-friendly healthy side dish that only takes 10 mins to put together. So crunchy and yummy!

1 small Granny Smith apple or another crisp variety, cored and thinly sliced
1 small fennel bulb, thinly sliced
2 celery stalks, thinly sliced
Salt and pepper, to taste
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar or white wine vinegar
1 tablespoon honey Fresh thyme leaves or fennel fronds (optional)
1 ounce walnuts, toasted and roughly chopped

Steps:

  • Combine thinly sliced apple, fennel, and celery in a large bowl. Season with salt and pepper to taste, then dress with olive oil, vinegar, and honey. Toss well and adjust the flavor by adding more vinegar and/or honey if desired.
  • Garnish with fresh thyme or fennel fronds (if using) and top the salad with toasted walnuts. Enjoy!

I made this salad crunchier with the addition of toasted almonds. This is ideal for that someone who wants creamy but not made with globs of mayonnaise! Have fun with this recipe.

3 medium apples, peeled, seeded and diced small
lemon juice
1 cup red seedless grapes or 1 cup green seedless grape
1 cup celery rib, diced small
3/4 cup low-fat fruit yogurt (your choice flavor-I add a touch of honey to the yogurt)
1/4 cup sliced almonds, plus
2 tablespoons sliced almonds, toasted
mint sprig

Steps:

  • Toss the cut up apples with a bit of lemon juice to avoid browning. Cut the grapes in half.
  • Mix the apples, grapes, celery, yogurt and 1/4 cup almonds together. Toss well to coat.
  • Arrange on lettuce leaves if desired.
  • Sprinkle each serving with the reserved 2 tablespoons of toasted almonds and add a sprig of fresh mint leaves.
  • Chill if not eating immediately.

1 cup raisins
1 cup chopped walnuts
1/2 cup mayonnaise

Steps:

  • In a large bowl, combine the apples, celery, raisins and walnuts. Add mayonnaise; toss to coat. Cover and refrigerate until serving.

This is my take on a Waldorf Salad using things I happened to have on hand. This is my 1st taste of fennel, and I was pleasantly surprised to find that I like it. I did not include chilling time.

1 large fennel bulb
1 large granny smith apple
1 cup walnut halves
1 1/2 cups low-fat vanilla yogurt
2 tablespoons lemon juice

Steps:

  • In a small bowl combine lemon juice and yogurt, set aside.
  • Finely slice the fennel. I used a mandolin.
  • Halve and core the apple. Leaving the skin on, finely slice it. I used a mandolin for this as well.
  • In large bowl combine the fennel, apples, and walnuts.
  • Pour dressing over the fennel mixture and toss to coat.
  • Chill until ready to serve.
