CRISPY BAKED CHICKEN STRIPS

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with foil; spray with cooking spray.
- Cut chicken breasts into thin strips, about 1-inch wide.
- Beat eggs and water together in a shallow dish. Mix bread crumbs, Parmesan cheese, garlic powder, parsley, pepper, and salt together in another shallow dish.
- Dip chicken into egg mixture, then dredge in crumb mixture. Place coated chicken on the prepared baking sheet.
- Bake in the preheated oven until chicken is no longer pink in the center and coating is crispy on the outside and golden brown, 15 to 20 minutes, turning once halfway through.

- Cut each chicken breast into five strips. Season the egg, then coat each piece of chicken first in the egg, then the polenta. Heat about 2cm oil in a frying pan, add the chicken and fry for 5-7 mins until the coating is crisp. Drain well on kitchen paper.
- Spoon the crème fraîche into a small bowl and swirl in the peri-peri sauce. Dress the watercress with the vinaigrette and serve on the side with the chicken and dipping sauce.

- In a shallow pan, mix together bread crumbs, Parmesan cheese, garlic powder, basil, oregano and black pepper.
- In another shallow dish, beat eggs together with olive oil and water.
- Cut each chicken breast into 6 strips.
- Dip each side of each piece of chicken into egg mixture, then dredge in crumb mixture.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
- Place egg in a bowl. Mix crushed crackers, garlic powder, salt, pepper, and chili powder together in a second bowl.
- Dip chicken strips into beaten egg, then coat with cracker mixture; place on the prepared baking sheet.

- While oven is preheating, mix buttermilk egg white and hot pepper sauce in a deep bowl: mix well until incorporated. Rinse off chicken strips and add them to the buttermilk mixture. Let them sit while you prepare the crunchy mixture.
- In a large food processor add Cornflake cereal, paprika, fresh thyme, garlic powder, and salt. Pulse until you have crumbs and all the seasonings have been incorporated together. Carefully pour the bread crumb mixture into a shallow plate.
- Line a baking sheet with a silicone baking mat (or aluminum foil) then place a metal cookie cooling wire rack on top of the lined baking sheet. Spray with non-stick cooking spray. - In a mixing bowl, combine egg and almond milk. In another mixing bowl, combine almond flour, shredded coconut, breadcrumbs, everything bagel seasoning and paprika.
