Steps:
- Heat oven to 375°F.
- Lay the fish in a 13x9 baking dish. Season very lightly with salt and pepper.
- Mix the remaining ingredients and sprinkle over the cod.
- Bake at 375°F for 8-12 minutes (depending on the thickness of the fish) until the fish flakes with fork and crumbs are golden.

BAKED STUFFED COD
This foolproof recipe for moist and flaky baked cod fillets is topped with a mixture of buttered fresh breadcrumbs, garlic, and chopped parsley.

- Preheat the oven to 400°F and thoroughly coat a baking dish with nonstick spray and add the cod fillets.
- Try to choose a dish that will accommodate your fish in a single layer with little or no room left over. If your fillets have thin portions (as most do), it's a good idea to overlap them a bit to keep the thickness somewhat uniform.
- Drizzle the fish with 1 tablespoon each of the lemon juice and olive oil, then season lightly with salt and pepper.
- In a separate skillet, heat the remaining olive oil together with the butter over medium heat.
- Add the garlic and crushed red pepper and sauté just until garlic begins to turn golden (do not brown).
- Remove from the heat, stir in the remaining lemon juice, breadcrumbs and parsley.
- Spread the crumb mixture evenly over the fish and bake for 12 to 14 minutes, or until the fish flakes easily.
- Serve immediately (this dish is served casserole-style - you don't have to portion out individual fillets).

- Preheat the oven to 400 degrees F (200 degrees C). Lay cod fillets in a baking dish and season lightly with salt and pepper.
- Combine water and fish bouillon cube in a bowl. Stir to combine and pour over cod.
- Mix bread crumbs, butter, parsley, dill, tarragon, salt, and pepper in a bowl with a fork until crumbly. Sprinkle evenly over cod.
- Bake in the preheated oven until fish flakes easily with a fork and the crust is golden and crunchy, about 20 minutes.

CRUNCHY PECORINO BAKED COD
Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment paper.
- Place cod fillets on a paper towel. Place another paper towel over top, and press until fillets are thoroughly dried. Season both sides of each fillet with salt and pepper and place on the prepared baking sheet.
- Mix together bread crumbs, Pecorino Romano cheese, mayonnaise, butter, oregano, thyme, and Worcestershire sauce in a bowl until well combined. Season to taste with salt and pepper. Spread a generous amount of topping over each cod fillet.
- Bake in the preheated oven for 8 to 10 minutes. Switch to broil and broil until topping is browned and cod flakes easily with a fork, 2 to 3 minutes. Serve immediately.

CRISPY BAKED COD
Steps:
- Preheat oven to 375 F.
- Set up the flour, egg and bread crumbs in 3 separate bowls.
- Spray baking sheet with olive oil spray.
- Start with one fillet. Coat with flour. Then coat the filet in the whisked egg and then in the bread crumbs. Place on the baking sheet and repeat with the other fillets.
- One you have finished coating the fillets and placed them on the baking dish, spray the tops of the fillets with another quick spray of olive oil spray.
- Bake in oven about 15-20 minutes.
- You could garnish with a lemon wedge but you will need to adjust the calories.

- Heat the oven to 450 degrees and grease a glass or stone 9×13″ baking dish with clarified butter. Pat the cod fillets dry and season with salt and pepper (I prefer white pepper on fish, but use it sparingly). Place the fillets in the baking dish. In a small bowl toss the cracker crumbs with HALF of the dill and HALF of the parsley. In another small bowl, combine the mayo, mustard, 1 tsp. of the lemon juice, the remaining dill and parsley and the cayenne. Mix well. Spread the mayo mixture on the top of each fillet. Press the crumb mixture into the mayonnaise, making sure they adhere. Bake until the crumbs are golden brown and all but the very center of fish has turned from translucent to opaque, about 15 minutes. Spritz each fillet with remaining lemon juice and serve with lemon wedges if desired.

- Preheat oven to 350°F In a small skillet over medium-low heat, melt butter. Add garlic and cook, stirring, until fragrant, 30 seconds. Add bread crumbs, stir to coat with butter, then cook, stirring frequently, until light golden brown, about 5 minutes. Remove from heat and stir in parsley and lemon zest. Let cool. Combine mustard and mayonnaise in a small bowl.
- Rinse fish and pat dry. Sprinkle each fillet lightly with salt, then place on a rimmed, foil-lined baking sheet and brush with mustard mixture. Press 1/4 of crumbs onto each fillet.

- Preheat oven to 450 degrees F. Add the butter to an 11 x 7-inch baking dish (or another similar size dish that easily holds all of your fillets). Place the dish in the hot oven, just until the butter melts (it will only take a few minutes).
- In a shallow dish, combine flour, cornmeal, seasoned salt, garlic powder and pepper. Dredge the fish in the flour mixture to coat on all sides, shake off excess breading, and place in the hot dish. Very carefully turn the fish to coat with butter. You can also use a spoon to drizzle the melted butter over the top of the fish.
- Bake for 7-8 minutes. Turn the broiler to HIGH and broil the fish for 1-2 more minutes, until the top of the fish is crispy and flakes easily with a fork. Keep a close eye on the fish while it's under the broiler to make sure that it doesn't burn.
- Squeeze fresh lemon juice over the fish and sprinkle with parsley just before serving.
