SWISS MUESLI RECIPE
This recipe yields 8 (1/2 c) servings. Prepare the toasted oats and nuts ahead of time and store them in an air-tight container in your pantry for a quick, protein-rich breakfast.

Steps:
- Place the oats in a large skillet. Heat over medium heat, stirring often until the oats are fragrant and golden, 4-5 min. Remove the pan from the heat and add the wheat germ and cinnamon. Mix to combine. Remove the oats from the skillet and let cool. Store prepared toasted oat mixture in an airtight container in the pantry until you are ready to make your cereal.
- Place almonds and walnuts in a large skillet and toast over medium heat, stirring often, until fragrant, 3-4 min. Remove the nuts from the skillet and let cool. Store toasted nuts in an airtight container in the pantry until you are ready to use them.
- Mix ½ cup of the toasted oats mixture with ¼ cup toasted almonds and walnuts. Add ½ diced apple and 2 Tbsp raisins. Drizzle with honey to sweeten, as desired. Pour milk over the cereal and enjoy.
- Soak ½ cup of the oat mixture with ½ cup water (juice or milk) and refrigerate 12 hours or overnight. When you are ready to eat, mix in ¼ cup toasted almonds and walnuts, ½ diced apple, and 2 Tbsp raisins. Sweeten as desired with honey.
CRUNCHY GRANOLA
This granola makes a GREAT, filling snack. Good dry or with milk. It is very addictive, but it's good for you, so enjoy!

- Heat oven to 275 degrees F.
- Line 2 cookie sheets with parchment paper.
- Combine brown sugar and water in a 4 cup microwave proof cup.
- Microwave on high 5 minutes until sugar is completely dissolved.
- Remove from microwave and stir in vanilla and salt.
- In large mixing bowl, mix oats, nuts, and brown sugar mixture.
- Mix thoroughly.
- Spread onto cookie sheets and bake 45 minutes-1 hour until golden brown.
- When granola has cooled completely, add fruits if you wish and store in airtight container.

- Preheat oven to 275 degrees F (135 degrees C). Line baking sheets with parchment paper.
- Mix rolled oats, flax seed meal, steel-cut oats, oat bran, wheat germ, and pecans in a large bowl. Whisk agave nectar, pumpkin, brown sugar, water, canola oil, vanilla extract, pumpkin pie spice, and sea salt in a separate bowl, stirring until brown sugar and salt are dissolved. Pour liquid ingredients over rolled oats mixture and stir to coat. Spread mixture on prepared baking sheets.
- Bake in the preheated oven for 1 hour, stirring every 20 minutes. Stir dates into granola and continue baking until granola is lightly golden brown, 20 to 30 more minutes, stirring once. Let cool completely and mix miniature chocolate chips into granola. Store in an airtight container.

CRUNCHY GRANOLA (MUESLI)
I adapted this easy-to-make granola from the first Harrowsmith cookbook (I made a big reduction in butter and it still works). Because we have a houseful of people, I usually double the amounts shown here. If you feed a crowd, too, make sure you have a large enough pan. My ceramic roasting pan-which is 11" x 14"-holds a double recipe comfortably. UPDATE: At an exchange student's request, we are now adding cinnamon. Good addition. The recipe has been revised accordingly.

- Preheat oven to 350 degrees.
- Combine all the dry ingredients in the baking pan (first six items). Add raisins (or other dried fruits) after cooking.
- Heat the butter, honey, milk and salt in a small saucepan until all the butter melts.
- Dribble honey-butter mixture over dry ingredients, and mix well to moisten all the dry ingredients.
- Bake for 20-30 minutes (depending on how hot your oven runs), stirring frequently.
- This can easily over-brown (burn), so keep an eye on it.
- Remove from oven and stir in the raisins or other dried fruit.
- When cool, store in an airtight container. It keeps very well.

- Heat oven to 300°F.
- Mix oats, flax, wheat germ, almonds, pecans, salt and brown sugar in a large bowl. Wisk to combine the oil, honey and egg white, then pour over the oat mixture. Stir well until ingredients are evenly coated. It may seem too dry but keep stirring.
- Spray oil on a jelly roll pan and add the granola mixture. Bake 20-30 minutes, until the edges are browned and it smells toasty. To make clumps don't stir during baking. Cool and allow the granola to harden. Break into smaller pieces and add the fruit. Store airtight for two weeks.
- The dried fruit may hydrate the granola so it loses some of its crunch. If so just pop it back in a 300F oven for about 10 minutes.
