Number Of Ingredients 8

1 pound raw walnuts
2 tablespoons mesquite meal
1 teaspoon vanilla bean powder or 1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground clove
1/2 teaspoon sea salt
1/2 cup coconut nectar

Steps:

  • Preheat the oven to 350˚F.
  • Place the walnuts into a large bowl then toss with the mesquite meal, vanilla bean powder or extract, cinnamon, allspice, clove, salt, and coconut nectar, until they are evenly coated.
  • Spread the nuts in a parchment-lined baking dish and slowly roast the walnuts for about 30 minutes. Keep checking on them every 10 minutes so they do not burn. The walnuts are ready when they are golden brown and crisp. Remove them from the oven and allow them to cool to room temperature.
  • Store them in an airtight container for up to one month.

1 tablespoon unsalted butter
1/2 cup pure maple syrup
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
Coarse salt
2 cups walnuts (6 ounces)

Steps:

  • Preheat oven to 375 degrees. Melt butter in large skillet over medium heat. Stir in maple syrup, vanilla, cinnamon, and 3/4 teaspoon salt. Bring to a simmer (mixture should be frothy), about 3 minutes. Add walnuts, and toss to coat using a rubber spatula. Cook, stirring, until sauce is syrupy and bubbly, about 3 minutes.
  • Transfer walnut mixture to a parchment-lined baking sheet, and spread into a single layer. Bake until walnuts are caramelized, about 10 minutes. Transfer sheet to a wire rack. Stir, and let stand until cool and hardened, about 30 minutes.

3 large eggs
1/2 cup milk
1/3 cup half-and-half
1 teaspoon maple extract (or sub your choice)
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon salt
2 1/2 cups corn flakes, finely crushed
2/3 cup nuts, finely crushed (we like pecans or sub your choice)
2 tablespoons butter
8 slices bread, dry, day old is best

Steps:

  • Preheat oven to 350 degrees.
  • Whisk together the eggs, milk, half-and-half, extract, cinnamon, nutmeg, and salt in a shallow baking dishm I use a pie pan and set aside.
  • Combine the cornflakes and nuts in another shallow dish, I use a paper plate.
  • Melt 1/3 tablespoon butter in a large skillet over low heat.
  • Dip 2 slices of bread in the egg mixture and lightly coat each side.
  • Transfer the slices to the cornflake mixture, turn to coat, and place in the prepared skillet.
  • Cook for 3 minutes on each side, transfer to a baking sheet, and set aside.
  • Repeat with the remaining butter and bread slices.
  • Place in the oven and bake for 10 minutes. Serve immediately or keep warm in 200 degree oven.

This is a great granola recipe from Fine Cooking Magazine (Dec. 2005) for those who like big clusters. The chunks of tasty oats and nuts can be eaten easily out of hand and stay crisp in milk, too. If you want a lighter cereal, substitute some plain puffed cereal (like rice or millet) for some of the oats. You can use other dried fruit, like dried apricots and nut oils rather than canola. Stored in an airtight container, this granola keeps well for a week (after that, it loses some crunch and the dates begin to harden). Yields 11 to 12 cups.

4 cups old fashioned oats (not quick-cooking)
8 ounces walnut pieces (2 cups)
1/2 cup whole wheat flour
1/2 cup nonfat dry milk powder
1/2 teaspoon table salt
1 1/2 cups pure maple syrup (Grade B is recommended)
1/4 cup canola oil
1 tablespoon pure vanilla extract
8 -9 ounces pitted dates, halved or quartered, depending on size (2 cups)

Steps:

  • Position racks in the upper and lower thirds of the oven and heat the oven to 300°F Spray two rimmed baking sheets with vegetable oil spray. In a large bowl, mix the oats, walnuts, whole-wheat flour, dry milk powder, and salt. In a medium bowl, combine the maple syrup, oil, and vanilla; stir well. Add the maple syrup mixture to the oats and mix to combine.
  • Divide the mixture between the two oiled baking sheets, distributing it in 1- to 2-inch clumps. Bake for 20 minutes and then flip the clusters with a metal spatula and switch the positions of the pans in the oven. Bake for 20 minutes, flip the granola again, and bake until the granola has a very fragrant, toasty aroma and the nuts look well toasted, about another 15 minutes. (Watch carefully to ensure the granola doesn't burn.).
  • Let cool completely in the pans. Break up any large clumps. When completely cool and dry, mix in the dates.
