Simple, savory, and very flavorful variation on new red potatoes. Excellent side dish!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place potatoes in an 8x8 inch baking dish.
- In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
- Bake, covered, in preheated oven for 30 minutes. Uncover and bake until golden brown and tender when pierced with a fork, about 10 minutes more.

Steps:
- Cut potatoes into even sized chunks.
- Place in cold, salted water& bring to a boil.
- Lower heat& simmer until tender, about 10- 15 minutes.
- Drain well& place back on burner (heat off) for several minutes.
- Shake pot occasionally to dry potatoes.
- Season to taste.
- Crush with a potato masher but leave some texture in the potatoes.
- Melt butter in skillet on low heat.
- Add garlic& saute until golden, about 5 minutes.
- Remove garlic& reserve.
- Pour butter over potatoes& gently combine.
- Pile in buttered serving dish& stud with garlic.
ROASTED POTATOES WITH GARLIC

- Pre-heat oven to 350 degrees. Leaving their skins on, scrub the potatoes with a brush to remove any dirt or blemishes. Dry the potatoes with paper towels or a cloth. Leave whole, cut in half or in quarters, depending on the size of the potatoes. Pour the olive oil into a roasting pan or large cast iron skillet and heat in a 350 degree oven for ten minutes before adding the potatoes. Roast the potatoes for 45 minutes, until crisp. Shake the pan several times during cooking, so that the potatoes roll around to brown evenly. Remove from the oven. Drain the potatoes on paper towels or a cloth to absorb the excess oil, then place in a serving dish. In a saute pan, melt the butter, add the garlic, and saute until light golden-brown. Add the chopped herbs to the garlic butter, stir together quickly, and remove from the heat. Pour the garlic-herb butter over the potatoes, season with salt and pepper, and serve.;

- Put cut potatoes into a saucepan, and cover them with cold water. Put the pot over medium high heat, and boil until tender. Drain off the water, and mash with cream, and butter. Season with the salt and pepper.

Steps:
- Place potatoes into a very large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 40 minutes. Drain.
- Preheat the oven to 400 degrees F (200 degrees C).
- Arrange potatoes close together in a 9x13-inch baking dish. Use a fork to press about 1 inch deep in the center of each potato until inner flesh is exposed.
- Whisk 1/2 cup olive oil, garlic, and salt together in a small bowl to blend. Drizzle over potatoes.
- Bake in the preheated oven, basting occasionally with the oil mixture, until potatoes are crisp and brown on top, about 1 hour 10 minutes. Add additional oil if potatoes seem dry.
- Sprinkle with parsley and serve hot.

- Heat oven to 200C/180C fan/gas mark 6.
- Wash the potatoes. Leave the skin on and cut each in half. Peel and halve the shallots.
- Place the potatoes in a pan of boiling water for fifteen minutes or until the potatoes are soft (a sharp knife should pass straight through).
- Put the vegetable oil in a large baking tray and place in the preheated oven.
- Turn off the hob and drain the potatoes. Return them to the saucepan with all the other ingredients. Season generously.
- Put a tight fitting lid onto the saucepan. Making sure you hold the lid down tightly, vigorously shake, bashing all the ingredients together and slightly crumbling the potatoes.
- Spoon the contents into the baking tray and return to the oven to cook for thirty minutes, or until the potatoes are crispy and brown.
GARLIC ROASTED RED POTATOES
I have enjoyed these for years. I used to quarter the potatoes, but when I became a diabetic I started to cross cut the potatoes and by eating them a slice at a time you get the full flavor of your potato without eating a lot of carbs. You also get your potato fix and satisfy your cravings. The trick is to place the potatoes between two steak knifes and slice down using the knife handles as stops so you don't cut completely through the potato. Make the slices about an 1/8-inch apart and fan the potato so there is space in between the slices. This holds the spices and supercharges the potato.

- Place the potatoes and 1 teaspoon salt in a medium saucepan and cover with water by 1 inch. Bring to a boil then reduce the heat to medium-high. Continue cooking until the potatoes are tender, about 20 minutes. To test if the potatoes are done, slip a small paring knife into one of the larger potatoes. If it slips in and out easily, the potatoes are done. Drain the potatoes in a colander.
- Return the empty pot to the stove-top and add the butter. Once melted, add the garlic and the sliced white portions of the green onions. Sauté, stirring frequently, until the garlic is fragrant, about 30-45 seconds. Remove from the heat and add the remaining green portions of the onions and the chopped parsley. Carefully add the cooked potatoes to the butter mixture. Using the back of a fork or a large spoon, gently press down on each potato until the skin breaks and the potato smashes just a little. Continue until all potatoes are lightly crushed. Gently stir the potatoes and the butter mixture together until combined. Some of the potatoes will break down but this is okay. Season with salt and pepper to taste then serve immediately.
