  • Toss 1 1/2 pounds small fingerling potatoes, 3 smashed unpeeled garlic cloves, 2 tablespoons each olive oil and chopped rosemary, 1/2 cup pitted Kalamata olives, wide zest strips from 1 lemon, 1/2 teaspoon kosher salt and a few grinds of pepper on a large sheet of heavy-duty foil. Fold in the sides of the foil and seal to make a packet. Grill over high heat, flipping, until the potatoes are tender, 25 minutes.

1/2 cup grated parmesan cheese
1/2 cup black olives, pitted, sliced
1/2 cup olive oil
salt and pepper

Steps:

  • Preheat oven 180 C.
  • Roughly crush cooked potatoes.
  • Toss with remaining ingredients.
  • Season well.
  • Loosely pack into an ovenproof dish.
  • Bake 20 minutes.

1 1/2 pounds baby red potatoes
Kosher salt
1 medium shallot, minced
1/2 teaspoon finely grated lemon zest
1/4 cup fresh lemon juice
3/4 cup extra-virgin olive oil
One 2-ounce bunch arugula, large stems discarded and leaves chopped
3/4 cup chopped parsley
1/2 cup snipped dill
1/2 cup snipped chives
Freshly ground black pepper

Steps:

  • Put the potatoes in a medium saucepan and add water to cover. Bring to a boil, add a generous pinch of salt and simmer over medium heat until tender, 15 to 20 minutes. Drain and transfer them to a plate to cool slightly.
  • Meanwhile, whisk together the shallot, lemon zest and lemon juice in a large bowl; let stand for 5 minutes.
  • Using your fingers, lightly crush the potatoes and transfer to the large bowl. Add the olive oil and mix gently, then fold in the arugula, parsley, dill and chives. Season generously with salt and pepper. Serve right away.

a small handful of flat-leaf parsley , chopped
white wine vinegar
olive oil

Steps:

  • Cut the potatoes into cubes but keep the skin on. Cook in a pan of simmering salted water until just tender, about 10-15 minutes, and then drain. Add back to the pan with the parsley and some seasoning and crush lightly with a masher or the back of a fork.
  • Add a splash of white wine vinegar and a slug of olive oil and gently mix in. Add more of each if it needs it.

2 russet potatoes
6 scallions
1 cup Italian parsley, packed
3/4 cup extra virgin olive oil

Steps:

  • Peel potatoes and quarter.
  • In a saucepan cover potatoes with cold salted water by 1 inch and simmer 15 minutes, or until just tender.
  • Drain potatoes in a colander and let stand 5 minutes.
  • Finely chop white and light green parts of scallions. Finely chop parsley.
  • In saucepan heat oil and chopped scallions over moderate heat until oil begins to sizzle and add potatoes.
  • With a fork lightly crush potatoes into scallion oil (do not mash completely). Season potatoes with salt and pepper and stir in parsley.

1/4 cup green olives such as picholine or arbequina
1 pound fingerling or small red potatoes, peeled if desired, then halved lengthwise
2 tablespoons extra-virgin olive oil
6 (3- by 1-inch) strips lemon zest, removed with a vegetable peeler
1/2 teaspoon ground cumin
1 cup water
1/4 cup coarsely chopped flat-leaf parsley
Accompaniment: lemon wedges

Steps:

  • Smash olives with flat side of a large knife, then discard pits and chop olives. Toss potatoes with olives, oil, zest, cumin, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a 10-inch heavy skillet, then add water and bring to a boil.
  • Cover skillet and boil over medium heat until potatoes are tender, 10 to 12 minutes. Remove lid and cook, stirring, until water is evaporated, 1 to 2 minutes. Serve sprinkled with parsley.

2 pounds fresh Italian sausage links
1 onion, chopped fine
2 garlic cloves, crushed
a 28-ounce can plum tomatoes including the juice
1 1/2 pounds boiling potatoes
1/2 cup Kalamata or other brine-cured black olives

Steps:

  • In a heavy kettle heat the oil over moderately high heat until it is hot but not smoking, in it brown the sausage in batches, transferring it as it is browned to paper towels to drain, and pour off all but 1 tablespoon of the fat. In the fat remaining in the kettle cook the onion and the garlic over moderate heat, stirring, until the onion is golden, stir in the tomatoes with the juice, breaking up the tomatoes, and the sausage, and simmer the mixture, covered, for 30 minutes. Stir in the potatoes, peeled and cut into 3/4-inch pieces, and the olives, simmer the mixture, covered partially, for 15 to 20 minutes, or until the potatoes are tender, and season it with salt and pepper.

  • Drain, tip into a bowl, and crush with the olive oil until broken but not mashed. Stir through the spring onions and the olives, then season to taste and serve.
