HEALTHY CHEESE & ONION QUICHE
This healthy cheese and onion quiche is everything you want in a quiche. There's cheese, sweet onions and a firm texture that's super easy to slice and pack up, making this one of my best lunchbox recipes using leftovers when I'm trying to mix things up a bit.

Steps:
- Heat your oven to 180/340
- Fry your onions in the oil on a low heat until soft and caramelized - add a little water if the onions start sticking to the pan. Don't let the onions burn
- In a large bowl, whisk your eggs. Add the Ricotta cheese and combine both until you have a smooth mixture and the Ricotta has fully combined with the eggs. Season with salt and pepper well
- Add your shredded cheese (leaving a handful of cheese for the top) and mix well
- Line a square baking pan with parchment paper and oil if needed
- Place half your cooked inion on the bottom, then add the quiche mixture
- Then put the rest of the onions onto the mixture evenly
- Cover the top with the remaining cheddar cheese
- Bake for 20-25 minutes. The quiche is cooked and ready to come out of the oven when the top is ever so slightly wobbly. If it look wet, put it back in the oven and check at 5 minute intervals
- Leave your quiche to cool down and the slice and serve, or slice and store
EASIEST CHEESE & ONION QUICHE

- Preheat the oven to 180C (360F)
- Generously grease a pie dish with butter and then sprinkle a little bit of the flour across the bottom of the dish.
- Whisk the eggs, milk and dijon mustard together in a jug.
- In a saucepan, heat a little olive oil over a medium heat. Saute the onions until they are soft, but not quite browned.
- Transfer the onions to the pie dish.
- Add the grated cheeses, and then add the rest of the flour and use a spatula to mix it it all together.
- Sprinkle the goats cheese over the top, then pour the egg mixture over.
- Sprinkle the smoked paprika on the top.
- Place in the oven for 35-40 minutes. It will be browned, but still a little wobbly, and should have puffed up a little.
- Let rest for 5-10 minutes before tucking in. It will sink back down again as it cools - that is fine.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
- Heat butter and olive oil in a skillet over medium-high heat; cook and stir onion in the heated butter-olive oil until onions soften, about 10 minutes. Transfer onion to a plate to cool.
- Whisk cream, eggs, salt, and black pepper in a bowl; stir in mozzarella cheese, Parmesan cheese, and onion. Pour mixture into the prepared baking dish.

- Melt butter in a large fry pan. Add thyme and onion, saute over medium heat for 15-20 minutes or until onions are golden brown.
- Add onions to a buttered quiche pan. Cover with cheese.
- In a mixing bowl whisk together milk, cream, egg, salt, pepper, and nutmeg.
- Pour over onions and cheese.

- Heat the oven to 180C/160C fan/gas 4. Butter and line a 23cm round deep, springform cake tin so the paper comes 2-3cm up the sides of the tin.
- Melt the butter in a frying pan. Add the onion and pancetta and cook over a low heat for 10 mins or until softened and translucent.
- Bring a pan of lightly salted water to the boil. If using broccoli, cut into small florets, if using asparagus, keep whole. Blanch the veg for 2 mins, drain and leave to steam-dry.
- Whisk the eggs, cream and two thirds of the cheese together in a bowl. Season with salt and black pepper. Mix through the onion and bacon mixture. Pour into the tin and top with the veg and remaining cheese. Bake for 25-30 mins or until golden brown with a slight wobble in the centre.
