This is a lowfat, delicious quiche! I am always asked for this recipe (I serve often at brunches). Can be made ahead & baked next day, and/or frozen. Leftovers are wonderful when warmed in microwave and placed on toasted english muffin. My 2 year-old loves it too. NOTE: Do not use real crab meat; it will not come out the same.

8 ounces imitation crabmeat, chopped
1 cup low-fat cheddar cheese, shredded
1 cup onion, chopped
4 large eggs (I use Egg Beaters)
1 cup evaporated skim milk
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon pepper
1 dash paprika

Steps:

  • Preheat oven to 400 degrees (375 degrees for glass plate).
  • Spray a 9" pie plate with non-stick spray.
  • Combine chopped crab, onion and cheese.
  • Press into pie plate.
  • Beat together remaining ingredients except paprika and pour over the crab.
  • Sprinkle with paprika.
  • Bake 30 minutes.

  • In a small bowl, combine all ingredients. Transfer to a 7-in. pie plate coated with cooking spray. Bake at 350° for 35-40 minutes until a knife inserted in the center comes out clean.

1-1/2 cups shredded reduced-fat cheddar cheese
1/2 cup shredded zucchini
1/3 cup chopped green onions
1-1/2 cups egg substitute
1 can (12 ounces) fat-free evaporated milk
3/4 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon salt-free lemon-pepper seasoning
Dash paprika

Steps:

  • In a bowl, combine the crab, cheese, zucchini and onions. Press onto the bottom and up the sides of a 9-in. deep-dish pie plate coated with cooking spray. In another bowl, combine the egg substitute, milk, mustard, salt and lemon-pepper; mix well. Pour into crust. Sprinkle with paprika., Bake, uncovered, at 400° until a knife inserted in the center comes out clean, 25-30 minutes. Let stand for 10 minutes before cutting.

With a homemade crust and a little twist by adding mushrooms, red pepper, and Italian cheese, this crab quiche is extra creamy, light, and smooth. My mom said eating it made her feel like she was in the French countryside. If you don't feel like the hassle of making the crust, use a 9-inch frozen pie crust. Plain mozzarella will work in place of Italian cheese blend, too.

1 ¼ cups all-purpose flour
1 egg
¼ teaspoon salt
¼ teaspoon baking powder
½ cup butter-flavored shortening
3 tablespoons ice water, or as needed
2 tablespoons butter
8 cremini mushrooms, thinly sliced
4 green onions, chopped
½ red bell pepper, diced
¼ teaspoon minced garlic
salt and ground black pepper to taste
1 cup heavy whipping cream
3 eggs
1 pinch celery salt
3 dashes hot pepper sauce (such as Frank's RedHot®), or to taste
1 (8 ounce) can lump crabmeat, drained
½ (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
¾ cup shredded Italian cheese blend

Steps:

  • Whisk flour, 1 egg, salt, and baking powder together in a bowl; Add butter-flavored shortening into flour mixture and combine by hand until mixture resembles coarse crumbs. Stir ice water into the mixture, adding enough so the dough just holds together. Form dough into a ball, wrap in waxed paper, and refrigerate 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Generously flour a large sheet of waxed paper and roll the dough out to an even circle about 11 inches across; fit crust into a 9-inch pie dish. Press edges of dough gently over rim of crust.
  • Bake the crust in the preheated oven until lightly browned, 6 to 7 minutes.
  • Reduce oven heat to 375 degrees F (190 degrees C).
  • Heat butter in a large skillet over medium heat; cook and stir mushrooms, green onions, and red bell pepper in the hot butter until vegetables soften, about 7 minutes; stir in garlic and cook a few minutes more. Season vegetables with salt and black pepper.
  • Whisk cream, eggs, celery salt, and hot sauce together in a bowl until thoroughly combined; stir crabmeat and mushroom mixture into egg mixture. Crumble about 3/4 of the herb cheese spread into the bottom of the crust and pour crabmeat mixture over the cheese spread. Crumble remaining herb cheese spread into crabmeat filling and spread Italian cheese blend over the top.
  • Bake in the oven until crabmeat filling is set and cheese topping is lightly golden brown, 30 to 35 minutes.

This is a recipe that I put together because I wanted a low-carb, high protein dish with crab. It is baked the same way as a quiche, except there is no crust.

3 eggs (I use egg substitute)
1/2 cup fat-free evaporated milk
1/2 low-fat mayonnaise
1 teaspoon cornstarch
1 1/2 cups gruyere cheese, grated
1 (13 ounce) can crabmeat, drained
Tabasco sauce, to taste (I use 3-4 "shots")
3 green onions, chopped
1 cup mushroom, sliced
2 tablespoons canola oil

Steps:

  • Heat up a non-stick skillet. Place 1 tablespoon canola oil in heated skillet. Sauté sliced mushrooms on medium heat until browned and soft. Take off heat and set aside.
  • Grate the Gruyere cheese, set aside.
  • Chop the green onions; set aside.
  • Pour 1 tablespoon canola oil into a quiche pan (or deep pie pan) and spread inside the bottom and sides; set aside.
  • In a small mixing bowl, add eggs, milk, mayonnaise, cornstarch and Tabasco sauce. Mix using a whisk until smooth.
  • Arrange crab, cheese, green onions and mushrooms in the quiche pan evenly.
  • Pour egg mixture into the pan.
  • Bake in a 350°F oven for 35-40 minutes, or until a knife inserted into the center comes out clean.
  • Let cool 5-10 minutes, slice and serve.

ground black pepper to taste
1 pinch cayenne pepper
1 pinch paprika

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9 inch pie pan.
  • Pick through the crab meat and remove any bits of shell or cartilage.
  • In a medium mixing bowl, combine crabmeat, bread crumbs, milk, eggs, parsley, lemon juice, mustard, Worcestershire sauce, salt, pepper and cayenne pepper. Transfer the quiche mixture to the prepared pan. Sprinkle paprika over the quiche.
  • Bake in preheated oven for 30 minutes, or until the quiche is firm in the center.

Mix together the milk, eggs, flour, salt, pepper to taste, and green onions, if desired. Pour this mixture evenly over the cheese and crabmeat.
