Cuban Style Black Beans Recipe

Ingredients:

  1. dried black beans
  2. water
  3. garlic cloves
  4. onion
  5. smoked ham hock
  6. paprika
  7. ground cumin
  8. bay leaves
  9. chicken stock
  10. chili powder
  11. vinegar
  12. salt and pepper

Steps:

  1. place the black beans and the 4 cups of water in a large stockpot
  2. cover and let boil for 2 minute
  3. turn off the heat and let stand , covered , for 1 hour
  4. remove the lid , and add the rest of the ingredients , except the vinegar , salt and pepper
  5. there should be enough liquid to just cover the beans
  6. if needed add more of either liquid to cover
  7. cover and simmer until the beans are tender , about 2 hours
  8. take out the hocks and remove the meat from the bones and fat
  9. return the meat to the pot
  10. discard fat and bones
  11. add the vinegar , salt and pepper
  12. simmer long enough to heat the vinegar throught the beans
  13. serve over white rice
