Carne Fria Al Estilo De Cuba - (Cold Meatloaf Cuban Style) image

This is another recipe that my friend Vicky Gomez gave me - it is for a type of meatloaf. She makes it by poaching it(wrapped in foil)and then serves it cold and sliced very thin on crackers or toasted pita or cocktail breads. I used most of her ingredients but instead of poaching it - I made it in the oven. We use this as an appetizer or canapés as well. Didn't allow for chilling or cooling times, which is approximately 10-12 hours.

1 lb lean ground beef
1 lb ground lean pork
1/2 lb ground lean ham
1 yellow onion, grated
2 garlic cloves, minced
1 teaspoon salt, to taste
1 teaspoon mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon fresh ground black pepper, to taste
1/4 teaspoon oregano
1/4 teaspoon ground bay leaf powder
4 eggs, lightly beaten
1 cup cracker meal or 1 cup dry breadcrumbs
freshly grated parmesan cheese, for sprinkling (optional)
5 eggs, beaten
1 cup cracker meal or 1 cup dry breadcrumbs

Steps:

  • Preheat oven to 300ºF.
  • Mix all ingredients well by hand except for breading ingredients.
  • Divide into 3-4 portions and roll each into a cylinder or log about 1-1/2"-2" in circumference.
  • Place in plastic wrap; shape into logs and refrigerate for about 2 hours, until the meat is firm to the touch.
  • First, roll the logs in beaten egg and then in Italian seasoned breadcrumbs or cracker meal or dry bread crumbs.
  • Roll each log separately and wrap in foil making sure the seams are well sealed.
  • Place on an ungreased baking sheet.
  • Bake for an hour.
  • Remove from oven DO NOT open foil.
  • Allow to cool until it reaches room temperature.
  • Refrigerate for 8 hours or overnight.
  • Cut into thin slices and serve cold with toasted pita chips, Carr's water biscuits, or Parmesan rosemary crisps.
  • As a nice topping, you can use a slice of hard boiled egg and a strip of red pimento on top.

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

2 eggs
⅔ cup milk
2 teaspoons salt
¼ teaspoon ground black pepper
3 slices bread, crumbled
1 ½ pounds ground beef
1 onion, chopped
1 cup shredded Cheddar cheese
½ cup shredded carrot
¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. Mix ground beef, onion, Cheddar cheese, and carrot into bread mixture; transfer mixture to a 9x5-inch loaf pan. Combine brown sugar, ketchup, and mustard in a small bowl; spread over meat mixture.
  • Bake in the preheated oven until no longer pink in the center, 1 to 1 1/4 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

  • Mix ground pork, ground beef, ground ham, with smoked sweet and hot spanish paprika, black pepper, oregano, garlic, salt, eggs, and bread crumbs/ cracker meal. Form into a loaf and cut open, fill with hard boiled egg and let rest in fridge wrapped in plastic wrap or something for about 2 hours. ALSO PLEASE DO NOT OVER MIX it makes the loaf tougher. The meat less tender
  • Now heat a large frying pan on high heat till really hot, lower to medium high, kinda high but not super high, add generous amount of olive oil in a large frying pan allow to heat til it barely smokes. Brown loaf carefully on all sides. (Yes this can be intimidating and hard my mom did it for me while I took pictures ha ha) When well browned set aside.
  • In same pan start forming your sauce sautee onions and bell peppers until onion is translucent about 5-7 minutes on medium high heat, then add garlic and sautee until fragrant another 1-2 minutes, deglaze with wine, add tomato sauce, water, salt, cumin, and bay leaves bring to a boil.
  • Throw sauce in a deep pot, bring back to boil, add browned meatloaf, spoon over sauce, when sauce is boiling cover and simmer on low for about 25 minutes, flip the loaf carefully to the other side spoon sauce over, simmer an additional 25 minutes. Now add minced cilantro and peas all over.
