Made with yuca, or cassava, a Latin American root vegetable similar to potatoes, this simple dish is the way my granny used to make it.

2 pounds yuca, peeled and sliced lengthwise
½ teaspoon salt
¼ cup olive oil
½ onion, diced
4 cloves garlic, minced
½ teaspoon fresh lemon juice

Steps:

  • Place the yuca into a pan and fill with enough water to cover. Stir in salt. Bring to a boil over medium-high heat, cover, and cook until tender, about 15 minutes. Drain, and place yucca on a serving plate.
  • Meanwhile, place the olive oil, onion, garlic, and lemon juice into a pan. Cook over medium heat about 5 minutes. Pour the hot olive oil mixture over the yuca, and serve immediately.

Yuca with Garlic-Citrus Sauce: Yucca con Mojo image

2 large cassavas or yucca, peeled and cut into 1-inch by 3-inch wedges
1 red onion, halved and sliced thinly into half moons
2 garlic cloves
1/2 bunch Italian parsley
1/2 bunch cilantro
2 limes, juiced
1/2 cup extra-virgin olive oil

Steps:

  • In a pot of boiling water, cook the yucca until tender, but not falling apart and losing its shape, about 10 minutes. Remove the yucca from the water, and dunk into an ice bath to stop the cooking process (shocking) and set aside.
  • Meanwhile, make the mojo. In a blender, place half of the red onion, garlic, parsley, cilantro, and lime juice. Start to puree and slowly drizzle in the olive oil. When well pureed, season with salt and pepper and set aside. Julienne the remaining half of the onion.
  • Heat 2 inches of oil in a deep cast iron skillet to 375 degrees F. Begin frying the partially cooked yucca until golden brown, about 5 minutes.
  • When uniform in color, remove the yucca from the oil and place in a bowl. Season with salt and pepper. Pour the mojo over the yucca, and garnish with the other half of the red onion.

4 medium yellow onions, thinly sliced
24 garlic cloves, thinly sliced
Salt and freshly ground black pepper
1/2 cup lime juice (about 6 limes)
1/2 cup vegetable oil
1/4 cup chopped fresh oregano leaves

Steps:

  • Bring a large pot of salted water to a boil. Add the yucca and boil until tender, about 30 minutes. Drain and place the yucca on a serving platter.
  • Heat the oil in a small skillet over high heat, add the onions and garlic and let cook about 1 minute, making sure the garlic and the onions don't start to brown; season with salt and pepper. Pour the onions and garlic directly over the yucca. Pour the lime juice on top and sprinkle with oregano.

Traditional Cuban Recipe: Cuban Mojo (Cuban Marinade) image

There are many variations of mojo. It is the signature marinade of Cuba and it finds its way into many varied dishes. After searching through many recipes and cookbooks; I found this in on www.icuban.com and in "Three Guys from Miami Cook Cuban" by: three brothers-in-law, Glenn Lindgren, Raul Musibay and Jorge Castillo. Many mojos do not include oil; with or without oil the key element is "sour" orange, an almost bitter orange that grows throughout Cuba and now it flourishes in most Miami backyards. In a pinch use: 2 parts orange juice to 1 part lemon juice and 1 part lime juice. The key to a good mojo is in the proportions; garlic, salt, whole black peppercorns and sour orange juice are it's main ingredients.Update: 04/14/08 add a teaspoon of cumin (if you so desire) there are many recipes that call for it but we don't use it here! I have been using this mojo since I left my mother's house, as we always used it in Cuba and Haiti.:)

1 teaspoon black peppercorns (whole)
1 1/2 cups orange juice, sour orange (or 1 cup orange juice & 1/2 cup lemon juice & 1/2 cup lime juice)
1 cup minced onion
2 teaspoons oregano
1 cup Spanish olive oil

Steps:

  • Mash garlic, salt and peppercorns, using a mortar and pestle or use food processor.
  • Stir in juice.
  • Allow to sit for at least 30 minutes or longer at room temperature.
  • *If making it without the oil - stop at this point and this makes a perfect marinade for seasoning, chicken, fish, pork &/or beef.
  • Continue with preparing the mojo with oil - after you have stirred in juice add onion & oregano.
  • Allow to sit for at least 30 minutes or longer at room temperature.
  • In a saucepan heat olive oil to medium hot & then remove from heat.
  • Whisk oil in garlic-juice mixture, until well blended.
  • Stores for at least a week in the refrigerator.

There are many, many recipes for Cuban-Style Mojo. Some use naranja agria (sour orange) or dried herbs. I like this particular recipe because it is so easy and tastes so fresh. This recipe is an adaptation of the mojo made by my grandmother, who is from a small town in the province of Pinar Del Rio, in western Cuba. I usually use this delicious sauce on top of boiled yuca and as a dipping sauce for fried yuca, fried malanga or fried green plaintains (tostones). But it is very versatile and can be used to dip other vegetables in, as a marinade or sauce for meat, fish or chicken, or even mixed into a side dish of rice..

3/4 cup good quality olive oil (preferably Spanish)
1 1/2 cups freshly squeezed lime juice
3 -4 tablespoons minced garlic
1 tablespoon ground cumin

  • Make sure you use freshly minced garlic for this recipe! Blend all ingredients with wire whisk. Place in a covered container (preferably glass) refrigerator for one hour so that the flavors may blend and intensify prior to use. Keeps for 2-3 days in refrigerator.

2 pounds yuca (about 2 yuca)
2 teaspoons coarse salt
1/2 cup extra-virgin olive oil
6 garlic cloves, well minced
1/2 small white onion, thinly sliced
1 lemon, juiced

Steps:

  • Peel and halve the yuca roots. Place yuca in a large pot with 1 teaspoon salt and cover with water. Bring to a boil and cook for 20 minutes or until just tender. Do not overcook or it will get slimy/mushy. When cooked, let sit in the warm water until ready to serve.
  • Meanwhile, make Mojo sauce. Heat a small skillet over medium heat and add the olive oil. Add garlic, onion, and remaining teaspoon salt and cook until onion is softened, about 2 minutes. Turn off heat and whisk in the juice of one lemon.
  • Drain yuca and transfer to serving dish. Drizzle Mojo over top and serve warm.
