CUBAN-STYLE PORK SHOULDER

9 garlic cloves, chopped
2 tablespoons salt
4 teaspoons dried oregano
1 tablespoon ground cumin
2 teaspoons black pepper
2 teaspoons ground dried chile
2 dried bay leaves, finely crumbled
1 tablespoon orange zest, grated
2 tablespoons vinegar
2 tablespoons fresh orange juice
2 tablespoons lime juice
5 lbs pork shoulder, bone and skin removed and cut into 2-inch cubes
3 onions
1/3 cup vegetable broth or 1/3 cup chicken broth

Steps:

  • In a large bowl, combine the garlic, salt, oregano, cumin, black pepper, chili pepper, crumbled bay leaves and orange zest.
  • Stir in the vinegar, orange and lime juices to make a coarse paste.
  • Add the pork pieces and toss until the pieces are evenly coated with the spice paste.
  • Set aside to marinate while you finish the other preparations.
  • Trim and cut the onions lengthwise into 1/4 -inch-thick slices.
  • Arrange the slices in an even layer on the bottom of the slow cooker insert.
  • Pour the broth over the onions.
  • Arrange the pork in an even layer over the onions, pouring over any reserved marinade.
  • Cover the insert and place it in the slow cooker.
  • Set the cooker to high heat and cook 4 to 4 1/2 hours until the pork is fork-tender. (8 hours on low).
  • Remove from heat and crack the lid to allow the mixture to cool slightly.
  • Gently stir the pork with the onions and serve.

PULLED PORK CUBANO

Tender, slow-cooked garlicky pork fills soft bread loaves along with ham, pickles, cheese and mustard. Everything is pressed and toasted for a buttery, crispy finish. A marmalade-mayo spread is a nontraditional addition to this sandwich but echoes the orange flavor of Cuban mojo.

2 tablespoons mayonnaise
1 1/2 tablespoons orange marmalade
1 teaspoon fresh oregano
One 12-inch loaf Cuban bread, or two 6-inch soft Italian rolls
6 slices deli ham (about 4 ounces)
1 kosher dill pickle, sliced thinly lengthwise
6 slices Swiss cheese (about 4 ounces)
1 cup Pulled Pork, recipe follows or store-bought
2 tablespoons Dijon mustard
2 tablespoons unsalted butter
One 3-pound pork butt, bone-in
1 1/2 cups chicken broth
2 tablespoons balsamic vinegar
2 cloves garlic
1 bay leaf
1/2 small onion

Steps:

  • 1.Stir the mayonnaise, marmalade and oregano together in a small bowl.
  • 2.Square off the ends of the bread and cut in half crosswise. Split each piece horizontally to hinge open. (If using Italian rolls, only split horizontally.)
  • 3.Spread the flavored mayonnaise on the bottom of the breads. Top each with 3 slices of the ham, folding if necessary to fit on the bread, and then a layer of pickles and 3 slices of cheese. Finish each sandwich with 1/2 cup Pulled Pork. Spread the mustard on the top buns and close the sandwich.
  • 4.Heat a medium cast-iron pan over medium heat. Melt the butter, add the sandwiches and press with a spatula to flatten. When the sandwiches are golden brown and crispy on the bottom, about 4 minutes, flip the sandwiches and press and cook until the cheese melts and the bread is golden brown, about 3 minutes more. Cut the sandwiches in half and serve.
  • Pulled Pork:
  • Put the pork, chicken broth, vinegar, garlic, bay leaf and onion in a small Dutch oven and bring to a boil over medium-high heat. Reduce the heat to a very low simmer, cover and cook, turning the pork every 45 minutes, until the meat is fall-off-the-bone tender, 3 to 4 hours. Allow to sit for 15 minutes until the meat is cool enough to handle. Shred the meat with a fork. Makes about 8 cups.

Steps:

  • Mix mayonnaise, mustard, and cayenne together in a bowl to make the sauce.
  • Trim off ends of bread. Cut loaf in half and evenly split bread to make tops and bottoms of 2 sandwiches. Spread each half on both sides generously with the mayo/mustard sauce.
  • Divide sandwich ingredients between the two bottom halves in this order: 2 slices Swiss cheese, 3 slices ham, hot cooked pork, pickle slices, and 2 more slices of Swiss cheese. Place tops on sandwiches.
  • Melt butter in a heavy skillet over medium heat. Place sandwiches in skillet and press down with a heavy weight (such as another skillet or foil-wrapped bricks). Toast sandwiches until bread is crisp and filling is heated through, 3 or 4 minutes per side.

½ teaspoon whole black peppercorns
4 cloves garlic, chopped
2 teaspoons salt

Roast for about 2 1/2 hours, basting with pan juices occasionally, or until an instant read thermometer inserted in the center reads 145 degrees F (63 degrees C). Add small amounts of water to the pan if it dries out. Transfer the pork to a carving board, cover loosely with foil, and let rest for 15 minutes. Carve, and serve.

1 (1 1/4 pound) pork tenderloin, cut crosswise into 8 slices
1 lime, zested and juiced
1 teaspoon olive oil
1 teaspoon ground cumin

  • Flatten the pork tenderloin slices slightly, and set aside. In a bowl, mix together the lime zest, olive oil, cumin, salt, crushed red pepper, and garlic. Reserve the lime juice. Rub the seasoning mixture onto both sides of the pork slices.

1 cup orange juice (such as Simply®)
½ cup lime juice
½ cup lemon juice
14 whole black peppercorns
1 large onion, finely chopped

Steps:

  • Cut pork loin into 3 equal pieces.

1/2 cup soy sauce
1/2 cup lime juice
1/2 cup orange juice
1/4 cup orange liqueur or 1/4 cup additional orange juice
3 tablespoons olive oil
2 tablespoons packed brown sugar
2 tablespoons fresh oregano, chopped or 2 teaspoons dried oregano
2 tablespoons minced garlic
1 tablespoon cumin seed
1 tablespoon lime zest
2 teaspoons fresh ground pepper
5 -6 lbs boneless pork shoulder butt
2 teaspoons cornstarch
2 tablespoons water
3/4 cup orange juice (fresh is best)
1/4 cup fresh lime juice
1 teaspoon sugar
1/2 cup chopped fresh cilantro
reserved marinade

Steps:

  • Place all marinade ingredients in a medium bowl and stir together until combined. Reserve and refrigerate 1/3 c marinade.
  • Place pork in a large resealable plastic bag. Pour remaining marinade over the pork, seal the bag and refrigerate 24 hours turning the bag occasionally.
  • When ready to grill, remove pork from bag and discard the bag and marinade. Light the two outside burners of your three burner grill or light one side and not the other on a two burner grill, placing a drip pan under grate where burner is NOT lit. Heat on high until hot and then turn down to low.
  • Place roast over drip pan on the unlit section of the grill. Cover and grill 2 hours or until internal temp reaches 170 degrees. You should maintain an internal grill temp of 300-350 degrees.
  • Remove roast to a cutting board and cover loosely with foil and let stand 15 minutes.
  • While roast is standing; in a small bowl, stir together cornstarch and water.
  • In a saucepan combine reserved marinade and orange juice. Over medium high heat, bring to a boil and then reduce heat to medium low. Simmer 5 minutes. Stir in lime juice ans sugar. Then stir in cornstarch mixture. Bring to a boil for 30 seconds or until slightly thickened.
  • Set aside. Slice pork about 1/4 inch thick. Rewarm sauce, add cilantro and serve on the side to put over sliced pork.

1 teaspoon ground black pepper

Steps:

  • Grind garlic, salt, black pepper, cumin, oregano, and coriander into a paste using a mortar and pestle.

This is a recipe I found in my "The Complete Meat Cookbook" by Bruce Aidells and Denis Kelly that I combined with a recipe posted by Closetcooking,com. Posting for ZWT event so untried by me, but sounds like something we would enjoy. Depending on the type of roast you use, servings will vary, but I put 6-8 based on a small roast. Times don't include overnight marinating time.

4 -5 lbs pork shoulder (or large Boston Butt Roast with bone in, skin on)
2 tablespoons garlic cloves, minced
1 large onion, sliced
1/4 cup dark rum
3 tablespoons olive oil
3/4 cup fresh orange juice
1/4 cup fresh lime juice
1 teaspoon oregano, dried (or 1 tbl fresh)
1 teaspoon cumin, ground
2 teaspoons salt
1 teaspoon black pepper, freshly ground
1 large onion, sliced
1 cup chicken stock (or water)

Steps:

  • Directions (Oven Version with Crackling):.
  • Puree the garlic, onion, orange juice, lime juice, rum, olive oil, oregano, cumin, salt and pepper in a food processor or blender, place 2/3 of the mixture into a large sealable bag with the pork and marinate in the fridge overnight.
  • Pull the pork out of the fridge 1 hour before roasting, take it out of the bag, set it with its skin side up, wipe the skin dry and let sit for 1 hour.
  • Score the skin in 1/2 inch intervals and rub salt generously into the skin.
  • Place the pork in a roasting pan, skin side up, roast in a preheated 450F oven for 20 minutes or until the skin has become crackling, ie it has become golden, hardened and crispy.
  • Reduce the heat to 325F and roast until the pork reaches 170F for slicing or 195F for shredding, about 2-3 hours or 4-6 hours respectively. If the skin starts to get too dark tent it loosely with foil without folding the edges over to prevent steaming.
  • Let the pork rest for 15 minutes, remove crackling and cut into small pieces, discard any extra fat and then slice or shred the pork. Remove the fat from the juices and serve with sliced pork or mix into shredded pork.
  • Meanwhile heat 2 tablespoons of the juices from the roasting pan in a pan over medium-high heat, add the onion and saute until tender and caramelized, about 7-10 minutes.
  • Serve the pork with the caramelized onions and remaining mojo.
  • Directions (Slow Cooker Version):.
  • Puree the garlic, onion, orange juice, lime juice, rum, olive oil, oregano, cumin, salt and pepper in a food processor or blender, place 2/3 of the mixture into a large sealable bag with the pork and marinate in the fridge overnight.
  • Place the pork in a slow cooker/crock-pot with the skin side up along with the marinade and cook on low for 8-10 hours.
  • Let the pork rest for 15 minutes, discard the fat layer and then shred the pork.
  • Meanwhile heat 2 tablespoons of the juices from the slow cooker/crock-pot in a pan over medium-high heat, add the onion and saute until tender and caramelized, about 7-10 minutes.
  • Serve the pork with the caramelized onions and remaining mojo.
  • Tip: Mix some mojo into the pork after pulling it; man is that mojo ever good! Make sure to make enough pork to make Cuban Sandwiches with leftovers!

  • Chop 8 cloves of garlic (or use a garlic press as I did). Squeeze the orange and lime juice in order to get 120 and 60 ml. Mix chopped garlic and juice in a medium-sized bowl. Add 2 tsp of cumin, 2 tsp of freshly grounded pepper, 1 tsp of oregano, 60 ml of olive oil and a pinch of salt.
  • Using a whisk (or a fork in a pinch) whip all the ingredients in order to get a homogeneous mass. Taste it, the marinade should seem a bit salty. Divide the mass into 2 parts, one put into the fridge.
  • Take a suitable bag, put the meat in there, and use one more for durability. Pour the rest of the sauce to the bag and tie it up. The second bag you can just wrap up. Then put it to the fridge for 2-10 hours.
  • 15-20 minutes before cooking, warm the oven up to 135 degrees. Meanwhile, prepare a small deep baking sheet and cover it with 2 layers of foil crisscrossed. Fold it twice in advance. Keep in mind that foil should rise above the baking sheet for 10-15 cm.
