CUBAN SHRIMP CREOLE (ENCHILADO DE CAMARONES)

2 tablespoons olive oil
half of a medium onion diced finely ((about 1/2 cup))
half of a green bell pepper diced finely ((about 1/2 cup))
4 large garlic cloves - minced
8 ounce can of tomato sauce
1/2 cup water
1/2 cup white wine
1/3 cup green Spanish olives ((plus a tablespoon of the brine))
1/2 teaspoon dried oregano
1/4 heaping teaspoon salt
1 pinch black pepper
1/8 teaspoon ground cumin
1 and 1/2 pounds medium sized shrimp ((peeled, deveined, and tail-off))

Steps:

  • Heat a large sauté pan over medium heat and add in the olive oil, onions, and green peppers. Sauté until the onions and peppers soften.
  • Add in the garlic and 2 tablespoons from the can of tomato sauce. Cook for 2 minutes.
  • Add in the remaining tomato sauce, water, white wine, olives, oregano, salt, pepper, and cumin. Bring to a simmer for 5 minutes, uncovered.
  • After the 5 minutes, add in the shrimp and simmer, covered for 10 minutes.
  • Serve immediately over white rice.

2 broken bay leaves
Crushed red pepper flakes, to taste
1 jalapeno, halved
2 large onions, quartered, plus 1 large onion, sliced, divided
2 carrots, coarsely chopped
4 sprigs fresh parsley
4 garlic cloves, mashed
2 1/2 to 3 pounds beef brisket, in 1 piece
Freshly ground black pepper
1 tablespoon minced garlic
1/2 teaspoon dried oregano
1/4 cup olive oil
1 bay leaf
8 ounces tomato sauce
1 1/2 cups reserved beef broth
1/2 cup dry white wine
1 tablespoon white wine vinegar
1 roasted green bell pepper, peeled and seeded, cut into thin strips
1 roasted green bell pepper, peeled and seeded, cut into thin strips
1 (4-ounce) jar pimientos, drained and sliced, for garnish, optional
Freshly squeezed lime juice, for garnish, optional
Freshly chopped cilantro leaves, for garnish, optional

Steps:

  • Add the olive oil to a large, heavy pot and heat over medium-high heat. Add 2 teaspoons salt, broken bay leaves, crushed red pepper flakes and halved jalapeno and stir. Add the quartered onions, chopped carrot, parsley, and mashed garlic cloves and stir again. Place the brisket in the pot, season with salt and pepper and add enough water to cover by 2-inches. Bring to a boil, reduce the heat so that the liquid just simmers, and cook the brisket until the meat is tender enough to shred, 2 to 3 hours. Remove the meat from the cooking liquid and set aside until cool enough to handle. Strain the cooking broth through a fine-mesh sieve and discard solids. Reserve 1 1/2 cups of the broth for the ropa vieja and use the remaining broth for another purpose.
  • When the meat has cooled, shred it into 3 to 4-inch strands. Set aside.
  • Combine the minced garlic, oregano, 1/2 teaspoon of salt, and 1/2 teaspoon pepper in a mortar and pestle and work into a smooth paste. Set aside.
  • In a large skillet, heat the olive oil and add the sliced onion. Saute until translucent, about 4 minutes. Add the garlic paste and bay leaf and cook, stirring, for 1 minute. Add the tomato sauce, reserved beef broth, wine, and vinegar and simmer for 5 minutes. Add the shredded beef and roasted green pepper strips, stir to combine, and cook, covered, for 30 to 40 minutes, or until the meat is fork tender and falling apart, coated with a thick sauce, and the flavors have come together. If the sauce gets too thick, add a bit more of the reserved beef broth. Taste and adjust the seasoning, if necessary. Remove the bay leaf and serve, garnished with the pimiento slices, lime juice and cilantro, if desired.

1 c. sliced onion
1 can tomato sauce
1/4 c. tomato paste
1 tbsp. each olive oil, cider vinegar and minced garlic
1 tsp. ground cumin
1 bay leaf
1/2 tsp. salt
1 1/2 lb. boneless chuck steak
c. coarsely chopped alcaparrado (we used Goya), or 1/3 cup pimiento-stuffed olives plus 2 Tbsp chopped capers
c. chopped cilantro

Steps:

  • Mix all ingredients except steak, alcaparrado and cilantro in a 3 1/2-qt or larger slow-cooker. Top with steak; turn steak over to coat with mixture.
  • Cover and cook on low 8 to 10 hours or until steak is very tender. Transfer steak to a cutting board. Remove and discard bay leaf. Tear steak in shreds using the two-forks method. Return shreds to cooker; stir in alcaparrado and chopped cilantro and serve.
  • Ropa vieja means "old clothes" in Spanish. This famous Cuban dish is so named because the shredded beef resembles clothes so worn that they fall apart. Alcaparrado means green olives, often stuffed with pimientos and capers mixed together.

1 (1 1/2-pound) flank steak
2 teaspoons kosher salt, or more to taste
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
2 tablespoons olive oil
1 large red onion, sliced
4 cloves garlic, sliced
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon dried oregano
¼ teaspoon cayenne pepper
⅛ teaspoon ground cloves
⅛ teaspoon ground allspice
½ cup white wine
1 ½ cups tomato sauce
1 ½ cups chicken broth
2 bay leaves
2 bell peppers, sliced
1 poblano pepper, sliced
½ teaspoon smoked paprika
2 tablespoons capers, drained
1 cup pimento-stuffed green olives, sliced
1 teaspoon white sugar, or to taste
⅓ cup chopped fresh cilantro

Steps:

  • Cut flank steak in half across the grain. Mix salt, black pepper, and cayenne. Season both sides generously with the salt mixture.
  • Heat olive oil in a pot over high heat. Add steaks and cook until outsides are well browned, 4 to 5 minutes per side. Remove steaks to a plate.
  • Reduce heat to medium. Add red onion, garlic, and more of the salt seasoning. Cook and stir until starting to soften, 3 to 5 minutes. Stir in cumin, paprika, oregano, cayenne pepper, cloves, and allspice. Cook and stir for 1 minute. Pour in white wine, scraping up the browned bits from the bottom of the pot. Stir in tomato sauce and chicken broth.
  • Return beef and accumulated juices to the pot. Season with salt and add bay leaves. Reduce heat to low, cover, and simmer until beef is almost fork-tender, not falling apart, about 2 hours.
  • Remove pot from heat and let stew cool to room temperature, at least 45 minutes. Refrigerate, 8 hours to overnight, for best results.
  • Remove beef to a plate and set stew over medium heat. Tear beef along the grain into 1/8- to 1/4-inch-wide shreds; place back in the stew. Add bell peppers, poblanos, smoked paprika, capers, olives, and sugar. Stir together and reduce heat to medium. Simmer until peppers are soft and meat is tender, 15 to 20 minutes. Turn off heat, remove bay leaves, and stir in cilantro.

2 pounds beef flank steak
1 cup beef broth
1 (8 ounce) can tomato sauce
1 small onion, sliced
1 green bell pepper, seeded and sliced into strips
2 cloves garlic, chopped
1 (6 ounce) can tomato paste
1 teaspoon ground cumin
1 teaspoon chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon white vinegar

Steps:

  • Heat vegetable oil in a large skillet over medium-high heat. Brown the flank steak on each side, about 4 minutes per side.
  • Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. Cover, and cook on High for 4 hours, or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice.

2 large onions, divided
2 large green peppers, halved, seeded and divided
4 cloves garlic, peeled, divided
1 qt. (4 cups) water
1 bay leaf
1/2 cup KRAFT Zesty Italian Dressing
1 can (8 oz.) tomato sauce
1/3 cup dry white wine
1 jar (4 oz.) pimentos, drained, chopped
1/4 tsp. ground black pepper

Steps:

  • Place steak and half each of the onions, green pepper halves and garlic cloves in Dutch oven. Add water and bay leaf. Bring to boil on medium-high heat; cover. Simmer on low heat 2 hours or until steak is tender.
  • Cut remaining onion and remaining green pepper halves into thin slices; place in large skillet. Finely chop remaining 2 garlic cloves. Add to skillet along with the dressing; mix well. Cook on medium-high heat 10 min. or until vegetables are tender, stirring frequently.
  • Drain steak mixture, reserving 1/2 cup cooking liquid for later use; place steak in shallow pan. Discard vegetables cooked with the steak. Use 2 forks to shred steak. Add to vegetable mixture in skillet; mix well. Cook 2 min. Stir in reserved cooking liquid and remaining ingredients; cook 5 min. or until heated through, stirring occasionally.
