GRILLED CUBE STEAK ROLLUPS
Steps:
- Put all ingredients into a blender and puree. Pour over meat in a glass dish or gallon zipper bag and place in the refrigerator 2-24 hours. Can be marinated up to three days for tough cuts of meat. This made enough marinade for 8 cube steaks, so I put four in the freezer in marinade.
- Marinate steaks in the refrigerator for a minimum of 2 hours, up to 24. Mine marinated for 24.
- Preheat your grill on high with the lid closed. Remove the steaks from the refrigerator and take them out of the marinade. Place them on paper towels to drain.
- Warm the softened cream cheese in the microwave for a few seconds. You want the cream cheese to be very soft, similar to a runny cake frosting. Combine the cream cheese with the minced parsley. Spread thin layer of cream cheese over one side of steak.
- Beginning with short end roll up the steak.
- Spirally wrap a piece of bacon around steak and secure with one or two toothpicks. I didn't have enough toothpicks so I used two long skewers. I definitely recommend the toothpicks so you can turn the steaks individually.
- Turn the burners on your grill down to medium and grill roll ups on one side for several minutes to sear the meat. Turn and sear the other side. Turn the heat down to low and continue to grill with the lid closed and turn every five minutes until done. Mine took about 25 minutes total.
BEEF ROLL-UPS
Don't let its name fool you--these roll-ups are worthy of a special occasion and call for using one of the leaner cuts of beef, top-round steak.

- Preheat oven to 350 degrees. Place slices of steak between two pieces of plastic wrap, and pound to an even thickness; set aside.
- In a large skillet, heat 1 tablespoon butter and 1 tablespoon oil over medium-high heat. Add chopped onions, and cook until translucent. Add mushrooms; season with salt and pepper. Cook until the mushrooms have released all of their liquid and it has evaporated. Stir in parsley. Transfer to a small bowl; set aside.
- Place one piece of steak on work surface. Spoon 1/6 of the filling onto the center of the steak. Sprinkle with 1/6 of the breadcrumbs. Roll up steak to enclose filling. Tie each end with a piece of kitchen twine. Repeat with remaining steak, filling, and breadcrumbs.
- In the same large skillet, heat 2 tablespoons olive oil and 2 tablespoons butter. Add roll-ups, and cook until browned on all sides, about 4 minutes. Transfer roll-ups to a baking dish just large enough to hold them in a single layer.
- In a small saucepan, heat remaining tablespoon butter and remaining 2 tablespoons olive oil over medium-high heat. Add garlic and sliced onions. Cook until onions are translucent, about 2 minutes. Stir in tomato sauce and wine. Cook until heated through. Pour over roll-ups and bake, covered, until tender, about 1 1/4 hours. Remove twine, and serve with grated beets and buckwheat groats.

- Flatten steak to 1/3-in. thickness. Cut into six pieces. In a small bowl, combine the next eight ingredients. Place 1/3 cup on each piece of steak; roll up and fasten with a toothpick. CUBE STEAK ROLL-UPS
One of my favorite ways to fix cube steaks! (Prep and cook times are estimates, but I think you could get these on the table within 30 minutes!)

- Prepare stuffing according to package directions.
- Onto each steak, place a generous helping of stuffing in center.
- Roll up steak (s) and secure with toothpicks or skewers.
- Dredge each roll-up in seasoned flour.
- Brown meat in oil.
- Remove meat and drain off any excess fat.
- Combine mushroom soup and onion soup mix in small bowl.
- Return meat rolls to pan and pour soup combination over meat.
- Simmer on low heat until meat rolls are heated through and meat is done to your liking.
- Remove toothpicks before serving.
- Serve extra sauce over meat roll-ups (Sauce may be thinned by adding a bit of milk).
- Note: You could probably stuff the meat with a rice-based stuffing if you'd like!
CUBE STEAK ROLL-UPS
This is an easy, quick way to prepare cube steaks. Cube steak is an inexpensive cut of beef, which I've used in the past for salisbury steak. I wanted to cook these steaks but not in a heavy gravy, so this is how lightened them up. You could also substitute flank steak if you can't find cube steaks. DH raved over these and thought I had spent much more time preparing than I actually did. Note: If you cannot find Dale's Steak Seasoning, a good substitute is whisking together 1 tbs. soy sauce and 1 tbs. Worcestershire sauce.

- Preheat broiler to medium heat or move oven rack to second position under the broiler (depending on what type of oven you have).
- Pound cube steaks to 1/2-inch thickness (if they aren't already thin enough). Drizzle Dale's Steak Seasoning evenly over both sides of each steak (a little goes a long way) and season with black pepper.
- Layer baby spinach leaves, basil leaves and sliced red bell pepper atop each steak. For easier rolling, make sure pepper slices are arranged parallel to the direction you plan to roll the steaks. Sprinkle with goat cheese atop these layers to 1/2-inch from outside edge of each steak.
- Roll each steak up (like a jelly roll), being careful not to spill out the stuffing, and secure open ends with toothpicks.
- With toothpick-secured sides up, broil steaks for five minutes. Turn over and broil for another five minutes or until desired doneness.
- Carefully remove toothpicks. This may be served sliced cross-wise and arranged on each plate or whole for each person to slice his/her own.
CRISPY COUNTRY FRIED STEAK ROLL RECIPE BY TASTY

- In a large pan, heat the olive oil over medium-high heat. Add the onion, garlic, salt, and pepper. Stir until softened, 3-4 minutes.
- Add the spinach and stir until wilted down. Remove the pan from the heat.
- Season the steak on all sides with salt, pepper, garlic powder, and paprika. Lay a piece of parchment paper over the cubed steak. Using a meat mallet or rolling pin, pound the steak until ¼-inch (6-mm) in thickness.
- Remove the parchment paper. Lay the slices on Monterey Jack evenly over the cube steak. Add the sauteed spinach mixture over the cheese.
- Gently roll up the steak, making sure to keep it as tightly wrapped as possible. Place the steak log on a sheet of plastic wrap. Wrap the steak up, tightly securing each side.
- Refrigerate the steak for 1 hour.
- Place the flour, eggs, and panko in three separate shallow dishes.
- Gently unwrap the steak roll from the plastic wrap. Dip it into the flour, dusting off any excess. Dip the steak roll into the eggs, into the panko, and then back into the eggs, and back into the panko.
- Preheat oven to 325˚F (160˚C).
- Fill a pot with tall sides with one inch (2 cm) of oil and heat to 350˚F (180˚C).
- Gently place the steak roll into the oil, and fry until golden brown, about 2-3 minutes.
- Gently turn the steak over with tongs, and fry until the other side is golden brown, about 2 minutes.
- Transfer the steak roll to a baking sheet.
- Bake for 25-30 minutes.
- To a small pot on medium heat melt the butter, add garlic and the flour, mix the ingredients together until a loose paste forms and cook this mixture on low until it starts to darken just a bit, about 5 minutes.
- Add in the milk, salt, nutmeg, pepper, and whisk until smooth. Let the gravy come to a simmer, then take off the heat.
- Once the steak Rolls are finished. rest at room temperature for at least 10 minutes. Slice into four to six slices.
- Serve with mashed potatoes, green beans, carrots, corn and peppercorn gravy.
