Steps:
- Peel the cucumber and halve lengthwise. Scrape out the the seeds and coarsely chop. Peel the pineapple, remove the stalk, and coarsely chop. Peel and coarsely chop the shallot. Rinse and dry the cilantro. Remove the leaves and coarsely chop.
- Puree the cucumber, pineapple, shallot, mineral water, lime juice, oil, salt, and 1 pinch of red pepper in the blender. Mix in the cilantro, and chill for 2 hours in the refrigerator. Remove from the refrigerator, and season to taste before serving.
PINEAPPLE-CUCUMBER SALSA
Steps:
- Combine the pineapple, cucumber, red onion, jalapeno, cilantro and lime juice in a large bowl. Season with salt and pepper to taste.
- Serve the salsa with tortilla chips.
PINEAPPLE-CUCUMBER SPRITZ
The pineapple-cucumber base can be made up to 6 hours ahead. Add seltzer just before serving.

- Finely chop a third of one of the cucumbers and set aside for when you're ready to serve later. Roughly chop the remaining cucumbers and tip into a blender or food processor along with the yogurt and lime juice. Add the tarragon, most of the mint leaves and most of the chives. Blitz until the mixture is smooth.
- Pour the soup into bowls or small cups, scatter over the finely chopped cucumber, remaining mint leaves and the rest of the chives. Drizzle with a little rapeseed oil just before serving.
