TURKISH CACIK (YOGURT AND CUCUMBER DIP)



Turkish Cacik (Yogurt and Cucumber Dip) image

This is a great recipe for a traditional yogurt and cucumber dip or sauce, flavored with garlic and fresh mint or dill.

2 cucumbers (peeled and grated)
16 oz. yogurt ( plain , cold)
2 cloves garlic (peeled and minced)
1 tablespoon mint (fresh, chopped, or dill)
Salt to taste
Garnish: drizzle of olive oil

Steps:

  • Gather the ingredients.
  • In a mixing bowl , combine the grated cucumbers and minced garlic. Add salt to taste.
  • Mix in the yogurt with a wooden spoon, and transfer to a serving bowl.
  • Garnish with the mint or dill, and drizzle olive oil on top. Serve immediately or cover with plastic wrap and refrigerate.

This is a far better use for a cucumber than a lettuce salad. I have visited Turkey, the country of origin for this recipie, and find that this recipie is in keeping with the great tastes that Turkey has to offer in food preparation.

1 -2 crushed garlic clove
1 tablespoon wine vinegar
2 teaspoons salt
1 tablespoon snipped fresh dill
1 1/2 cups plain yogurt
3 medium pared cucumbers, sliced thin
1 tablespoon olive oil
1 tablespoon snipped fresh mint leaves

Steps:

  • In a bowl combine garlic, vinegar, salt, dill,and yoghurt and mix well.
  • Blend cucumbers with yoghurt mixture and refrigerate for an hour or so.
  • Serve sprinkled with olive oil and mint.

2 English cucumbers, peeled, seeded, and shredded
Kosher salt
3 cups plain nonfat yogurt
2 tablespoons white wine vinegar
2 cloves garlic, peeled and finely chopped
2 tablespoons dried mint
12 to 14 leaves fresh mint, thinly sliced
Freshly ground black pepper

Steps:

  • 1. Place the shredded cucumbers in a medium bowl and toss with a few pinches of salt. Set aside for 15 minutes to draw some of the liquid out of the cucumbers.
  • 2. Drain the excess liquid from the bowl of cucumbers. Add in the yogurt, vinegar, garlic, dried mint, and fresh mint. Mix well to combine. Adjust the seasoning as needed with salt and pepper. Refrigerate until ready to serve.
