This is a far better use for a cucumber than a lettuce salad. I have visited Turkey, the country of origin for this recipie, and find that this recipie is in keeping with the great tastes that Turkey has to offer in food preparation.

Steps:
- In a bowl combine garlic, vinegar, salt, dill,and yoghurt and mix well.
- Blend cucumbers with yoghurt mixture and refrigerate for an hour or so.
- Serve sprinkled with olive oil and mint.

- Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry with paper towels.
- Whisk together the sugar and vinegar in a mixing bowl until the sugar has dissolved. Add the cucumbers, jalapeno peppers, and cilantro; toss to combine. Sprinkle chopped peanuts on top before serving.

- First, whisk the yogurt and olive oil together to make a smooth mixture. Gradually whisk in the water until you get the consistency you want. Some prefer their 'cacık' watery while some like it thick. It's completely up to you.
- Next add the cucumbers, garlic, and spices and mix thoroughly until smooth. Adjust the spices to your taste.
- It is best to refrigerate your 'cacık' for a few hours before serving. Serve your ice-cold 'cacık' in small, decorative bowls. Drizzle a little bit of olive oil in the center of each one. Garnish each with a small sprig of fresh mint or dill weed.

- 1. Place the shredded cucumbers in a medium bowl and toss with a few pinches of salt. Set aside for 15 minutes to draw some of the liquid out of the cucumbers.

CACIK (TURKISH CUCUMBER SALAD)
Steps:
- Peel and dice the cucumber finely and add to the yogurt in a mixing bowl. Stir in the dried mint, salt, and most of the fresh mint. Mince or microplane in the garlic, stir again, and then tip the whole thing into a serving dish. Sprinkle over the last scrapings of chopped mint and drizzle with the oil.

- Cut the cucumber to very tiny cubes. Do not grate or use a processor if possible; if you do the cucumbers become messy and watery.
- Add the cucumber to the yogurt. Mix. Add cold drinking water until you have a thick texture. Do not forget this is supposed to be eaten with a spoon, like a soup. Some like it really watery, some with some thickness. Make it according to your taste.

- Using a mandolin, or sharp knife, slice cucumber into thin uniform disks and place in a strainer over a bowl. Toss with the salt, and let stand 15-30 minutes (or place in the fridge overnight for a couple of hours) to help them release a little liquid. Drain or pat dry. (If in a hurry feel free to skip this step).
- Place drained cucumbers in a large bowl. Add chopped dill, chopped mint and thinly sliced onions to the bowl. (If you are sensitive to onions, you could soak them in cold salted water for 15 minutes to help remove bitterness.)
- In a small bowl, combine the rest of the ingredients -yogurt, sour cream, lemon juice, minced garlic, pepper, honey and olive oil and stir until smooth. Spoon over cucumbers and gently stir to combine. Taste for salt, and lemon, adding more to taste.
