PITA CRISPS WITH CUCUMBER DIP



Pita Crisps with Cucumber Dip image

Tempt kids with this twist on chips and dip: The pita wedges are baked, and yogurt and cucumbers make up the dip.

Yield Makes about 1 cup dip and 64 crisps

Number Of Ingredients 11

1 English cucumber, peeled, halved lengthwise, seeded, and cut into 1/4-inch dice
1/2 cup plain yogurt
1 tablespoon chopped fresh dill
1 teaspoon chopped fresh mint
Pinch of salt
8 pita rounds, (each 5 inches in diameter)
2 tablespoons olive oil
1 garlic clove, minced
Pinch of cayenne pepper
Pinch of salt
Pinch of freshly ground pepper

Steps:

  • Preheat oven to 375 degrees. Wrap cucumber pieces in a clean kitchen towel; gently squeeze to remove excess moisture. Set aside.
  • Stir together yogurt, dill, mint, and salt. Fold in cucumber. Refrigerate in an airtight container until ready to serve, up to 2 days.
  • Split each pita horizontally. Cut each round into 4 wedges. Toss wedges with oil, garlic, cayenne, salt, and pepper in a large bowl.
  • Arrange pita wedges in a single layer on 2 rimmed baking sheets lined with parchment paper. Bake until crisp and golden, 8 to 10 minutes. Let cool completely. Crisps can be stored in an airtight container up to 3 days. Serve with dip.

2 ounces whipped cream cheese, room temperature
1/2 tablespoon mayonnaise (I use Miracle Whip)
1 pinch garlic salt
1/4 teaspoon fresh dill, finely chopped
5 slices white bread, cut very thin (slice regular pieces in half if you have to)
5 slices whole wheat bread, cut very thin (slice regular pieces in half if you have to)

Steps:

  • Cut cucumber with a mandolin to make very fine slices. Lay slices on paper towels to drain.
  • In a bowl, stir cream cheese, mayonnaise, garlic salt and dill together until smooth.
  • Spread each slice of bread with a layer of the cream cheese mixture. Then lay cucumber slices in overlapping rows on one half of the bread slices. Top with remaining wheat bread slices.
  • Cut crusts from each sandwich and then cut into quarters.

  • Set the cream cheese out to soften.
  • Chop the cucumbers into large chunks, set aside.
  • Once the cream cheese is soft, add to a medium size mixing bowl and use a hand mixer to blend until creamy.
  • Add the sour cream and blend again until silky smooth.
  • Add the ranch dip seasoning packet and mix well.

1 English cucumber (grated)
8 oz package cream cheese (room temperature)
2 green onions (sliced paper-thin)
1 Tbsp lemon juice (more if desired)
salt and pepper (to taste)

Steps:

  • Wash the cucumber in warm water and pat dry with a paper towel. Cut the cucumber in half lengthwise and remove any seeds. Grate the cucumber, including the peel, then place it into a strainer and squeeze out as much juice as possible to prevent the dip from becoming too thin.
  • Add the cream cheese to a bowl and mix until it's smooth-there shouldn't be any lumps.
  • Add the grated cucumber, green onions and lemon juice, stir until well combined then season with salt and pepper to taste. Refrigerate for at least 1 hour.
  • Transfer the dip into a serving bowl and serve with your favorite crackers or veggies. Enjoy!

  • Trim away roots from base of green onion, place in food processor. Add cucumber to food processor bowl.
  • Cover and process until coarsely chopped (DON'T OVERPROCESS!)
  • Add cream cheese, Worcestershire sauce and salt.
  • Cover and process until smooth. Transfer to a bowl.
  • Cover and refrigerate overnight for flavors to blend. Please don't skip this step and try to eat it right away - trust me, it makes a big difference in flavor when you let it hang out overnight.

4 medium cucumbers, peeled
Coarse salt
2 cups plain whole-milk yogurt (16 ounces), preferably Greek
6 ounces feta cheese, preferably French, crumbled (1 cup)
1/2 cup finely chopped fresh mint, plus 1 sprig for garnish
1/2 cup heavy cream
5 tablespoons fresh lemon juice (about 2 lemons)
Freshly ground pepper
Napa cabbage leaves, for lining bowl (optional)
Crudites, for serving

Steps:

  • Halve cucumbers, and scoop out seeds using a melon baller or small spoon. Grate cucumbers on the large holes of a box grater. Transfer the grated cucumbers to a colander set over a bowl or in the sink. Stir in 2 teaspoons salt, and let the cucumber mixture stand 15 minutes to drain.
  • Rinse cucumbers; shake out excess liquid. Wrap in a clean kitchen towel; squeeze out as much liquid as possible.
  • Stir together cucumbers, yogurt, feta, chopped mint, cream, and lemon juice. Season with salt and pepper. If desired, transfer dip to a bowl lined with cabbage leaves. Garnish dip with mint sprig; serve with crudites.
