1 medium cucumber
1/2 teaspoon salt
3 ounces cream cheese, softened
1/4 cup chopped green pepper
2 tablespoons chopped onion
1/2 teaspoon Worcestershire sauce
1/8 teaspoon pepper
Dash paprika
French salad dressing, optional

Steps:

  • Cut cucumber in half lengthwise. Scoop out seeds and pulp, leaving a 1/4-in. shell. Place seeds and pulp in a colander. Sprinkle with salt; drain for 30 minutes. , Meanwhile, combine the cream cheese, green pepper, onion, Worcestershire sauce and pepper; mix well. Stir in 2-3 tablespoons drained pulp. Spoon into cucumber shells; sprinkle with paprika. Refrigerate until serving. Serve with French dressing if desired.

2 unwaxed cucumbers
1 (8-ounce) container cream cheese, softened
1 (8-ounce) container sour cream
1 (3-ounce) package smoked salmon, chopped into small pieces
1 shallot, diced
1/2 lemon, juiced, seeds removed
1 bunch fresh dill, chopped
Pinch salt and fresh ground pepper

Steps:

  • Using a peeler, create stripes on the outside of the cucumber by peeling along length of cucumber, leaving every other section intact. Cut off ends of cucumber and slice into 1-inch rounds. Using a melon baller, scoop out the seeds and inner flesh from the top 2/3's of each cucumber slice. Do not scoop all of the way through. Set aside. In a bowl, combine equal parts cream cheese and sour cream. Mix in salmon, shallots, lemon juice, salt and pepper, combining thoroughly. Transfer the mixture to a pastry bag with a star 8 tip. Pipe the filling generously into each cucumber section. Garnish with sprig of dill. As an alternative, use red pepper cream cheese.

3/4 pound Norwegian smoked salmon
8 ounces soft cream cheese
Salt and pepper
3 tablespoons creme fraiche or sour cream
2 cucumbers
2 tablespoons chopped fresh or drained canned pineapple

Steps:

  • In food processor, chop up salmon into a paste. Add cream cheese, salt and pepper, and creme fraiche to make a mixture loose enough to pipe out into cucumber boats. Peel cucumbers and halve lengthwise. Slice cucumbers into 2-inch lengths. Use melon baller to scoop out the cucumber to make into small canoe-shapes. Spoon salmon mixture into pastry bag fitted with a with star tip, and pipe mixture into each cucumber "canoe." Top with a small amount of pineapple.

  • Put the cream cheese, beef broth, curry powder and garlic in a blender and puree until completely smooth. Adjust the seasoning with salt and pepper to taste. Using a rubber scraper, divide the mixture among 6 small ramekins or other individual cups and refrigerate them for at least 2 hours or overnight.
  • Remove the cups from the refrigerator 1 hour before serving. Top each serving of mousse with a spoonful of caviar and serve with crackers.

Inspired by Fujian cuisine, these fried cucumbers stuffed with beautifully seasoned pork mince are a tasty way to one of your five-a-day

2(about 750g/1lb 10oz), cut into 2.5cm/1in slices cucumber
2 tbsp cornflour
3 tbsp groundnut oil
225g pork mince
1 egg white
1 ½ tbsp finely chopped spring onions
1 tbsp finely chopped fresh ginger
2 tbsp Shaohsing rice wine or dry Sherry
2 tbsp light soy sauce
2 tsp white caster sugar
1 tsp sesame oil
300ml chicken stock
2 tbsp light soy sauce
2 tbsp Shaohsing rice wine or dry Sherry
1 tbsp oyster sauce
2 tsp sugar
1 tsp cornflour mixed with 2 tsp water
2 tsp sesame oil
½ small pack coriander , finely chopped

Steps:

  • Using a small sharp knife, remove the seeds and fleshy pulp from the centre of each cucumber slice. Further hollow the cucumber with a teaspoon so that you have tubes with a roughly 5mm shell. Lightly dust the hollow interiors of the slices with the cornflour. Mix all the stuffing ingredients together in a bowl with 1 tsp salt and pepper, and stuff each cucumber ring with the mixture.
  • Heat a wok or large frying pan, then add the groundnut oil. When it is moderately hot, add some of the stuffed cucumber rings. Cook slowly until they are slightly browned, then turn them over and brown the other side. You may have to do this in several batches, adding more oil if necessary.
  • When the cucumber rings are browned, remove them with a slotted spoon and place on a plate. When you have fried all the rings, wipe the wok or pan clean.
  • Reheat the wok or pan, add the sauce ingredients and bring to a simmer. Add the stuffed cucumber rings, cover the pan with a lid and simmer slowly for 7 mins or until the cucumbers are completely cooked. Lift them out of the sauce with a slotted spoon and transfer to a warm serving platter.
  • Return the pan to the heat and reduce the sauce by a third over a high heat. Add the sesame oil and coriander, then pour the sauce over the stuffed cucumbers to serve.

  • Using a zester, vegetable peeler or fork, score the length of each cucumber to create a striped effect.
  • Remove the ends and cut each cucumber into 3/4 inch rounds.

1 tablespoon whipping cream
2 ounces cream cheese, softened
1/4 teaspoon fresh lime juice
1 shallot, chopped finely
3/4 teaspoon fresh dill, chopped
kosher salt
black pepper
2 ounces smoked salmon, shredded and minced
English cucumber
kosher salt, for the cucumber rounds
diced red peppers or tomatoes

Steps:

  • Score the cucumber skins lengthwise with the tines of a fork; slice them cross-wise 1/2-inch thick, scoop out a small amount making a hole in the centers with a melon baller; sprinkle the cucumber rounds with a small amount of salt; set aside.
  • In a mini processor or mixer combine the whipping cream and cream cheese, add the lime juice, shallot, dill, salt and pepper to taste. Fold in the smoked salmon.
  • Just before serving place a mound of mousse in each cucumber round, garnish with dill weed and serve.

1 envelope unflavored jello
1/4 cup water cold
3/4 cup water boiling
1 (3-ounce) package lime jello
1 cucumber medium peeled, seeded and chopped (about 1 1/2 cups)
1 cup mayonnaise real
1 cup cottage cheese
2 tablespoons onions chopped
1 garlic small, minced (optional)
1/8 teaspoon hot pepper sauce
1/8 teaspoon salt
Green food color (optional)
1 cup lettuce leaves

Steps:

  • 1. In a small saucepan mix gelatin and cold water let stand for 1 minute. Stir over medium heat until gelatin is dissolved.2. In a small bowl pour boiling water over lime gelatin stir until gelatin is dissolved. Add unflavored gelatin and stir.3. In a blender container place cucumber, mayonnaise, cottage cheese, onion, optional garlic, hot pepper sauce and salt cover and blend until smooth. Add gelatins and blend. If desired, add food color and blend. Pour into a 5-cup mold. Cover and chill overnight.4. Unmold onto a chilled plate. Garnish with lettuce leaves.

1/4 cup white wine or apple juice
2 1/2 cups finely chopped seeded peeled cucumbers (2 1/2 medium)
1/2 cup fat-free buttermilk
1/2 cup Progresso™ chicken broth (from 32-oz carton)
1/4 cup lime juice
1/3 cup chopped green onions (5 medium)
1/4 cup cholesterol-free reduced-calorie mayonnaise or salad dressing
1 tablespoon chopped fresh dill weed or 1 teaspoon dried dill weed
1/4 teaspoon white pepper

Steps:

  • Spray 4-cup mold or bowl with cooking spray. Sprinkle gelatin on wine in 1-quart saucepan to soften. Heat over medium heat about 2 minutes, stirring constantly, until gelatin is dissolved.
  • Place 2 cups of the cucumbers and the remaining ingredients in blender or food processor. Cover and blend on high speed until smooth. Add gelatin mixture. Cover and blend 5 seconds.
  • Pour into mold. Stir in remaining cucumber. Cover and refrigerate about 4 hours or until firm; unmold.
