Really great appetizer for the summer or anytime. Every time I have served these everyone wants the recipe...and they're so easy! Just be sure to refrigerate the cream cheese mixture overnight!

1 (8 ounce) package cream cheese, softened
½ cup mayonnaise
1 (.7 ounce) package dry Italian salad dressing mix
2 loaves French bread, cut into 1 inch slices
2 medium cucumbers, sliced
1 pinch dried dill weed

Steps:

  • In a medium bowl, mix together the cream cheese, mayonnaise and Italian dressing mix. Refrigerate for at least 6 hours, or preferably overnight.
  • Spread the cream cheese blend onto slices of French bread. Top with a cucumber slice, and sprinkle with dill. You can make as many or few as you like. the cream cheese mixture keeps for about a week in the refrigerator so you can make them over and over again!

2 slices bread (whole grain is the best for you, but white bread tastes better for this recipe)
1/2 a cucumber
1 tablespoon vegan cream cheese
2 teaspoons dill weed
1 pinch paprika

Steps:

  • Wash and peel cucumber. Cut peeled cumber into long segments (~1/4 inch thick).
  • Spread cream cheese on both pieces of bread (cutting off the crusts is a nice touch and makes the sandwich look more like a tea sandwich).
  • Sprinkle on the dill weed and paprika (also add salt and pepper to taste).
  • Place the cucumber slices in one layer covering the bread.
  • Close the sandwich and cut in half.
  • Enjoy!

2 slices white bread
3 englich cucumbers, peeled and sliced
2 teaspoons butter
2 teaspoons mayonnaise
salt and pepper
1/8 teaspoon horseradish (optional)

Steps:

  • Spread the butter and mayonnaise on both slices of bread.
  • Add thinly sliced cucumber to one slice of bread.
  • Add seasoning to cucumbers.
  • Top with the other slice of bread.
  • Cut off crusts and slice into squares or triangles. Sandwiches should be small for finger foods.
  • OPTIONAL: Add horseradish to the mayonnaise to give the sandwich a bit of a bite.
