CUMIN SPICED PORK WITH AVOCADO TOMATILLO SALSA

Ingredients: ground cumin,chili powder,paprika,lemon pepper,salt,pork tenderloin,tomatillos,avocado,cucumber,fresh cilantro,lemon rind,fresh lemon juice,jalapeno pepper

Steps:

  1. preheat oven to 425 degrees f
  2. to prepare pork , combine first 5 ingredients and rub over pork
  3. place pork on a jelly roll pan
  4. bake at 425 degrees for 25 minutes or until a thermometer registers 160 degrees f
  5. let the pork stand 5 minutes before slicing
  6. to prepare salsa , discard husks and stems from tomatillos
  7. place in a medium bowl
  8. add avocado with remaining ingredients
  9. toss well
