Spare a bit of time to bake these delicious teacakes which you can serve warm with butter for a weekend breakfast, coffee morning or afternoon tea

Number Of Ingredients 9

100ml milk
30g butter
350g strong white bread flour
7g sachet fast action dried yeast
2 tbsp sugar
½ tsp mixed spice
75g mixed dried fruit (peel, sultanas, raisins and currants)
oil for greasing
1 egg, beaten

Steps:

  • Warm the milk with the butter in a pan until the butter has melted, then add 100ml water to cool the mixture to room temp. Tip the flour, yeast, sugar, spice and 1 tsp salt into a bowl, making sure the yeast is on the other side of the bowl to the salt. Make a well in the flour mixture and pour the milk and butter in, mixing until it forms big flakes, then bring together with your hands. Tip on a surface and knead until smooth (about 5 mins). Put the dough into a large, lightly oiled bowl, cover with a damp tea towel and leave until doubled in size, so about 1-1 ½ hours.
  • Line a tray with baking paper. Tip the mixed dried fruits into the dough and knead them in, trying to disperse them evenly throughout the dough. Cut your dough into 6 even-sized balls, take each ball and, using the cup of your hand, and pressing down a little with your palm, roll the ball in a circular motion on the surface to create tension across the top of the bun and a neat round shape. Place onto a tray about 5cm away from each other and press down with your palm to flatten the dough down a little, creating the teacake shape. Cover loosely with an oiled sheet of cling film, for a further 45 mins, or until they have doubled in size.
  • Meanwhile, heat the oven to 200C/180C fan/gas mark 6. Brush the top of each bun liberally with the egg wash, then bake for 20 mins on the top shelf of the oven, until the buns are golden and well risen. Allow to cool on a wire rack, then slice in half, toast and slather with butter if you like.

Number Of Ingredients 9

2 2/3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup heavy cream, or half and half
1 heaping tablespoon molasses
12 tablespoons room temperature (1 1/2 sticks) unsalted butter, plus more for pan
3/4 cup Demerara sugar
3 large eggs
2 cups currants

Steps:

  • Preheat the oven to 325 degrees. In a medium bowl, sift together the flour, baking powder, and salt. Set aside. Butter a 9-by-5-inch loaf pan; set aside.
  • In a small saucepan, heat the cream over medium heat. Stir in molasses. In a medium bowl, cream the butter until light and fluffy. Gradually add the sugar. Beat in the eggs, one at a time, beating to combine after each addition. Stir in the cream mixture, then the currants. Add the dry ingredients and beat to combine.
  • Pour into prepared pan, and bake until a knife inserted in the center comes out clean, about 1 hour 15 minutes.

Came across these while looking for a tea biscuit recipe in all of my cookbooks. Not exactly what I was looking for, but very good and easy.

1 cup butter, softened
1 teaspoon grated lemon, rind of
1 tablespoon lemon juice
1 cup sugar
3 eggs, well beaten
1 3/4 cups flour
1/4 teaspoon salt
3/4 cup dried currant (or raisins)

Steps:

  • Cream butter, lemon peel and lemon juice until light.
  • Add sugar and cream until light and fluffy.
  • Add eggs and blend well.
  • In another bowl, mix flour and salt; gradually add to creamed mixture, beating well until blended.
  • Stir in currants.
  • Drop by teaspoonsful onto greased and floured baking sheet.
  • Bake at 350* for 10 minutes or until set.
  • Remove to a wire rack to cool.

2 1/2 cups all purpose flour
2/3 cup sugar
3/4 teaspoon ground mace
1/2 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into pieces
6 tablespoons chilled vegetable shortening
1/3 cup dried currants
5 tablespoons (about) milk
1 egg

Steps:

  • Mix first 5 ingredients in large bowl. Add butter and shortening and rub with fingertips until mixture resembles fine meal. Add currants. Whisk 4 tablespoons milk and egg in small bowl. Add to dry ingredients; stir until moist clumps form, adding more milk if mixture is dry. Roll out dough on lightly floured surface to 1/2-inch-thick round. Using cookie cutter, cut out 2 1/2- to 3-inch rounds. Gather dough scraps; roll out to 1/2-inch-thick round. Cut out additional rounds.
  • Heat heavy large nonstick griddle or skillet over medium-high heat. Arrange 6 to 8 cakes on griddle. Reduce heat to low and cook until cakes are set and brown, turning occasionally, about 12 minutes. Transfer to rack. Repeat with remaining cakes. Serve warm or at room temperature.

This rich and flavorful bread is a favorite old-time recipe. Because it keeps well and goes great with coffee or tea, I like to have an extra loaf on hand for gifts or for friends who come to call over the holidays.

1/4 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1-1/2 cups whole milk
1-1/2 teaspoons grated lemon zest
2 cups all-purpose flour
1/2 teaspoon baking powder
1 cup dried currants

Steps:

  • In a large bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in the milk and lemon zest. Combine flour and baking powder; gradually add to the creamed mixture and mix well. Stir in currants., Transfer to a greased 9x5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

450g / 1lb Odlums Self Raising Flour
1 level teaspoon Baking Powder
Pinch of Salt
2 dessertspoons Sugar
50g/2oz Margarine or Butter
125g/4oz Sultanas or Raisins
1 Egg (beaten)
300ml / 1/4pt Milk

Steps:

  • Preheat oven to 200°C/400°F/Gas 6. Lightly dust a flat baking tray with flour.
  • Sieve the flour, baking powder and salt into a mixing bowl. Add the sugar and mix well.
  • Rub the margarine or butter into the dry ingredients until mixture resembles breadcrumbs. Add the sultanas or raisins and mix through.
  • Finally, add the egg and sufficient milk to make a soft dough, not too wet or sticky! Turn onto a lightly floured board and gently knead, just enough to bring the dough together.
  • Transfer to the prepared baking tray and shape into a round 1 1/2” deep. Cut a cross on top and bake for about 40 minutes until golden brown.
