Curried Chicken And Bow Tie Pasta Salad Recipe

Ingredients:

  1. chicken
  2. peppercorns
  3. bay leaf
  4. parsley
  5. fresh thyme
  6. onion
  7. carrot
  8. celery
  9. green pepper
  10. red pepper
  11. yellow pepper
  12. bow tie pasta
  13. salt
  14. pepper
  15. vegetable oil
  16. curry powder
  17. white wine
  18. water
  19. mayonnaise

Steps:

  1. poach chicken by placing in a large pot with enough cold water to barely cover
  2. add peppercorns , bay leaf , parsley , thyme and one each: onion , carrot and celery cut into quarters
  3. bring to a bare boil with lid on
  4. reduce heat to low and simmer for 50 minutes
  5. cool in poaching liquid , then drain , skin and shred
  6. to make curry flavouring , soften diced onion in hot oil , then add curry powder and cook over medium-high heat for a further 3 minutes
  7. add wine and water
  8. boil rapidly until reduced to about 3 tablespoons
  9. strain and let cool
  10. prepare curry mayonnaise by combining all ingredients until smooth
  11. place peppers in a large bowl , with chicken , pasta , salt , pepper and curry mayonnaise
  12. mix gently until well- coated
  13. if mayonnaise mixture is too thick , add warm water gradually until a smooth consistency is attained
  14. place a portion of salad on bed of spinach and sprinkle reserved peppers on top
  15. assemble just before serving , as the mayonnaise quickly loses its fresh look
