Curried Pasta Salad With Chicken Recipe

  1. fusilli
  2. cooking spray
  3. onion
  4. korma paste
  5. dried apricot
  6. tomato paste
  7. water
  8. light mayonnaise
  9. mango chutney
  10. crushed pineapple
  11. chicken breast


  1. cook the pasta according to the directions on the package
  2. when cooked , drain thoroughly and rinse under cold running water until the pasta has cooled
  3. drain and put in a large serving bowl
  4. spray a non-stick skillet with cooking spray or melt a little butter if you prefer
  5. add the onion and cook for 5 minutes until softened
  6. add the korma paste and cook , stirring , for 2 more minutes
  7. stir in the apricots , tomato paste and water and cook for 1 minute
  8. remove from the heat and allow to cool
  9. stir together the mayonnaise and mango chutney in a bowl until blended
  10. drain the crushed pineapple , adding 2 tablespoons of the pineapple juice to the mayonnaise mixture
  11. stir the pineapple , mayonnaise mixture , onions with korma paste and cooked chicken pieces into the pasta in the serving bowl
  12. toss together to coat the pasta
  13. cover and chill for 30 minutes to allow the flavours to blend
  14. serve cold and enjoy !
