SAVORY CURRIED PORK



Savory Curried Pork image

The rich flavor of sesame oil and the kick of fish sauce and lemon grass enhance this tender slow-simmered pork curry.

2 pounds pork boneless shoulder
1 large onion, finely chopped (1 cup)
5 garlic cloves, finely chopped
1 tablespoon finely chopped gingerroot
1 teaspoon ground turmeric
1/2 teaspoon crushed red pepper flakes
2 tablespoons vegetable oil
1 teaspoon sesame oil
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
1 stalk lemon grass, finely chopped
1 tablespoon fish sauce
Hot cooked rice, if desired
Chopped fresh cilantro, if desired

Steps:

  • Remove fat from pork. Cut pork into 2-inch cubes. In blender, place onion, garlic, gingerroot, turmeric and red pepper. Cover; blend on medium-high speed about 1 minute, stopping blender frequently to scrape sides, until smooth.
  • In 4-quart Dutch oven, heat oils over medium heat. Gradually and carefully pour blended mixture into oil (oil will spatter). Heat to boiling. Reduce heat; cover and simmer 15 minutes, stirring occasionally.
  • Stir in pork, tomatoes, lemon grass and fish sauce. Heat to boiling. Reduce heat; cover and simmer about 1 hour 30 minutes, stirring occasionally, until pork is tender. Serve over rice; garnish with cilantro.

2 tablespoons garam masala or 2 tablespoons curry powder
1 green onion, finely chopped
2 garlic cloves, minced
1 tablespoon grated fresh ginger
1 tablespoon cooking oil
1/8 teaspoon cayenne pepper
1 lb pork tenderloin, cut into 1 to 1 1/2 inch cubes (I have used other cuts of pork, because it's marinated overnight, can also use lamb, beef, chicken a)
1/2 cup plain yogurt
2 tablespoons snipped fresh cilantro

Steps:

  • Combine garam masala, onion, ginger, oil, and cayenne pepper in a medium mixing bowl.
  • Stir in pork, working spice mixture into meat with fingers.
  • Thread the meat onto metal skewers, leaving 1/4 inch between pieces, cover and refrigerate for 1 to 24 hours.
  • Place pork skewer on the lightly oiled rack of the grill directly over medium heat.
  • Grill for 12 to 15 minutes or until the juices run clear, turning once.
  • Meanwhile, stir together yogurt and cilantro in a small serving dish.
  • Cover and chill until serving.
  • To serve, use a fork to remove grilled pork cubes from skewers.
  • Arrange on a tray around yogurt mixture.
  • Serve pork cubes with toothpicks.

My mother was a very traditional cook, except when it came to this recipe! My sisters and I enjoyed it when we were growing up. Now it's a favorite of our own kids'.

4 pork chops (1/2 inch thick)
2 tablespoons butter, divided
1/2 cup chopped onion
1 cup water
1-1/2 cups diced unpeeled tart apples
1/2 cup raisins, optional
3 tablespoons orange marmalade
2 tablespoons lemon juice
1 to 2 tablespoons curry powder
4 teaspoons sugar
1/2 teaspoon pepper
2 tablespoons all-purpose flour
1/4 cup cold water
Hot cooked rice or macaroni

Steps:

  • In a large skillet over medium heat, brown pork chops in 1 tablespoon of butter; drain and set aside. , In the same skillet, saute onion in remaining butter until tender. Add water, apples, raisins if desired, marmalade, lemon juice, curry, sugar and pepper; mix well. Bring to a boil. , Return pork chops to skillet. Reduce heat; cover and simmer for 10-15 minutes or until pork juices run clear and apples are crisp-tender. Remove pork chops; keep warm. , Combine flour and cold water until smooth; add to skillet, stirring constantly. Bring to a boil; boil and stir for 2 minutes. Serve over rice or macaroni.
