Curried Salmon And Rice Slice Recipe

  1. salmon
  2. long grain rice
  3. egg
  4. butter
  5. salt
  6. pepper
  7. curry powder
  8. mayonnaise
  9. parsley
  10. cheese
  11. flour
  12. milk
  13. lemon juice


  1. cook rice in boiling salted water for 12 minutes
  2. drain
  3. combine rice with butter , egg , salt and pepper
  4. line a 18cm x 28cm dish with aluminium foil , bringing it above sides of dish
  5. press mixture over base and sides of tin
  6. arrange drained , flaked fish over rice base
  7. sauce:
  8. melt butter
  9. add flour and curry powder , stir until smooth , cook 1 minute and then remove from heat
  10. add milk gradually , stirring until smooth
  11. add mayonnaise and return to heat
  12. stir until sauce boils and thickens
  13. add lemon juice and parsley
  14. reduce heat , simmer 1 minute and then remove from heat
  15. add beaten egg , cool slightly
  16. pour mixture onto fish
  17. sprinkle with grated cheese
  18. bake in a moderate oven 25-35 minutes or until golden brown
