Curried Sweet Potato Latkes Recipe

  1. flour
  2. curry powder
  3. brown sugar
  4. granulated sugar
  5. baking powder
  6. ground red pepper
  7. ground cumin
  8. paprika
  9. eggs
  10. sweet potato
  11. salt
  12. black pepper
  13. peanut oil


  1. whisk together flour , curry powder , brown sugar , granulated sugar , baking powder , red pepper , cumin , and paprika in a large bowl
  2. stir eggs into dry ingredients to make thick batter
  3. add sweet potatoes and salt and black pepper to taste , mix well heat oil in a large , heavy skillet over medium-high heat
  4. drop enough batter into hot oil to form 4-inch latkes when pressed down , do not crowd skillet
  5. fry in batches until golden , about 4 minutes per side
  6. drain on paper towels
