1 tablespoon all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
1 pound beef top round steak, cut into thin 3-inch strips
3 tablespoons canola oil, divided
2 cups sliced onions
1 garlic clove, minced
1 teaspoon curry powder
1 teaspoon beef bouillon granules
1 cup boiling water
1/2 cup tomato juice
3 tablespoons tomato paste
Hot cooked noodles or rice

Steps:

  • In a large resealable bag, combine the flour, salt and pepper; add beef. Seal bag and shake to coat. In a large skillet, brown beef in 2 tablespoons oil; drain. , Add the onions and remaining oil; saute until onions are golden brown. Add garlic; cook 1 minute longer. Sprinkle with curry. Dissolve bouillon in boiling water; pour over beef and onions. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until meat is tender. , Add tomato juice and paste; cook for 5 minutes or until heated through. Serve with noodles or rice.

2/3 cup olive oil
1/2 cup beef broth
1/2 cup lemon juice
2 garlic cloves, minced
2 teaspoons curry powder
2 teaspoons salt
4 bay leaves
16 whole peppercorns
2 pounds beef tenderloin, cut into 1-1/4-inch cubes
2 large green peppers, cut into 1-1/2-inch pieces
3 medium tomatoes, cut into wedges
3 medium onions, cut into wedges

Steps:

  • In a shallow dish, combine the first eight ingredients. Remove 2/3 cup for basting; refrigerate. Add beef to remaining marinade; turn to coat. Cover and refrigerate for 8 hours or overnight. , Drain and discard marinade. On metal or soaked wooden skewers, alternate the beef, green peppers, tomatoes and onions. Broil 5-6 in. from the heat for 3 minutes on each side. Baste with reserved marinade. Continue broiling, turning and basting for 8-10 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).

2 tablespoons vegetable oil
1 kg stewing beef (chuck)
8 spring onions, chopped
2 garlic cloves, crushed
1 tablespoon grated fresh ginger
3 teaspoons ground coriander
1 tablespoon ground cumin
2 star anise
1 cinnamon stick
4 cloves
3 cardamom pods
1 tablespoon chopped fresh lemongrass (only white part)
500 ml coconut milk
1 small red chile, chopped
60 g ground almonds

Steps:

  • Heat half the oil in a pan add steak in batches and brown all over, remove from pan.
  • Heat remaining oil in the same pan add spring onions, garlic and ginger and cook until spring onions are soft.
  • Add the coriander, cumin, star anise, cinnamon, cloves, cardamom and lemon grass cooking and stirring for about 3 minutes.
  • Return the meat to the pan add coconut milk and chili and simmer covered for about 1 to 1/2 hours until meat is tender.
  • Add the nuts and stir until heated through.
  • Discard cinnamon, cardamom before serving.

Also, if you like it milder, you can substitute another type of chillie or even bell pepper (if you don't care for much spice at all). While different chillies do have different flavors, the heat level takes precedence and you should only cook with chillies of your personal choice (in any spicy recipe). Also, use the most tender beef you can get. I know the economy is poor right now, so if you use an economical cut of beef, you can extend the cooking time to get it tender. just watch your liquid levels, since they will disappear and you don't want to burn it.

1/4 cup coconut oil or 1/4 cup vegetable oil
1 garlic clove (finely chopped)
2 sprigs chives (chopped)
1 medium habanero chili (finely chopped)
2 medium onions (chopped)
1 teaspoon ground ginger
2 tablespoons curry powder
2 lbs tender lean beef (cubed)
2 cups coconut water or 2 cups tap water
salt (to taste)

Steps:

  • Saute the garlic, chives, habanero, onion, ginger and curry powder in a large skillet until fragrant, 1-2 minutes, stirring constantly (to keep from scorching).
  • Add the beef and cook until it is browned (can add a little more oil if you like), then add coconut water and salt.
  • Lower heat, and cook, covered, for 1 1/2 hours, checking the amount of liquid to make sure it doesn't dissipate (add some water if needed).
  • Serve with steamed jasmine rice if you like.

1 pound beef top round steak, cut into thin slices
2 medium onions, cut into wedges
1 medium medium green pepper, cut into bite-sized pieces
1 cup A.1. Original Steak Sauce
1 ½ teaspoons curry powder
8 each (10 inch) wooden skewers
8 cups pineapple wedges
3 cups hot cooked rice

Steps:

  • Place steak slices, onions and peppers in nonmetal dish. Add combined steak sauce and curry powder; stir to evenly coat steak and vegetables. Cover. Refrigerate 1 hour to marinate, stirring occasionally. Meanwhile, soak skewers in water for at least 30 minutes.
  • Preheat grill to medium-high heat. Drain steak slices and vegetables; discard marinade. Alternately thread steak (accordion style), vegetables and pineapple onto skewers.
  • Grill kabobs 8 to 10 minutes or until cooked through, turning occasionally. Serve with the rice.

12 ounces broccoli spears, stems peeled and cut into 1/4-inch dice, flowers cut into bite-size pieces
1 cup coconut milk
1/2 cup beef broth
1 tablespoon red curry paste
6 teaspoons vegetable oil
1/4 teaspoon fresh minced chili pepper
1 medium onion, sliced thin
2 large stems bok choy, cut into 1/4-inch slices
1 marinated flank steak (see above), sliced thinly against the grain

Steps:

  • Bring a medium pot of salted water to a boil. Add the broccoli stems and boil for 2 minutes. Add the florets and boil for 1 minute. Drain and plunge into a bowl of ice water. Drain and set aside.
  • Combine the coconut milk and beef broth, then whisk in red curry paste. Heat 3 teaspoons of the oil in a wok or large skillet over high heat. Add the chili pepper and cook briefly. Add the onion and stir for 1 minute. Add the broccoli florets and stems and toss for 2 minutes. Add the bok choy and stir over high heat for 4 minutes. Remove from wok and set aside.
  • Wipe out the wok. Return to high heat, add the remaining oil and when it is hot, quickly stir-fry the beef. Add the vegetables and toss.
  • Working quickly, pour the coconut milk mixture over the beef and vegetables, stirring constantly to distribute well. Serve over steamed basmati rice.

1/2 cup peanut oil
2 pounds beef filet, cut into 1-inch cubes
Kosher salt to taste

Steps:

  • Place the curry powder in a small heavy skillet over very low heat. Stir constantly until toasted and fragrant, being careful not to burn it, about 10 minutes. Place in a large bowl and let cool. Stir in the oil. Add the beef and toss to coat well. Refrigerate overnight.
  • Bring the beef to room temperature. Preheat a grill or broiler. Thread the beef onto 6-inch skewers, using 3 cubes for each. Grill or broil until medium rare, about 1 minute per side. Sprinkle with salt, place on a platter and serve.
