CURRIED CHICKEN SALAD
Steps:
- Preheat the oven to 350 degrees F.
- Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.
- For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
- Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.
CURRIED CHICKEN SALAD WITH GRAPES
A touch of curry makes this salad interesting but not overpowered like some. This calls for roasting chicken (better flavor than poaching), but I prefer to use rotisserie chicken. It is so easy and flavorful, not to mention a time saver. I always season to taste, but the measurements should be about right. I toss the salad the night before to give the flavors time to meld.

- Place chicken on rack inside a 9"x13" pan. Rub breasts with olive oil. Season with salt, pepper and Mrs. Dash (or similar seasoning).
- Roast until no longer pink, about 45 minutes.
- Cool until easy to handle. Remove skin and bones. Shred meat into bite-sized pieces. (Shredding instead of cubing allows the dressing to adhere to the chicken more easily.).
- Meanwhile, combine dressing ingredients. Taste often to reach desired outcome.
- Combine chicken, celery and grapes. Toss with enough dressing to coat, allowing for a little extra as the chicken will absorb some while melding in the refrigerator.
- Best chilled overnight, but it is still great if you can't wait that long.
- Serve alone or with rolls for sandwiches.

CURRY CHICKEN SALAD WITH GRAPES
After the news that a local cafe was closing, I begged the owner for this recipe. The sweetness of the red grapes compliments the curry perfectly and the almonds provide a nice crunch. It's always a hit and I'm always asked for the recipe. It's nice served over a large leaf of romaine, on a croissant, or just out of the bowl with a fork!

WONDERFUL CHICKEN CURRY SALAD
I created this salad for a party last year. It tastes wonderful, and everyone asks for the recipe. Serve on croissants or lettuce leaves. For a fancy presentation, line a platter with red leaf lettuce, and top with cream puff shells that have been stuffed with salad (small shells for appetizers or large shell for main dish).

CURRIED CHICKEN AND SHRIMP WITH GRAPES

- Cut the chicken breasts into 8 to 10 strips about 1 1/2 inches long.
- Shell and devein the shrimp. Rinse well and drain.
- Heat 1 tablespoon of the butter in a small saucepan. Add the onion and garlic. Cook briefly and add the celery. Cook, stirring, for about 1 minute. Do not brown. Sprinkle with curry powder and stir. Add the tomatoes, banana, apples and bay leaf. Stir and add the broth, salt and pepper. Stir well to blend. Simmer 10 minutes.
- Heat the remaining butter in a nonstick skillet and add the chicken, stirring. Cook for 3 minutes. Add the shrimp, salt and pepper. Cook, stirring, about 2 minutes. Meanwhile, remove the bay leaf and pour the curry mixture into the container of a food processor or blender. Blend to a fine texture. Add the grapes to the chicken mixture. Pour the curry sauce over it and stir to coat well. Bring to a simmer for about 2 minutes. Sprinkle with the coriander, stir and serve immediately.
