Number Of Ingredients 7

1-1/2 cups shredded cheddar cheese
1 cup sliced ripe olives
1/2 cup mayonnaise
1/4 cup sliced green onions
1/2 teaspoon curry powder
1/4 to 1/2 teaspoon salt
3 English muffins, split

Steps:

  • In a bowl, combine the first six ingredients and mix well. Spread over English muffins. Cut into quarters. Place on an ungreased baking sheet. Broil 4 in. from the heat for 1-2 minutes or until cheese is melted. Serve warm.

I found this recipe in a book called "THE BEST OF COUNTRY COOKING" published by "Taste of Home". I needed something quick to whip up for a get together with friends. Quick prep the day before and quick prep the day of the get together. They were a hit; none left to be seen! (prep time does not included 24 hour refrigeration.)

Number Of Ingredients 18

1 cup mayonnaise (no substitutes)
3 ounces cream cheese, softened
1 tablespoon grated onion
1 tablespoon minced chives (fresh or dried)
1/2 teaspoon cider vinegar
1/2 teaspoon Worcestershire sauce
1 clove garlic, minced
1/4 teaspoon paprika
1/8 teaspoon dried oregano
1/8 teaspoon thyme
1/8 teaspoon basil
1/8 teaspoon parsley flakes
1/8 teaspoon dill weed
1/8 teaspoon curry powder
1 loaf of mini miniature party rye rounds
2 medium cucumbers, scored and thinly sliced
diced pimentos or diced red pepper (for garnish)
additional dill weed (for garnish)

Steps:

  • In a food processor or blender, combine first 9 ingredients (this includes all the 1/8 tsp seasonings.) Cover and process until blended.
  • Cover and refrigerate for 24 hours.
  • Spread Mayonnaise mixture over bread slices;top with cucumber slices.
  • Garnish with pimientos or red pepper and dill weed.

OLIVE & CHEDDAR CANAPES

A very good "do ahead" recipe, quick, easy and tasty. You can make the olive spread the day before or do it all at once. These freeze well. Just thaw before broiling. I flatten the bead slices with a rolling pin before toasting one side.

4 ounces black olives, chopped
1 cup cheddar cheese, grated
1/4 cup mayonnaise
1/4 teaspoon onion powder
1/4 teaspoon curry
8 slices sandwich bread, crusts removed

Steps:

  • Mix olives, cheese, mayo, onion powder & curry.
  • Arrange bread on an ungreased cookie sheet and toast one side under the broiler. Turn over and spread with the olive mixture (you can now freeze the slices and broil when thawed) and broil for 2 to 3 minutes until bubbly.
  • Cut each slice intp 4 triangles.
