SHRIMP AND CABBAGE STIR-FRY

Steps:
- Whisk the egg white, 1 tablespoon cornstarch and 1 teaspoon soy sauce in a large bowl until frothy. Add the shrimp and toss to coat. Refrigerate 10 minutes. Meanwhile, whisk the hoisin sauce, vinegar and the remaining 1 tablespoon soy sauce and 2 teaspoons cornstarch in a small bowl, then whisk in the chicken broth. Set aside.
- Drain the shrimp. Heat the vegetable oil in a wok or large skillet over medium-high heat, then stir-fry the scallion whites, ginger and garlic, about 30 seconds. Add the shrimp and stir-fry until almost cooked through, about 3 minutes. Add the cabbage and stir-fry until wilted and the shrimp are just cooked through, about 2 more minutes.
- Stir the hoisin sauce mixture, then add to the wok and simmer, stirring occasionally, 2 minutes. Stir in the scallion greens. Serve with rice, if desired.

SHRIMP WITH NAPA CABBAGE AND GINGER
Steps:
- Cut white and pale green parts of scallions into 2-inch pieces and thinly slice dark green parts.
- Stir together shrimp, 1 tablespoon Sherry, cornstarch, white pepper, and 1/2 teaspoon salt in a bowl.
- Rinse cabbage in a colander. Tap colander lightly, then transfer cabbage to a large bowl with excess water clinging to leaves.
- Heat a 14-inch wok or 12-inch heavy skillet over high heat until beginning to smoke, then add 2 tablespoons oil. When oil begins to smoke, add shrimp and stir-fry until golden and almost cooked through, about 4 minutes. Transfer to a clean bowl.
- Add remaining tablespoon oil to wok and heat until just smoking, then stir-fry ginger and white and pale green parts of scallions until slightly softened, about 2 minutes. Add bell pepper and stir-fry until softened, about 2 minutes. Stir in remaining tablespoon Sherry and cook until most of liquid is evaporated. Add cabbage with water from bowl, soy sauce, and remaining 1/2 teaspoon salt and cook, covered, until cabbage is tender, about 5 minutes.
- Stir in shrimp along with any juices accumulated in bowl and simmer, uncovered, until shrimp are just cooked through, about 1 minute. Add scallion greens and toss to combine well.
EASY SAVOY CABBAGE
I love savoy cabbage and we serve it as a side to almost anything. This is one of my favorite ways to make it, quick and easy with a little butter and cream.

- Place savoy cabbage in a pot, cover with cold water, and bring to a boil. Cook for 1 minute, remove from heat, and drain. Rinse under cold water. Squeeze savoy cabbage as dry as possible with your hands.
- Melt butter in a pot and add savoy cabbage. Add cream and season with salt, pepper, and nutmeg. Cook until cabbage is soft and creamy, 2 to 4 minutes.

CURRIED SAVOY CABBAGE SOUP WITH MUSHROOMS
My parents grow a lot of vegetables. Although I live quite far away from them and neither of us has a car, I sometimes see my sister. Last time I saw her she gave me a savoy cabbage from my parents. Not being a big fan of cabbages, I was quite happy to find this Curried Cabbage Soup in the new edition of the Swiss cooking magazine called 'KOCHEN' (November 2005). I love spices and I enjoy nearly every dish with curry powder or paste in it. I used a recently bought Sri Lankan curry powder, which - as I found out - happens to be very very hot. The second time I prepared this soup I used half a tablespoon of the Sri Lankan and half a tablespoon of a mild curry powder. This soup makes a lovely starter or a nice meal.

- Cut the savoy cabbage into wedges, core and shred it. Chop the onion. Remove leaves from the thyme sprigs. Peel and cube potato.
- Heat half of the butter in a high pan until butter melts. Lower heat and add the shredded savoy cabbage and onion. Cook for 3-4 minutes, stirring frequently.
- Add curry powder and mix. Add chopped potato, thyme leaves and stock. Increase heat, add a lid and cook on low/medium heat for 25-30 minutes.
- Slice the mushrooms and chop the parsley.
- Blend the soup with a hand blender. Add the cream. Check if more water or curry is needed. Season with salt and pepper if necessary. Warm the soup, but don't heat it too much, as the cream may curl (depending on the fat content of the cream and on the temperature you heat it).
- Heat the remaining butter in a skillet and fry the mushrooms. Season with salt and pepper. Add parsley when mushrooms are cooked.
- SERVE:.
- Pour soup into bowls and top with mushrooms.

- In a medium saucepan, whisk curry paste over medium heat until fragrant, 1 minute. Whisk in broth and coconut milk. Add cilantro sprigs, bring to a simmer, and cover. Simmer 10 minutes (do not let boil).
- Meanwhile, cook noodles in a large pot of boiling water until just tender, about 2 minutes; drain.
- Uncover soup and discard cilantro. Add lime zest and juice, and fish sauce. Add shrimp; simmer until just opaque, 2 to 3 minutes. Stir in noodles; cook 1 minute more. Serve soup topped with cabbage, cilantro leaves, and peanuts, with lime wedges on the side.

This is a simple quick and easy recipe and is very flexible, adjust ingredients to your taste or try adding fennel or bell peppers, even hot peppers to spice it up a bit! It's excellent with fried fish.

- Place a large skillet or wok over high heat. Heat the oil and butter until smoking. Stir fry the onion, carrot, and garlic until the onion begins to soften, about 1 minute. Add the cabbage, coconut, and curry powder; stir fry for 2 more minutes.

- Blend red bell pepper, chiles, lemongrass, garlic, ginger, paprika, coriander, cumin, turmeric, and a couple of big pinches of salt in a blender until a smooth paste forms.
- Heat oil in a large pot over medium-high. Cook cabbage until deeply browned on both cut sides, about 2 minutes per side. Transfer to a plate.

- In a blender, puree the basil with the 1/2 cup of olive oil. Pour the puree into a small bowl and let stand at room temperature for about 20 minutes, or until the oil separates from the solids. Skim 1/4 cup of the basil oil into a clean bowl, leaving the solids behind. Stir in the lemon juice and season with 3/4 teaspoon of salt and 1/4 teaspoon of pepper.
- In a medium saucepan, heat 1/2 inch of peanut oil over moderate heat until shimmering. Add half of the shallots and stir well. Reduce the heat to moderately low and fry, stirring once or twice, until the shallots are lightly browned and crisp, about 15 minutes. Remove the shallots to paper towels with a slotted spoon. Repeat with the remaining shallots.
- Light a grill or heat a grill pan. Brush the shrimp with olive oil and season with salt and pepper. Grill for about 2 minutes per side, or until opaque throughout.
- Cut the apple into matchsticks. In a bowl, toss the tatsoi, cabbage, apple and shallots. Add the dressing and toss well. Arrange the salad on 8 plates, top each serving with 3 grilled shrimp and serve.
