This is another Papmpas recipe, I'm currently trying to cull my cookbook collection so anything that sounds interesting to me gets posted here so I can send all my cookbooks to the thrift shop.

Steps:
- Using 2 sheets of pastry, line a lightly greased 28cm x 18cm slice tin.
- Combine remaining ingredients and spoon into pastry-lined tin, pressing down well.
- Using remaining pastry, cover the filling, trim edges and crimp. Use the pastry scraps to decorate the top.
- Glaze & cut a vent in pastry top.
- Bake in a moderate oven for 35 mins or until golden brown.
- Can be served hot or cold.

CURRIED TUNA SANDWICHES
If you're looking for a change from traditional tuna sandwiches, try this recipe I developed. It includes my favorite ingredients from a few different tuna salad recipes, including apples, raisins and curry. The first time I combined them, I loved the results!

- In a small bowl, combine the first five ingredients; add tuna and mix well. Spread rolls with additional mayonnaise if desired; top each with 1/2 cup tuna mixture and lettuce.

TUNA SLICE
Very quick and easy to prepare. Given to me by an Australian friend. Child friendly and can be eaten hot or cold (great for picnics). Sometimes I add sweetcorn or put tomatoes on top depending on how I feel and whats in the larder. I also use more cheese than called for but thats because we're all mice in our family!

Steps:
- Pre-heat oven to 180°C.
- Crush the biscuits in a blender, then put in a bowl.
- Add the onion and mix.
- Drain the tuna, flake and add to the mix.
- Add milk, eggs and cheese.
- Mix well and put in a lightly greased ovenproof dish.
- Bake for approx 30 mins until golden.

CURRIED TUNA PITA POCKETS
A crunchy flavor packed tuna salad that would work great for lunch or a light supper. The original recipe first appeared in Jolie Warner's "take a can of tuna" and as presented includes my modifications. What distinguishes this recipe is the addition of fresh basil which adds a sweet grassy flavor in contrast to the heat of the curry. Serve sandwiches with a crispy salad and enjoy. You could also turn this into an entree salad and serve pita wedges on the side. As presented, this is intended to be eaten shortly after preparation. If you are planning to chill it a few hours, I would suggest scaling back the curry powder as the flavor grows stronger and overshadows the other flavors in the salad.

- In a medium sized bowl combine the mayonnaise, lime juice, lime zest and curry powder.
- Add all remaining ingredients except the lettuce and pita. Mix until combined.
- Split pitas and add one or two lettuce leaves. Add a scoop of tuna salad.
CURRIED TUNA SLICE
My mum used to make this when I was younger. It is great to take to work as lunch. Prep time is a guess.

Steps:
- For the base: Sift flour into a bowl, rub in butter, add egg yolk and enough water to mix to a stiff dough; refridgerate 30 minutes.
- Roll pastry to fit base of a rectangle tin (16 x 26cm).
- For the filling: Spread well drained tuna over the pastry.
- Saute chopped onion& chopped celery in 15g butter, until onion is transparent; spread over tuna.
- Melt remaining butter, add flour and 2 tsps of curry powder, stir until smooth.
- Add milk gradually, stir until sauce boils& thickens, reduce heat, add 30g grated cheese, stir until melted; add salt& pepper.
- Add lightly beaten eggs, mix well.
- Spread the cheese sauce evenly over the onion& celery.
- Combine remaining grated cheese, remaining curry powder and paprika, sprinkle on top of slice.
- Bake in a moderate- hot oven for 10 minutes, reduce heat to moderate, bake further 25- 30 minutes or until golden.
