CURRY BROCCOLI SALAD
The best broccoli sadad I've had! I have cheated and used precooked bacon crumbles. Works just as well. Also I have replaced about 1/2 of the mayo with yogurt. This recipe is so good.

Steps:
- Heat some water and steam the broccoli florets until just cooked. You should just be able to stick a fork into the side of the florets but there should be some resistance. Set aside.
- Now heat a large frying pan or wok over medium heat and add half the ghee or oil. Throw in the ginger, coconut, sesame seeds, peanuts, chilli powder and turmeric and cook for about three minutes stirring the ingredients about the pan with a spatula.
- Add the rest of the ghee if needed and throw in the onions, tomatoes and chopped chilli peppers.
- Cook until the onion is transparent and just beginning to turn a light brown.
- Add the garlic and cook for a further minute.
- Throw in the broccoli florets with the coconut milk and heat through. You want the broccoli to be tender but not mushy.
- Add salt and pepper to taste and serve immediately.
- As you can see, this broccoli curry can be made in minutes. Teamed with a little saffron rice or chewy home made naan bread it is the perfect mid week family meal or side or main dish for an exotic dinner party.
- I would really like to know how you get on with this recipe. The important thing is that you try it as it really is amazing. Be sure to stop back and leave a comment.
SPICY BANANA CURRY
This recipe finds its harmony in the way the bold, bursting flavor of curry interacts with the soft sweetness of bananas and smooth yogurt. The amounts of the different spices in the powder mixture are meant to be guidelines - have fun experimenting with your own intuitive combinations. Serve with basmati rice.

TOMATO, BROCCOLI AND PASTA SALAD
A meal on its own... Great for picnics and summer parties. Looks great with the coloured pasta. Not too high in calories either. One of my sister's recipes passed down...

CURRIED BROCCOLI CRANBERRY SALAD
Came up with this for a more exotic twist on the classic bacon broccoli salad, since many of us are vegetarians. Makes a great summer potluck dish, and a quick side to a world cuisine menu. Play with the type of curry powder you use to change up the base flavor.

BROCCOLI, CHICKPEA, AND CHERRY TOMATO SALAD
This easy recipe came from the March 2004 issue of Everyday Food. It is quick to put together and a colorful and delicious salad. I prefer to eat it right away, still slightly warm. I think it would be good sprinkled with crumbled feta cheese or with some chicken or tuna for a main course salad.

- Bring a pot of water to boil. Salt the water heavily like you would do while cooking pasta. Add broccoli florets into boiling water and cook it for 60 seconds. Immediately drain broccoli from boiling water and rinse it well under tap water or quickly transfer to ice water bath to stop the cooking process. Drain water completely and let it dry on kitchen towel to ensure it’s dried well.
- In a bowl or jar add mayonnaise, red wine vinegar, lemon juice, Dijon mustard, sugar, salt and pepper. Whisk it until well combined. Keep aside until use.Note: if broccoli salad dressing is too thick, thin it down with 1 or 2 teaspoon water. It should be in pouring consistency, but not too thin.
