Dad's Roast Chicken -- My Way with a Parsley Lemon Juice Oil image

My dad's roast chicken is really simple. He stuffs a whole chicken with fresh herbs and seasons it with salt and pepper, then pops it in the oven. My version, which uses chicken that's already cut into serving pieces instead of a whole chicken, is less work and cooks a lot faster and more evenly. I've also spruced up the flavor with some grated lemon rind and finish it off with a fresh, colorful and tangy oil for drizzling over the finished chicken. Dad ? your chicken's good but I may have one up on you on this one!

1 (3 1/2-pound) chicken cut in 8 serving pieces
Kosher salt and freshly ground black pepper
4 sprigs fresh rosemary
4 sprigs fresh thyme
Olive oil, for drizzling
The rind of 1/2 lemon, zested
1/2 bunch parsley
1/2 cup extra-virgin olive oil
1/2 lemon, juiced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degree F.
  • Trim off any excess skin or fat from the chicken. Cut off and discard the wing tips. Place the chicken pieces in an 11 by 13-inch baking pan, or any pan that that they fit in without crowding. Season the chicken pieces generously with salt, pepper, olive oil, the herbs, and the lemon zest. Toss through all the seasonings and then arrange the chicken piece skin side up in the pan. You can season the chicken pieces and set them up in the roaster up to a day before you cook them. Cover the pan with plastic wrap and refrigerate.
  • Roast until the skin is nicely browned and there is no pink near the thigh bone and the juices run clear, about 35 to 40 minutes. Check both white meat and dark meat. If the white meat is done before the dark meat, take it out and set it on the serving plate until the dark meat is done.
  • For the parsley drizzle, wash and dry the parsley. Remove the leaves from the stems and chop the leaves finely. Combine the remaining ingredients in a bowl and use immediately to garnish the roast chicken.

1 (14 1/2 ounce) can fat free chicken broth, divided
1 teaspoon lemon pepper seasoning
1 cup couscous
4 boneless skinless chicken breast halves (about 1 pound total weight)
1 tablespoon vegetable oil
2 tablespoons dry white wine
2 teaspoons cornstarch
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried basil leaves
1 cup red grapes, seedless
toasted slivered almonds

Steps:

  • Reserve ½ cup of the broth.
  • Bring the remainder of the broth and the lemon pepper to a boil.
  • Place couscous in a large bowl and pour the boiling broth over it; cover and let stand for 5 minutes.
  • Meanwhile, gently flatten chicken to uniform thickness.
  • In a large skillet, cook the chicken in oil until cooked through (about 4 minutes per side) and then remove the chicken.
  • Combine reserved ½ cup broth, wine, cornstarch, thyme and basil, and whisk or stir to dissolve the cornstarch.
  • Pour the mixture into skillet and cook, stirring constantly, until thickened.
  • Return the chicken to the skillet and add the grapes.
  • Heat.
  • Fluff couscous with a fork.
  • Serve chicken over couscous, and garnish with almonds.

4 chicken breast halves, boneless
1 tablespoon butter
0.5 (17 ounce) package puff pastry sheets, frozen (1 sheet)
1 egg
1 tablespoon water
4 ounces garlic & herb spreadable cheese, Alouette
1/4 cup parsley, fresh, chopped

Steps:

  • Season chicken with salt and pepper if desired. Melt butter in skillet. Add chicken and cook until browned. Remove chicken. Cover and refrigerate 15 minute or up to 24 hours.
  • Thaw pastry sheet at room temperature 30 minute Mix egg and water. Preheat oven to 400*F.
  • Unfold pastry on lightly flourd surface. foll into 14" square and cut into 4(7") squares. Spread about 2 tablespoons of the cheese spread in center of each square. Sprinkle with 1 tablespoon parsley and top with cooled chicken. Brush edges of squares with egg mixture. Fold each corner to center on top of chicken and seal edges. Place seam side down on baking sheet. Brush with egg mixture.
  • Bake 25 minutes or until golden.

This Trinidadian version of curried chicken is an earthy, rich stew of whole chicken pieces in an aromatic, vibrant broth, spiked with hot chile and a traditional herb paste.

1 (4-pound) chicken, cut into 8 pieces, skin removed
1 tablespoon freshly squeezed lime juice
2 tablespoons Green Seasoning
1 teaspoon coarse salt
1 Scotch bonnet pepper or other hot red chili pepper, finely chopped
2 cloves garlic, crushed
¼ cup Trinidad Curry Powder
2 tablespoons canola oil
1 medium onion, chopped
1 cup chicken stock or water
Roti or white rice, for serving

Steps:

  • Place the chicken pieces in a bowl and toss with the lime juice. Drain, rinse the chicken with cold water, and drain again. Remove the chicken from the bowl and pat dry with paper towels.
  • Place the chicken in another bowl with the Green Seasoning, salt, chili pepper, and garlic. Toss well to coat and refrigerate for at least 30 minutes but ideally overnight.
  • Combine the curry powder with just enough water to form a thick paste. Heat the oil in a heavy-bottomed pot. Add the curry paste and onion. Cook, stirring constantly, for 1 to 2 minutes over medium-low heat-do not allow the curry to scorch. Add the chicken pieces and stir well to coat. Add the stock or water, cover, and simmer for 30 to 40 minutes, or until the chicken is tender.
  • Remove the lid and simmer for 5 minutes more over medium-high heat, until the sauce reduces by one-third. Serve with roti or white rice.

4 skinless, boneless chicken breasts
2 eggs, beaten
1 tablespoon water
1 teaspoon chopped fresh parsley
½ teaspoon dried thyme
1 pinch crushed red pepper flakes
½ cup dried bread crumbs, seasoned
½ cup wheat germ
1 teaspoon dried basil
1 teaspoon ground black pepper
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spray a baking sheet with non-stick cooking spray.
  • Trim any fat from chicken and cut into 1-inch cubes.
  • In a bowl, beat the eggs with the water and add the chicken.
  • Combine the parsley, thyme, red pepper, bread crumbs, wheat germ, basil and pepper. Stir in the oil with a fork and mix well to distribute evenly. Pour seasoning mixture into a resealable plastic bag and toss the chicken pieces to coat.
  • Place coated chicken pieces on the prepared baking sheet and bake at 425 degrees F (220 degrees C) for 10 minutes, turn the pieces, and bake for an additional 5 minutes.

  • PREP: Place the chicken on a clean surface and pat the chicken dry using paper towels. Flip the chicken breast side down. Use sharpened kitchen shears, with the neck side towards you, find the spine and cut on both sides of the spine, making sure you don’t remove excess meat. Remove the spine and save it to make stock later! Flip the bird over so it’s breast side up and use your palms to press down the sternum (breast bone) with force so it cracks and the breast and legs lay flat on the surface. Season the chicken with 1 teaspoon of kosher salt on both sides. Place the chicken breast side up on a wire rack (placed on a baking sheet lined with foil or parchment.) let the chicken hang out for at least 35-45 minutes at room temperature if time permits, this will undoubtedly yield better results. Position a rack in the center of the oven and preheat the oven to 425ºF.
  • HERB BUTTER: Combine the softened butter with the garlic, thyme, lemon juice/zest, ½ teaspoon salt, pepper, and 1 tablespoon of parsley. Smash with a fork until well mixed. Lay the spatchcocked chicken on a flat surface and gently raise the skin and dot about ½ of the prepared herb butter. Spread the remaining butter all over the chicken.
  • BAKE: the chicken uncovered for 40-45 minutes or until an instant read thermometer registers at 156-158ºF in the thickest part of the chicken breast. The temperature will continue to rise as the chicken rests (anywhere between 7-10ºF) so you want to make sure you don’t leave the chicken in the oven too long. Allow the chicken to rest for 10-12 minutes, uncovered before slicing.
