GRANDPA'S SAUERKRAUT AND KIELBASA
I grew up asking for sauerkraut instead of candy as a child, and my grandfather always made it for me. This is my version of what he would make.

Steps:
- Put the cold butter in a cold pan with the diced onion, and slowly bring to a simmer on medium heat.
- This brings out the sweetness of the onions.
- Simmer for about 10 minutes.
- Add minced garlic and simmer 2 more minutes.
- Add next 3 ingredients.
- Combine with the sauerkraut (undrained and not rinsed), kielbasa and potatoes.
- Bring to a simmer on the stove top.
- Cover loosely with foil and place in a preheated 225°F oven for 3 hours.
DAD'S STEAK RUB
The secret ingredient to Dad's super-delicious steaks is maple syrup.

- Preheat the grill for high heat.
- Place the steaks in a bowl, and drizzle on both sides with maple syrup. Rub with garlic, seasoned salt, and pepper.
- Lightly oil the grill grate. Place steaks on the grill, and cook 7 minutes per side, or to desired doneness.

DAD'S SPICY KIELBASA SCRAMBLE
When I stopped at our local butcher's and saw that he had a spicy kielbasa. It was perfect for the dish I wanted to create for my Dad who is Polish and loves spicy foods. Well, here is my result. Steps:
- 1. Saute your onions in some butter till tender.
- 2. Add your cooked potatoes and cook them till they have browned. Now add your sliced kielbasa and cook for several more minutes till they are hot.
- 3. Look how beautiful this kielbasa is from Badurik's Butcher Block our local butcher. It is heavily marbled with jalapenos and cheddar cheese. Yumm
- 4. Add your jalapenos and the juice as well.
- 5. Now whisk your eggs and cream and pour into the mixture. Add your cheddar cheese after several minutes. Stir till mixture is cooked and then serve. Season to your liking with garlic salt and pepper.
- 6. This is some spicy eats and you gotta love the heat to enjoy this scramble.

This is a simple dinner my husband came up with when I was on bed rest. It is now his "signature dish" and the whole family loves it! Even better the next day!

- In a large skillet saute onion until translucent.
- Add Worcestershire sauce, balsamic vinegar, water, and brown sugar. Stir until sugar dissolves.
- Add Kielbasa.
- Cover and simmer for about 30 minutes, stirring occasionally.
- Mix the 1/4 cup cold water with the 1 tablespoon of corn starch in a small glass until smooth.
- Add cornstarch mixture to the skillet, stir well and remove from heat. Sauce will thicken as it stands.
- Serve over pasta or as an appetizer with toothpicks.

DAD'S CREAMY & CHEESY AU GRATIN POTATOES
Cheesy, creamy au gratin potatoes made with three types of cheese for an incredible side dish everyone will love! My dad's famous au gratin potatoes recipe is easy to make and filled with cheesy goodness in every bite. Perfect for holidays or anytime you need a delicious side!

- Preheat the oven to 375 degrees F. Spray a 2 quart square baking dish (or an 8x12 is good) with nonstick cooking spray or grease with butter or oil.
- Place sliced potatoes in three tight slanted rows as indicated in the photos. You don't want them to be overly tight, make sure you leave enough space so the potato slices are slightly slanted. Add in onion slices in between the rows and on top of potatoes. Basically wherever you can fit them.
- Next make your sauce: add in 2 tablespoons of butter and place over medium heat. Once butter is melted, whisk in a little bit of the flour and then slowly add in milk, a little bit at a time, alternating with the flour and vigorously whisking away any lumps. Bring mixture to a simmer; it should be a similar consistency to creamy gravy.
- Turn heat to low and stir in shredded cheddar cheese, garlic powder, salt and pepper. Taste and add more salt and pepper, if necessary.
- Pour the sauce evenly over the potatoes and onions to cover them. Don't worry, the sauce will get nice and creamy while baking.
- Cover the pan with foil, then bake for 45 minutes.
- After 45 minutes, remove foil, sprinkle top of potatoes with 1/2 cup shredded gruyere (or more cheddar) and ¼ cup parmesan. Return to the oven and bake for 30-45 more minutes or until potatoes are done and nice and golden brown on top. (Potatoes are done when the middle of the potatoes can be easily pierced with a fork.) Remove from the oven and garnish with fresh chopped parsley. Enjoy!

- Heat the vegetable oil in the pressure cooker pot over medium-high heat until the oil is shimmering. Add enough kielbasa, cut side down, to cover the bottom of the pot in a loose layer. (For my instant pot, this was about half the kielbasa.) Brown the kielbasa on both sides, about six minutes, then remove to a bowl with a slotted spoon, leaving behind as much of the fat as possible. (Add the rest of the kielbasa to the bowl; don’t worry about browning it – we just needed the one batch browned to flavor the rest of the ingredients.)
- Add the onion and apple to the pressure cooker pot, and sprinkle with the salt, caraway seeds, and juniper berries. Saute, scraping the bottom to loosen the browned pork bits, until the onion and apple soften, about five minutes. Add the wine to the pot, bring to a simmer, and simmer for one minute, scraping the bottom to loosen any stuck onions. Add the sauerkraut, chicken broth, and the bowl of kielbasa plus any accumulated kielbasa juices. Stir until everything is well mixed.
- Lock the lid on the pressure cooker, bring the cooker to high pressure, and pressure cook for 12 minutes for an Electric PC or 10 minutes in a stovetop PC. (On the instant pot, use the Manual setting, and set the cook time for 12 minutes.) When the cooking time is over, remove the pot from the heat and let the pressure come down naturally, about 15 minutes. (On the Instant Pot or other electric cookers, cancel the “keep warm” setting.)
