DAD'S MASHED POTATO SALAD



Dad's Mashed Potato Salad image

6 medium russet potatoes, peeled and cut into 2-inch large chunks
3 /4 cup (1 1/2 sticks) unsalted butter, cut into small pieces
1/2 teaspoon kosher salt, or to taste
1/4 teaspoon freshly ground black pepper
Pinch freshly ground nutmeg
1/4 cup warm half-and-half
1 cup plus 2 tablespoons Miracle Whip
1/4 cup yellow mustard
3/4 cup finely chopped celery
3/4 cup finely chopped onion
2 cups finely chopped sweet pickles
1/4 cup sweet pickle juice
1/2 cup plus 1 tablespoon sugar
5 hard-boiled eggs, peeled and finely chopped
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Cover the potato chunks with cold water in a large saucepot. Bring to a boil and cook until the potatoes are fork-tender. Drain and return the potatoes to the pot. Add the butter, salt, pepper and nutmeg. Mash with a potato masher or electric hand mixer (essentially you are making mashed potatoes), adding warm half-and-half as needed until the potatoes are smooth and creamy. You should have a little over 6 cups of mashed potatoes.
  • Add the Miracle Whip, mustard, celery, onion, pickles, pickle juice, and sugar, mixing after each addition. Stir in the eggs until combined. Chill at least 1 hour or make the night before and refrigerate. Sprinkle with the chopped freshly parsley before serving.

2 cups elbow macaroni
6 slices American cheese
4 thick slices beef bologna
5 hard-cooked eggs, diced
6 sweet pickles, diced
1 large stalk celery, diced
½ large green bell pepper, seeded and diced
1 small red onion, diced
1 ½ cups low-fat creamy salad dressing (such as Miracle Whip Light®)
2 tablespoons prepared yellow mustard
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and cool under running water until chilled. Transfer to a large salad bowl.
  • Stack American cheese slices alternating with bologna slices and cut into 1/2-inch dice. (Stacking helps prevent cheese from sticking together.) Mix bologna and cheese into macaroni and stir in hard-cooked eggs, sweet pickles, celery, green bell pepper, and red onion. Mix thoroughly.
  • Stir creamy salad dressing and mustard into the salad and season with black pepper. Cover salad and chill in refrigerator until serving time.

This is my aunt's recipe which my father loves. She used to make it every year at Christmas. I'm not a fan of pickles so I've made it, leaving the relish out and really enjoy it.

1 1/2 cups cooked elbow macaroni
1 green pepper, chopped
3 tablespoons finely chopped onions
8 ounces sour cream
1/4-1/2 cup pickle relish or 1/4-1/2 cup chopped pickle
1/4-1/2 cup milk
1/2 cup mayonnaise
4 hard-boiled eggs, chopped

Steps:

  • Mix all ingredients together and season to taste with salt and pepper.
  • We usually serve this chilled.
