1 tbsp orange zest (optional)

Steps:

  • Combine cocoa powder and 1/4 cup of coconut milk in a small saucepan. Whisk well to make a paste.
  • Slowly add the remainder of the coconut milk and orange zest (if using) whisking vigorously, and heat over medium heat for five minutes. Don't let it boil. Add maple syrup or honey if using.
  • If you're using orange zest and want a super-smooth texture, you can either blend the mixture in a blender, food processor or use an immersion blender. You can also strain the mixture before stirring.

1 ½ cups almond flour
1 cup dairy-free and gluten-free chocolate chips
¼ cup coconut flour
¾ teaspoon baking soda
½ teaspoon sea salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
3 eggs
⅓ cup brown sugar
¼ cup almond oil
2 tablespoons maple syrup
1 teaspoon grated orange zest
1 teaspoon vanilla extract
1 cup shredded zucchini, patted dry
1 tablespoon unsweetened almond milk
1 ⅓ cups gluten-free confectioners' sugar, sifted
¼ cup fresh orange juice
1 teaspoon grated orange zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin with cooking spray.
  • Mix almond flour, chocolate chips, coconut flour, baking soda, salt, cinnamon, and nutmeg together in a small bowl.
  • Beat eggs in a large bowl with an electric mixer until light and frothy. Add brown sugar, almond oil, maple syrup, 1 teaspoon orange zest, and vanilla extract; mix well. Stir in zucchini. Fold in almond flour mixture until well blended. Thin batter with almond milk if it appears too thick.
  • Divide batter among prepared muffin cups.

  • Preheat oven to 350 degrees F. Lightly coat two 9 x 5 inch loaf pans with cooking spray or if using 5 small 6-inch round pans - preheat oven to 325 degrees F.
  • In a medium bowl, whisk eggs, melted coconut oil, apple sauce, sugar, vanilla, and zucchini until blended. In a large bowl combine flour, baking soda, baking powder, cocoa, salt and cinnamon. Fold the wet zucchini mixture into dry ingredients then slowly add the coconut oil and mix until combined. Stir in chocolate chips. Divide the batter between the two large pans or 5 small pans.
  • For two large pan loaves bake at 350 degrees F for 45-50 or until a toothpick inserted in center comes out clean. Or bake at 325 degrees F for 18-21 minutes in 5 small 6-inch round pans or until toothpick inserted in center comes out clean. Cool for 10 minutes in the pans, then turn them out onto a cooling rack to cool completely.
