1 1/2 ounces vanilla vodka
1 ounce lingonberry concentrate, (recommended: Hafi)
1 to 2 dashes bitters
Juice 1/2 orange
Juice 1/2 grapefruit
1/4 wheel fresh grapefruit or orange, or a twist of each

Steps:

  • Fill a cocktail shaker with ice. Add the vodka, lingonberry concentrate, and bitters. Cover and shake vigorously until thoroughly mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Strain into a chilled cocktail glass. Top with the orange and grapefruit juices. Garnish cocktail with citrus. Drink.

Yes, technically they're oatmeal cookies but not the kind you're used to. These light-as-air cookies will be one of your favorites. Whenever I bring them to an event I hear people asking, 'Who made these cookies? I have to have the recipe!'

1 cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1 cup butter, softened
1 cup confectioners' sugar
2 teaspoons vanilla extract
1 cup oatmeal
1 cup chopped pecans
1 tablespoon confectioners' sugar, or as needed

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  • In a bowl, mix the flour, baking soda, and salt. In a separate large bowl, mix the butter, 1 cup confectioners' sugar, and vanilla until the mixture is smooth and creamy. Stir in the flour mixture; gently stir in the oatmeal and pecans and lightly mix until combined.
  • With a spoon, drop about 1 scant tablespoon of dough per cookie onto the prepared baking sheet. Bake in the preheated oven until lightly browned, about 20 minutes. Let cool completely before sprinkling cookies with confectioners' sugar.

  • Agurkesalat (Cucumber Salad) Vinegar and pickled foods are super popular in Denmark, and you’ll often find something like this served as a side dish.
  • Rugbrød (Danish Rye Bread) Bread can be quite a controversial topic when speaking to Europeans. What we consider dark bread – pumpernickel or rye bread – is often overly sweetened and not dark enough when compared with traditional European rye bread.
  • Flæskesteg (Danish Roast Pork with Crackling) There was always a fight for the crackling in my house! It can be achieved by cutting deep into the pork skin, though not all the way to the meat.
  • Danish Kringle. This wonderful pastry is originally from the pretzel family. It can be super light, full of layers, and have a variety of fruity fillings.
  • Danish Potato Salad. Potato salad is a big deal across the pond, and each country has its own take on the BBQ favorite. Some will add boiled eggs and sausage and others go for chopped pickles.
  • Koldskål (Danish Buttermilk Dessert) As mentioned above, the Danes don’t like overly sweet desserts. That’s clear in this simple little dish. Made by mixing buttermilk with yogurt and sugar, it can be served with fruit for breakfast or after dinner.
