- Butter an 8x8 inch baking dish.
- In a saucepan over medium heat, melt together the butter, brown sugar and cocoa, stirring frequently until smooth. Remove from heat and stir in the egg and vanilla. Mix in the crushed cookies and walnuts. Press the mixture into the prepared pan and refrigerate until firm.

CHOCOLATE FRIDGE ROLL

- Tip the chocolate and butter into a medium heatproof bowl and melt over a pan of barely simmering water, taking care not to allow the bottom of the bowl to touch the water. Once the chocolate mixture is melted and smooth, add the rum, cocoa powder and orange zest and mix. Remove from the heat and use a rubber spatula to fold in the biscotti, cherries, apricots, pistachios and almonds until thoroughly combined.
- Transfer the mixture to a piece of parchment and roll into a log about 7 inches long and 2 inches in diameter; make sure the log is tightly rolled by twisting both ends of the parchment. Refrigerate for at least 2 hours to chill.
- Spread the confectioners' sugar on a plate. Remove the paper from the log and roll it in the confectioners' sugar, brushing off any excess. Allow the log to sit at room temperature for about 15 minutes. Using a serrated knife, cut the log into 1/2-inch slices
- Or, if you are aren't eating it immediately, store the log in the fridge. If you are gifting it, wrap it in parchment.

A very simple recipe that's easily adapted to whatever you have in the cupboard. I am driven crazy on a regular basis, being pestered to make these...so be warned!

- Melt the dark chocolate, butter, syrup and rum in a large saucepan.
- Break up the biscuit and mix it into the chocolate mixture along with the rice cereal, nuts and cherries.
- Line a 7" square tin with parchment paper. Push the mixture into the tin and then chill for 2 hours.
- When set, drizzle with melted white chocolate--optional.
- Cut into squares and watch them disappear before your very eyes!

- In a large microwave-safe bowl, combine the marshmallows, peanut butter, chocolate chips and butter. Cover and microwave on high for 1-1/2 minutes. Stir until well blended (the mixture will be lumpy). Add cereal and peanuts; stir until well coated. Spread into a greased 13-in. x 9-in. pan. , For the frosting, combine chocolate chips, butter and milk in another microwave-safe bowl. Cover and microwave on high for 1 minute. Add sugar and vanilla. With an electric mixer, beat frosting until smooth. Spread over the cereal mixture. Cover and refrigerate until firm, about 2 hours. Cut into squares.

- Preheat oven to 350 degrees F (180 degrees C).
- Cook chopped dates and water over low heat until soft. Set aside.
- Cream together sugar and shortening. Add eggs and beat well. Stir in flour, salt, baking soda, cocoa and vanilla and mix well. Stir in date mixture.
- Pour in 9 x 11 inch pan and top with chocolate chips and chopped nuts. Bake until toothpick comes out clean. (10 - 15 minutes)

- Line a 20 x 30cm tin with baking parchment. Mix the biscuits with most of the ginger, then set aside. Melt the chocolate, butter and golden syrup in a bowl set over a pan of simmering water, stirring occasionally, until smooth and glossy. Pour this over the biscuit and ginger mixture and mix together well.
- Tip the mixture into the prepared tin and sprinkle over the reserved ginger, then flatten the top lightly - it doesn't need to be completely smooth. Chill for at least 2 hrs, or overnight, before cutting into small squares.

DARK CHOCOLATE AND CHEERIOS™ BARS

- In the microwave, melt almond butter, honey and coconut oil.
- In a large container, combine the butter mixture with Cheerios™, oats, dark chocolate and almonds in pieces. Mix until everything is thoroughly combined.
- Line an 8 x 8 baking mold with nonstick paper. Add the mixture while pressing down with your fingers until you have a uniform layer. Refrigerate for 1 hour or until the mixture has hardened.

- Chop or grate the cacao butter into small, similar sized pieces. Note that the smaller the cacao butter is grated or chopped, the faster it will melt. Transfer the chopped cacao butter to a small saucepan.
- Heat a larger saucepan full of water and bring it to a full boil, then reduce the heat to a gentle boil. Place the saucepan with the cacao butter in the water and hold it with one hand while stirring with the other until melted. If desired, check the temperature of the cacao butter - it should be 115 degrees F or lower.
- Remove the cacao butter from the heat and stir in the cacao powder and sweetener (in my case, coconut sugar or pure maple syrup) until well-combined and creamy.
- Pour the chocolate mixture into the chocolate molds and allow them to sit at room temperature for at least 20 minutes to set up slightly. Transfer the chocolate to the refrigerator (keep it flat so that it doesn’t spill and dries evenly) and chill until completely hard.
