4 egg whites
1 pinch salt

Steps:

  • Beat 3/4 cup sugar and egg yolks together in a bowl.
  • Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes. Add butter gradually and beat until smooth. Beat into the egg yolk mixture.
  • Beat egg whites and salt together in another bowl until stiff peaks form. Sprinkle 1 tablespoon sugar over and beat for 2 minutes more. Stir egg whites slowly into chocolate bowl. Refrigerate for at least 6 hours; overnight is best.

1 (9 inch) pie shell, baked
1 cup semisweet chocolate chips
¼ cup white sugar
4 tablespoons water
1 teaspoon unflavored gelatin
1 tablespoon instant coffee powder
3 eggs
1 teaspoon vanilla extract
½ cup heavy whipping cream
2 tablespoons white sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons confectioners' sugar
1 cup heavy whipping cream
½ teaspoon almond extract
½ teaspoon vanilla extract

Steps:

  • Sprinkle the gelatin on top of 2 tablespoons water; set aside. Separate the eggs. Lightly beat the egg yolks.
  • In a small saucepan, heat chocolate, 1/4 cup sugar, 2 tablespoons water, and coffee; stir constantly until melted. Add softened gelatin to the saucepan, and heat until completely dissolved. Remove pan from heat, and gradually pour chocolate mixture into beaten egg yolks, whisking constantly. Return the custard to the pan. Cook over medium-low heat, stirring constantly, until mixture thickens slightly. Remove from heat, and stir in 1 teaspoon vanilla. Transfer to a bowl and allow to cool to room temperature.
  • When chocolate mixture has cooled, beat egg whites to soft peaks. Gradually add 2 tablespoons sugar, and beat until stiff but not dry. Fold whipped egg whites into chocolate mixture. Whip 1/2 cup cream until stiff, and fold into chocolate mixture. Spoon into pie crust and refrigerate.
  • To Make Topping: Add cocoa and confectioners' sugar to 1 cup whipping cream. Chill mixture 30 minutes, then whip until stiff. Stir in almond extract and 1/2 teaspoon vanilla extract. Top the pie with this chocolate whipped cream. Chill pie several hours or overnight until set. Filling with be a little soft.

5 1/4 ounces bittersweet chocolate, coarsely chopped
14 ounces cold heavy cream
3 large egg whites
1-ounce sugar
Sweetened whipped cream, for garnish, optional
Shaved bittersweet chocolate, for garnish, optional

Steps:

  • Place chocolate in a large bowl set over a bain marie or in a double boiler at a low simmer. Stir chocolate until melted. Turn off the heat and let stand.
  • Beat the cream over ice until it forms soft peaks. Set aside and hold at room temperature. With a mixer, whip egg to soft peaks. Gradually add the sugar and continue whipping until firm.
  • Remove the chocolate from the bain marie and using a whisk, fold in the egg whites all at once. When the whites are almost completely incorporated, fold in the whipped cream. Cover the mousse and refrigerate for approximately 1 hour or until set. Serve in goblets topped with more whipped cream and shaved chocolate, if desired.

I make this recipe for the holidays. It is the only pie that is gone at the end of the night. I use high-quality chocolate chips; they are easier to melt. You can use milk or semi sweet chips. You can use any ready made or cooked pie crust.

21 chocolate sandwich cookies, crushed
¼ cup butter, softened
1 cup heavy cream
1 (12 ounce) package semisweet chocolate chips
1 teaspoon vanilla extract
1 pinch salt
2 cups heavy cream
¼ cup white sugar
1 cup heavy cream, chilled
¼ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9 inch springform pan with 2 3/4 inch sides.
  • In a medium bowl, mix together crushed cookies and softened butter or margarine. Press mixture evenly into greased pan. Bake in preheated oven for 5 minutes, then allow to cool.
  • Combine 1 cup cream, chocolate, vanilla extract, and salt, in the top of a double boiler. Heat until chocolate is fully melted and mixture is smooth. Alternatively, if you have a food processor, you can blend mixture by placing chocolate, vanilla extract, and salt, in processor bowl. Bring 1 cup cream to a boil on stovetop, then slowly pour cream into processor with blade running. Continue to process until mixture is smooth.
  • Pour chocolate mixture into a bowl and cool to room temperature, stirring occasionally.
  • In a large bowl, beat 2 cups chilled cream with 1/4 cup sugar. Beat until stiff peaks form. Fold whipped cream into chocolate mixture. Pour mixture into cooled crust.
  • Chill pie at least 6 hours before serving. Prior to serving, beat remaining 1 cup cream with 1/4 cup sugar. Beat until stiff, then pipe onto top of pie with a star tip, or place a spoonful on top of each slice.

1 tablespoon butter
2 tablespoons water

Steps:

  • Bring a saucepan of water to a simmer over low heat. Place chocolate, butter, 2 tablespoons water, ground chipotle pepper, and salt in a heatproof bowl; set bowl over the simmering water. When the butter melts, whisk the chocolate mixture gently until smooth and shiny. Set aside to cool for a few minutes.
  • Whisk egg yolks, 2 tablespoons water, and sugar in another heatproof bowl over the same pan of simmering water until egg yolk mixture is foamy and hot to the touch, about 3 minutes. Pour hot egg mixture into warm chocolate mixture, whisk until smooth, and set over a bowl of ice to chill. Whisk constantly until mixture has cooled to room temperature or slightly cooler.
  • Pour 1/2 cup and 1 tablespoon cold cream into a chilled metal bowl; whisk until cream holds soft peaks. Place about half the whipped cream into the cooled chocolate mixture; gently fold the cream into the chocolate. Repeat with remaining half of whipped cream, folding gently until nearly all the streaks have disappeared. Divide mousse into 4 6-ounce ramekins.
  • Cover each ramekin with plastic wrap and refrigerate at least 4 hours (up to overnight) before serving.

8 sheets cinnamon graham crackers, finely crushed
1/4 cup unsweetened cocoa powder
1/4 cup butter, melted
1 (19 ounce) package reduced-fat soft tofu, well drained
1 (8 ounce) package bittersweet chocolate, melted
1/4 cup chocolate syrup
3 tablespoons powdered sugar
2 teaspoons vanilla
4 egg whites or 4 liquid egg substitute, to equal 4 whites
whipped topping (optional)
chocolate curls (optional)
raspberries (optional)

Steps:

  • Crust; in a 9-inch pie plate, combine the graham cracker crumbs, cocoa, and butter until well blended.
  • Press the mixture into the bottom and up the side of pie plate, set aside.
  • Mousse; in a food processor or blender process the tofu until smooth.
  • Add the melted chocolate, chocolate syrup, sugar and vanilla.

  • Butter a 9-inch springform pan. Place wafer cookies in the food processor. Pulse to break up the cookies and then process continuously until the cookies are crushed into fine crumbs. Pour them out into a bowl and mix them with the melted butter. (You'll want the mixture to still be a bit crumbly at this point, so it's easy to press them into the pan.) Press the crumbs evenly into the bottom of the springform pan, using a bit of wax paper or plastic wrap to keep them from sticking to your fingers. Place pan into the refrigerator for at least 30 minutes for the crust to set.
  • Finely chop the chocolate. I use thin chocolate bars (Ghirardelli is my favorite) and a large chef's knife. Using a rocking motion with the knife, thinly slice along the bar and then cut again at 90 degrees until all the chocolate is in tiny pieces.
  • Put the chocolate, cocoa powder, coffee, and bourbon into a large heat proof bowl set over a pot of simmering water. Keep the water at a bare simmer and don't let the water touch the bottom of the bowl. Stir the chocolate mixture frequently, until it's almost smooth. Remove the bowl from the pot and continue stirring until smooth and all the chocolate is melted. Set aside to cool a bit.
  • Whisk the egg yolks, 2 tsp of granulated sugar, and salt in a small bowl until the yolks thicken slightly and become light yellow in color, about 30 seconds. While whisking continuously, slowly add a ladle of the chocolate to the yolks and mix it in. Add another and mix again. Now scrape the egg-chocolate mixture back into the chocolate bowl and whisk until combined.
