CHOCOLATE BANANA CREPES

Chocolate Banana Crepes image

After tweaking a crepe recipe I came up with this incredibly delicious version -- chocolate crepe batter, with bananas and chocolate sauce! A very big hit with my friends! Top with powdered sugar or whipped cream.

Provided by LYNNIE1979

Categories     100+ Breakfast and Brunch Recipes     Crepes     Sweet

Time 30m

Yield 4

Number Of Ingredients 14

½ cup whole or 2% milk
1 ½ tablespoons melted butter
1 egg yolk
1 teaspoon vanilla
2 teaspoons hazelnut liqueur
1 tablespoon cocoa
2 tablespoons confectioners' sugar
⅓ cup white flour
½ tablespoon butter
1 tablespoon whole or 2% milk
2 teaspoons hazelnut liqueur
1 tablespoon cocoa
2 tablespoons confectioners' sugar
2 ripe bananas, sliced

Steps:

  • In a medium bowl, stir together 1/2 cup milk, 1 1/2 tablespoons melted butter, egg yolk, vanilla, and 2 teaspoons hazelnut liqueur. Whisk 1 tablespoon cocoa into liquid until completely incorporated. Next, whisk in 2 tablespoons confectioners' sugar until completely incorporated. Then gradually whisk in flour until completely incorporated. Set aside.

MICROWAVE CHOCOLATE BANANA CAKE AND CHOCOLATE SAUCE

Microwave Chocolate Banana Cake and Chocolate Sauce image

This was a saving grace for my husband who was craving dark chocolate one night. Low fat, and will definitely stop the cravings! Sauce can be drizzled for a topping or poured to make a pudding. My son also likes the sauce to make dairy-free milkshakes, and it's great to dip fruit in. Good hot or cold. Adaptions from healthwell.com and recipecottage.com Easy to adapt for all sorts of allergies or medical conditions.

Categories     Sauces

Time 20m

1 ripe banana
3 -5 tablespoons baking cocoa
1 teaspoon baking soda
1 cup orange juice (rice or soy milk for allergies) or 1 cup milk (rice or soy milk for allergies)
1/3 cup oil
1 teaspoon almond flavoring or 1 teaspoon peppermint extract
2 teaspoons chocolate flavoring
3/4 cup unsweetened cocoa
sugar or syrup
1 dash salt
1 cup rice milk or 1 cup vanilla-flavored soymilk

  • Combine and stir both together till well blended.
  • Pour into a lightly oiled microwave cake dish (I use a ring dish).
  • Cook high heat (use turntable) 6 to 8 minutes or until cake tests done.
  • SAUCE: In a bowl, mix a small amount of milk with cornstarch to create a paste.
  • In a saucepan, combine cocoa, sugar/syrup and salt.
  • Gradually add milk and cornstarch mix until smooth.
  • Cook, stirring constantly, until mixture boils.
  • Reduce heat to medium-high and cook for 5 minutes, stirring constantly until desired consistency.
  • Stir in vanilla etc.
  • If mixture needs to thicken, take some out of saucepan and mix with cornstarch.
  • For Vegan do not use milk [dairy].

DARK CHOCOLATE BANANA CAKE WITH DELICATE LIME TOFFEE SAUCE

Dark Chocolate Banana Cake With Delicate Lime Toffee Sauce image

This cake is perfect for anyone who loves chocolate cake and is slightly bored with banana cake. In Australia it is too hot for icing; it just slips right off the cake. So I came up with a recipe that I could serve as a dessert. On the plate with its mysterious dark softness and rolled scoop of vanilla icecream and accent of finely chopped lime zest It looks as though it comes straight out of Marie Claire!

Provided by Tigg6590

Categories     Dessert

Time 1h15m

Yield 1 cake

Number Of Ingredients 20

2 cups sugar
2 cups all-purpose flour
1/4 cup cocoa

2 teaspoons baking powder
1 teaspoon salt
2 large eggs
1 cup milk
1 teaspoon cider vinegar
1 cup black coffee
1/2 cup canola oil

3 bananas (the closer to being rotten the better)
50 g dark chocolate (Lindt 70% Dark is best)
50 g dark chocolate (Lindt chilli chocolate)
1 lime (juiced)

  • Mash the bananas on a plate.
  • In a large bowl mix together flour, sugar, cocoa, baking soda, salt and baking powder.
  • In a separate bowl mix together milk, eggs, coffee (2 tsps to one measuring cup of boiling water, don't use your favourite coffee cup !), oil, vanilla and cider vinegar.
  • Add the milk mixture, the mashed banana and the melted chocolate to the flour mixuture stirring thouroughly with a wooden spoon until combined. The batter will be thin.
  • Pour into prepared pan.
  • Bake until top of cake springs back when pressed and cake tester inserted comes out clean. (About 35 - 40 minutes.).
  • Let cool then turn out onto wire rack.
  • Delicate Lime Toffee Sauce.
  • Put water and extra sugar in saucepan and melt on a low heat.
  • Turn heat up to medium and cook until sugar reaches soft crack stage. (drip a little of syrup into cold water, if it sets firmly but doesn't quite break with a snap its ready) (About 5 - 6 minutes).
