Steps:
- In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
- Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
- In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
- Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan.
- To make filling: In a small saucepan, combine dates, brown sugar, and water. Bring to a boil and cook, stirring constantly for 10 minutes. Remove from heat.
- To make the crust: Combine flour, oats, brown sugar, baking powder, and salt in large bowl. Cut in shortening until mixture becomes crumbly. Press half of crust evenly into baking pan. Spread date mixture over the top. Crumble remaining crust mixture over the top of date mixture.
- Bake 20 to 25 minutes. Let cool on wire racks before cutting into bars.

- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

It's always nice to make different recipes to enhance my Christmas cookie selection each year. Since I like to bake but not fuss too much, these old-fashioned chews are a good choice.

Steps:
- Beat together butter, granulated sugar, egg yolks and vanilla.
- Add flour and mix to form a thick batter. Press in a greased 9"x7" pan.
- Measure water, dates, brown sugar in over dates in medium saucepan and cook till thickened. Spread over base in pan.
- Beat egg whites until frothy, slowly add brown sugar and beat to stiff peak stage. Spread meringue over dates.
- Bake in a 350* oven for 30 minutes.

- Preheat oven to 200°F.
- In a large bowl of an electric mixer, beat egg whites until foamy. With the mixer on high speed, beat in salt; then gradually add sugar, about a tableshppon at a time, beating well after each addition, until whites fold stiff, glossy peaks.
- Add vanilla and beat for 1 minute. Fold in dates and walnuts.
- Drop meringue mixture by rounded teaspoonfulls onto well-greased cooking sheets, spacing cookies about 1 inch apart. Bake in a 200°F oven for 1 hour or until outside is dry and set; cookies should not turn brown.
- Let cool on baking sheets for about 5 minutes, then transfer to racks and let cool completely. Store airtight.
LIME MERINGUE BARS
Meringue is easy to make, but there are a few things you can do to increase your success rate. First of all, it's good to know that cold eggs are easier to separate, but room-temperature whites make for better meringue. So be sure to give your whites a little time on the counter before getting to work. Secondly, make sure to keep all bits of egg yolk out of the whites. Fat is the enemy of meringue. And double-check that all of your tools and bowls are clean and fat-free as well.

- For the cookie base.
- Preheat the oven to 350 degrees F. Butter a 9-inch square baking pan and line with parchment paper, leaving a 2-inch overhang on 2 sides. In a large bowl using an electric mixer, beat the flour, confectioners' sugar, brown sugar and salt on medium speed until well combined. Add the butter and beat until the crumbs are evenly moistened. Tip the crumbs into the prepared pan and pat down to make an even base. Bake the base until deep golden and set, 20 to 25 minutes. Transfer to a rack to cool, about 30 minutes. For the filling: In a large bowl, whisk together the sweetened condensed milk, lime zest and juice, egg yolks and salt. Pour the mixture over the baked cookie base and spread it into an even layer. Bake the filling until just set, 8 to 10 minutes. Transfer to a rack to cool, about 30 minutes, then cover with plastic and refrigerate until firm, at least 4 hours. For the topping: Just before serving, make the topping. In a large bowl (or the bowl of a stand mixer fitted with the whisk attachment), add the egg whites. In a small saucepot fitted with a candy thermometer, heat the sugar and 1/4 cup water over medium-high heat without stirring. When the thermometer hits about 220 degrees F, beat the egg whites with an electric mixer on medium speed until just frothy and the yellowish hue has disappeared. When the sugar reaches 238 degrees F, increase the mixer speed to high and, with the mixer running, pour the sugar syrup into the bowl in a thin stream. Continue to beat the mixture until shiny, stiff peaks form and the mixture is cool, about 6 minutes. Scoop the meringue on top of the filling and use an offset spatula to swirl it around into decorative swoops and spikes. Using a mini (kitchen) blowtorch, toast the topping to an even golden brown. Cut into bars and serve.
