This rich, delicious, and luxurious dessert is a great comfort food on a cold winter's night.

1 cup flour
1 teaspoon baking powder
2 ½ ounces dark chocolate, grated
7 ounces chopped pitted dates
1 ¼ cups water
1 teaspoon baking soda
¼ cup softened butter
¾ cup superfine (castor) sugar
2 eggs
1 cup heavy cream
1 cup firmly packed brown sugar
1 cup butter
2 tablespoons confectioners' sugar for dusting
3 cups vanilla ice cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin tin. Whisk together the flour, baking powder, and chocolate in a small bowl, and set aside.
  • Bring the dates and water to a boil in a saucepan over high heat. Remove from the heat, and stir in the baking soda. Allow the mixture to stand for 5 minutes, then scrape into a blender, and carefully puree until smooth; set aside.
  • Cream 1/4 cup of butter together with the superfine sugar until light and fluffy. Add the eggs one at a time, beating well between each addition. Fold in the flour mixture and the date puree until well blended. Spoon into the prepared muffin cups.
  • Bake in the preheated oven for 25 minutes. Meanwhile, stir together the cream, brown sugar, and 1 cup of butter in a saucepan over medium-low heat until the butter melts; set aside.
  • When the puddings have baked for 25 minutes, remove them from the oven, and cool in the pan for 10 minutes. Remove the puddings from the muffin tin, and place them onto a baking sheet. Spoon 2 tablespoons of the sauce over each pudding, then return to the oven and bake for 5 minutes more.
  • To serve, spoon some of the sauce onto the bottom of a dessert plate, and place a pudding on top. Lightly dust with confectioners' sugar, and top with a 1/4 cup scoop of ice cream. Repeat with the remaining date puddings.

3/4 cup Milk
1/2 teaspoon Baking soda
1/2 cup Brown Sugar (Demerara Sugar)
1/2 teaspoon Cinnamon Powder (Dalchini)
1/4 teaspoon Salt
3/4 cup All Purpose Flour (Maida)
1/2 cup Butter (Unsalted)
1 cup Brown Sugar (Demerara Sugar)
1/4 cup Butter (Salted) , cubed
1-1/4 cup Fresh cream
1 teaspoon Vanilla Extract , or butterscotch essence

Steps:

  • To prepare Sticky Date Pudding With Butterscotch Sauce Recipe, take the dates and milk in a medium Saucepan and bring to a boil over high heat. Remove from the heat.
  • Add baking soda and stir until the dates start to break down.
  • Set the saucepan aside and allow mixture to cool for about 20 minutes.
  • Take butter and brown sugar in a deep bowl.
  • Using an Electric whisk, cream together butter and sugar until pale.
  • Add the dates mixture and fold in gently.
  • Sift in the flour, cinnamon and salt. Stir the mixture until everything is combined evenly.
  • Preheat Oven to 180 degrees Celsius and grease the ramekins with butter.
  • Spoon the mixture into ramekins/desirable moulds.
  • Bake Sticky Date Pudding for 30 minutes or until a skewer inserted comes out clean.
  • Heat all the ingredients in a medium heavy-based saucepan, stir over medium heat for 5 minutes or until well combined.
  • Increase heat to high and bring the sauce to a boil.
  • Reduce heat to low and simmer, uncovered, stirring often, for 7-8 minutes or until the sauce thickens slightly.
  • Remove the pan from the heat and set the Butterscotch Sauce aside.
  • Once the sticky date puddings are baked, allow to cool for 5 minutes and then turn upside down on a serving plate.
  • Smother the sticky date pudding with warm butterscotch sauce and serve with crumbled walnuts on top.

1 ½ cups all-purpose flour
½ cup milk
½ teaspoon salt
1 cup pitted dates
½ cup chopped walnuts
1 teaspoon vanilla extract
1 ½ teaspoons baking powder
2 cups packed brown sugar
2 cups water
5 tablespoons butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 9x13 inch baking pan.
  • Combine the sugar, flour, milk, salt, dates, nut, vanilla and baking powder and mix well. Pour batter into the prepared pan.
  • In a saucepan over medium heat combine the brown sugar, water and butter or margarine and bring to boil. Pour brown sugar mixture over batter.
  • Bake at 375 degrees F (190 degrees C) for 30 to 35 minute or until the cake tests done. Serve warm with whipped cream.

280 g Dates, pitted (Main)
1 tsp Instant coffee, or a double shot espresso
400 ml Water
1 tsp Baking soda
70 g Unsalted butter
240 g Soft brown sugar
3 Eggs, free-range, lightly beaten
225 g Plain flour, sifted
150 g Caster sugar
300 ml Cream
120 g Unsalted butter

Steps:

  • Place dates, coffee and water into a medium sized saucepan and bring to the boil. Remove from heat and stir in baking soda. Leave for 2 to 3 hours minimum or overnight for dates to fully soften and absorb the liquid.
  • Heat oven to 180C. Cream butter and sugar in an electric mixer until pale and fluffy.
  • Gradually mix in eggs and then flour. Stir in softened dates and set mixture aside. Lightly grease 6 x 150ml steel dariole moulds (see right) with butter or canola spray and spoon batter into the moulds until 1cm from the top of each mould.
  • Place moulds into a roasting dish with sides. Add boiling water to the roasting dish until it comes 1cm up the side of the moulds. Place a small sheet of baking paper over the puddings and cover with foil being careful to firmly seal the edges. Place in oven and cook for 30 minutes or until the tops of the puddings have risen and are slightly firm and sponge-like to the touch.
  • Remove from oven, discard foil and allow to rest for 3 to 4 minutes in the moulds before turning out onto a cake cooling rack. Puddings will keep for up to 1 week in a sealed container. When ready to serve reheat each pudding for 1 minute in a microwave and serve with warmed butterscotch sauce and quality vanilla bean ice cream or fresh whipped cream.
  • Place sugar and half a cup of water into a medium sized pot and bring to the boil over a high heat. Continue to boil until sugar starts to turn a golden brown.
  • Add cream, being careful to avoid the resulting steam and whisk to combine. Remove from heat, whisk in butter and store in the refrigerator for up to 2 weeks.

Transfer to a saucepan (reserve 1 tsp for serving), add milk and tahini, stir to combine and bring to the boil. Set aside to cool, then refrigerate to infuse (2 hours). Strain through a fine sieve into a clean saucepan, add cream and bring to the boil. Meanwhile, whisk yolks and sugar in a heatproof bowl until pale. Add cream mixture and stir to combine, then return to pan and stir continuously over low heat until mixture coats a wooden spoon thickly (5-10 minutes). Transfer to a chilled bowl placed over ice and stir occasionally until cool, then freeze in an ice-cream machine. Freeze until required. Makes about 1 litre.
  • For salted caramel, combine sugar and 100ml water in a saucepan, bring to the boil over medium-high heat, stirring to dissolve sugar, then brush down sides of pan with a wet pastry brush and cook until dark caramel (10-15 minutes). Add cream, butter and ½ tsp fine sea salt (be careful as hot caramel will spit), stir until dissolved (1 minute) and set aside.
  • Combine milk, dates and vanilla in a saucepan over medium heat, bring to the boil, remove from heat, add bicarbonate of soda and set aside to cool (1 hour).
  • Preheat oven to 175C. Beat butter and sugar in an electric mixer until smooth, then add eggs one at a time, beating well after each addition. Add flour, spices and date mixture and mix to just combine. Divide among 6 buttered and floured 9cm-diameter cake tins, tap tins on bench to level, then bake on a tray, turning tray occasionally, until cakes are golden and spring back when touched (30-40 minutes). Cool slightly, then turn out onto plates or serve warm in tins, with a scoop of sesame ice-cream topped with salted caramel (see note) and scattered with reserved sesame seeds.
